4 slices bread
1 tablespoon mayonnaise
1 pinch salt and ground black pepper
2 teaspoons marmalade
4 potato chips, crushed
2 pieces pineapple, thinly sliced
4 sardines, drained, or to taste

Steps:

  • Preheat your sandwich maker according to manufacturer's instructions.
  • Spread mayonnaise over 2 slices of bread. Cover with marmalade. Spread potato chips over marmalade. Lay pineapple over chips.
  • Break apart sardines in a bowl using a fork. Spread on top of the pineapple slices. Season with salt and pepper; cover with the remaining 2 slices of bread.
  • Toast in the preheated sandwich maker until brown and crispy, about 5 minutes.

I found a recipe for Pineapple Sandwiches on white bread that was far too sweet. I put some ham on it, and put it on whole grain bread for a slightly healthier alternative that is not nearly so sweet!

1 (15 ounce) can crushed pineapple, drained
1 cup white sugar
1 cup chopped walnuts
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
24 slices whole-grain bread
60 thin slices deli ham

Steps:

  • In a saucepan, combine the pineapple and sugar. Bring to a boil, then cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from the heat and cool. When cool, stir in the walnuts.
  • In a medium bowl, stir cream cheese to soften, then stir in enough milk to make it easy to spread. Blend in the pineapple mixture. This part can be made the day before if you like.
  • Spread about 2 tablespoons of the pineapple mixture onto one side of 12 slices of bread. Top each one of these with 5 thin slices of ham. Top with remaining bread slices.

1 medium onion, finely chopped
3/4 cup packed light brown sugar
1/4 cup Dijon mustard
2-1/2 pounds thinly sliced deli ham
2 tablespoons cornstarch
2 tablespoons water
10 slices Swiss cheese or cheddar cheese, optional
10 kaiser rolls, split

Steps:

  • Mix first 4 ingredients. Place half the mixture in a 5-qt. slow cooker; top with half the ham. Repeat layers. Cook, covered, on low until heated through, 3-4 hours., Using tongs, remove ham from slow cooker, leaving pineapple mixture behind; keep warm. In a large saucepan, mix cornstarch and water until smooth. Stir in pineapple mixture; bring to a boil. Reduce heat; simmer, uncovered, until mixture is slightly thickened, stirring occasionally. Serve ham, pineapple mixture and, if desired, cheese on rolls.

2 to 3 pound pork shoulder, fat trimmed
2 onions, chopped
1 can pineapple chunks
1 package king's hawaiian original hawaiian sweet hamburger buns
2 bottles king's hawaiian original sweet pineapple bbq sauce

Steps:

  • Place pork in slow cooker.
  • Top with chopped onions, pineapple and one full bottle (approximately 2 cups) barbecue sauce.
  • Cook on high for four to five hours. (Slow cookers vary, so adjust cooking time as needed.)
  • When pork is cooked, remove from slow cooker and shred with a fork.
  • Put shredded pork back into slow cooker to keep warm and cover with more sauce as desired.
