2 cups sliced fresh or frozen rhubarb, thawed and drained
1 can (20 ounces) unsweetened pineapple tidbits, drained
1/2 cup sugar, divided
2 tablespoons plus 1/3 cup all-purpose flour, divided
1/3 cup quick-cooking oats
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup cold butter
Whipped cream, optional

Steps:

  • In a large bowl, combine the rhubarb, pineapple, 1/4 cup sugar and 2 tablespoons flour. Transfer to a 9-in. deep-dish pie plate coated with cooking spray., In a small bowl, combine the oats, cinnamon, salt and remaining sugar and flour. Cut in butter until crumbly. Sprinkle over fruit. Bake, uncovered, at 350° for 30-35 minutes or until filling is bubbly and topping is golden brown. Cool for 5 minutes; serve with whipped cream if desired.

I grow rhubarb and raspberries in my garden and found this to be an amazing way to incorporate both of them! The flavors are just perfect with the sweetness of the raspberries and tartness of the rhubarb and lemon zest. Enjoy! And don't forget to add a scoop of vanilla bean ice cream.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine rhubarb, sugar, flour, lemon zest, cinnamon, nutmeg, and salt in a large bowl. Fold in raspberries.
  • Beat eggs, half-and-half, and vanilla extract together in a small bowl. Mix into the fruit; pour into an 8x8-inch baking dish.
  • Combine oats, brown sugar, butter, and cinnamon in a food processor; pulse until crumbly. Spoon evenly over the top of the fruit filling.

1 1/2 pounds rhubarb, trimmed and cut diagonally into 3/4-inch pieces
2 pints (about 12 ounces) fresh raspberries
1 1/2 cups sugar
1/4 cup quick-cooking tapioca
Freshly grated zest and juice of 1/2 lemon
1/2 teaspoon, plus a pinch coarse salt
1 cup all-purpose flour
1/3 cup cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon baking soda
6 tablespoons cold unsalted butter, cut into small pieces
3/4 cup plain yogurt
2 to 3 tablespoons heavy cream
Creme fraiche, for serving

Steps:

  • Preheat oven to 400 degrees with rack in center. Line a rimmed baking sheet with parchment.
  • In a large bowl, stir together rhubarb, raspberries, 1 1/4 cups sugar, tapioca, lemon juice, and a pinch salt. Let stand 15 minutes, stirring once or twice. Divide filling among six 10-ounce baking dishes, or pour into a 2 1/2-quart baking dish.
  • In a medium bowl, whisk together both flours, remaining 1/4 cup sugar, baking powder, baking soda, lemon zest, and remaining 1/2 teaspoon salt. Cut in butter until mixture resembles coarse crumbs. Add yogurt, and stir with a fork until dough consistency resembles a thick cake batter.
  • Using a large spoon, top filling with dollops of dough, leaving a 1-inch border. Brush dough with cream. Transfer baking dishes to prepared baking sheet. Bake, rotating sheet halfway through, until biscuits are golden-brown and juices are bubbling, 35 to 40 minutes. (If browning too quickly, cover loosely with aluminum foil during the last 15 minutes of baking.) Cool on a wire rack, at least 1 hour. Serve warm or at room temperature with a dollop of creme fraiche.

2/3 cup granulated sugar
Zest and juice of 1 orange
1 cup all-purpose flour
1/2 cup dark brown sugar
1/2 teaspoon cinnamon
8 tablespoons (1 stick) cold unsalted butter, cut into small pieces
1/2 cup rolled oats
1/4 cup hazelnuts, skinned, toasted, and chopped (optional)
1/2 pint fresh raspberries

Steps:

  • Heat oven to 350 degrees. Combine rhubarb, granulated sugar, and orange zest and juice in a large bowl. Stir to combine.
  • In another bowl, combine flour, brown sugar, and cinnamon. Rub butter into flour mixture with your fingers until it is well incorporated and large crumbs form. Add oats and nuts and combine.
  • Turn rhubarb into a 1 1/2-quart baking dish, scatter raspberries evenly over surface, and cover with crumb topping. Bake until topping is brown and crisp and juices are bubbling, about 45 minutes. Let cool slightly before serving.

