- In your blender, combine the chopped pineapple, lime juice, simple syrup, and vodka and puree until smooth.
- Strain through a fine mesh strainer, then place in the refrigerator to chill.
- Once chilled, drizzle over a cone packed with the crushed ice (use an ice cream scoop to create the ball on top or your hands). Garnish with chili powder and a lime wheel and serve with a straw and pineapple cocktail parasol.

Steps:
- In a medium saucepan combine the sugar and fruit.
- Simmer until the fruit has softened and the sugar dissolved, roughly 3-4 minutes.
- Transfer your fruit mixture to a food processor and blend the fruit into a smooth puree. If you don't have a processor try passing it through a fine sieve.
- Once pureed strain over a bowl to remove any seeds or bits from the fruit. If you find the syrup a bit too thick at this stage thin it out with some juice or a little water. Store the syrups in the fridge for up to 7 days.
- Place ice cubes in a blender and pulse to create fine shaved ice. Store in the freezer if you are not using it straight away.
- Scoop your shaved ice into serving dish of your choice and pack it tight together. Pour over your fruit syrup and enjoy immediately!
- To make a rainbow snow cone, pour your individual flavors into a squirt bottle or jug with a spout. Pour each flavor in a line across our scoop of ice, creating a rainbow effect. Enjoy Immediately!!!

- To make the cake syrup: Boil water and sugar over medium heat until the sugar is dissolved and mixture is clear. Remove from heat and stir in both extracts. Transfer to a jar and let cool completely before using (best if chilled overnight in the refrigerator).
- To make the Pineapple syrup: Puree the pineapple chunks in a blender. Place in a medium saucepan with water and sugar. Cook until boiling. Remove from heat and strain into a measuring cup. Strain a second time into a jar. Let cool completely before using (best if chilled overnight in the refrigerator).
- To make the Cherry Syrup: Puree the cherries in a blender, adding a dash of water as needed to make the blender run. Strain into a measuring cup. Rinse strainer and strain a second time into your saucepan. Add water and sugar and cook over medium heat until boiling. Remove from heat and place in a jar. Let cool completely before using (best if chilled overnight in the refrigerator).
- To make your snow cones: add shaved ice to a cup or snow cone paper container. For cake batter snow cone, pour syrup over ice and top with sprinkles. For Pineapple Upside Down Cake snow cone, pour cake batter syrup over the ice, then top with pineapple and a dash of cherry.