1 can(s) crushed pineapple in its juice(20 oz)
1/4 c water
1 pkg strawberry gelatin, 6 oz

Steps:

  • 1. In a Dutch oven, combine rhubarb, sugar, pineapple and water. Bring to a boil. Reduce heat and simmer uncovered 20 minutes or until rhubarb is broken down. Stirring occasionally.
  • 2. Add jello. Cook and stir 10 minutes.
  • 3. Remove from heat, skim off foam if any has accumulated. Ladle into warm jars. May heat in oven at 200 for 5 min. Put lids on. Place in a pot of simmering water for 10 minutes to seal jars.

  • Preheat oven to 400 degrees F (200 degrees C). On a lightly floured surface, roll out one crust, and place in a 9 inch pie plate. Roll out top crust, and set aside.

Rhubarb Pineapple
5 cups chopped rhubarb
1 cup crushed pineapple
2 ½ cups granulated sugar (my grandma's original recipe calls for 4 cups sugar, but I find that to be far too sweet!)
1-3 oz. package of strawberry or raspberry jello
Rhubarb Strawberry
5 cups chopped rhubarb
1 small bag of frozen strawberries
2 ½ cups granulated sugar (my grandma's original recipe calls for 4 cups sugar, but I find that to be far too sweet!)
1-3 oz package strawberry or raspberry flavored jello

Steps:

  • Rhubarb Pineapple
  • In a large sauce pan, mix together rhubarb, pineapple, and sugar. Cook over low heat until the sugar in completely dissolved.
  • Increase heat to medium and simmer for 15 minutes or until the rhubarb is quite soft. Be sure to stir often to prevent burning.
  • Remove from heat and stir in jello mix. Stir well. Pour into jar and seal via canning or freeze.
  • Rhubarb Strawberry
  • Mix together the rhubarb, strawberries, and sugar in a large saucepan over medium-low heat. Be sure to stir often to prevent and watch for burning!
  • When the sugar has dissolved, simmer until the rhubarb and strawberry becomes nice and soft-at least 15 minutes.
  • When the rhubarb and strawberry is softened, remove from heat and stir in the box of strawberry gelatin until well mixed.
  • Pour into jars and seal via canning or freeze.

2 tablespoons cornstarch
1/2 cup sugar
1/2 cup Splenda granular

1/4 cup Splenda granular
1/2 cup flour
1/4 cup old fashioned oats
3 tablespoons butter, cold

Steps:

  • Preheat oven to 350.
  • Combine rhubarb and cornstarch, set aside.
  • Roll out pie crust into 8 inch pie plate.
  • Pour rhubarb and cornstarch mixture into prepared crust.
  • Combine sugar and Splenda; sprinkle over rhubarb mixture.

10 cups rhubarb, fresh
10 cups granulated sugar
4 - 3 ounce packages strawberry Jello (*use gluten free gelatin)
2 cups water

Steps:

  • In a saucepan, combine fresh rhubarb, sugar and water.
  • Bring mixture to a low boil and boil for 10 minutes.
  • Add (drained) crushed pineapple and strawberry Jello to mixture.
  • Return to heat and cook on a low boil for another 5 minutes.
  • Remove from heat and immediately pour into hot, sterilized canning jars.
  • Place canning lids and rings on jars and allow jars to cool to room temperature.
  • Store in refrigerator or freezer until ready to serve.

Biscuits
3 cups (420 g) all-purpose flour
2 tablespoons (30 g) sugar
1 tablespoon baking powder
1 1/2 teaspoons salt
10 tablespoons (5 ounces/135 g) unsalted butter, cut into 1/2-inch (1.5-cm) pieces and chilled
3/4 cup (180 ml) heavy cream or buttermilk, plus more as needed
1 large egg yolk
1 teaspoon heavy cream or whole milk

Steps:

  • Preheat the oven to 400°F (200°C).
  • To make the filling, in a large bowl, mix together the rhubarb, pineapple, raspberries, the 3/4 cup (150 g) sugar, 2 tablespoons (15 g) flour, vanilla, and kirsch, if using, until combined. Transfer the mixture to a shallow 2-quart (2-liter) baking dish and bake until the fruit is heated through, about 40 minutes, stirring several times during baking.
  • While the filling bakes, make the biscuits. (You may need to gather the dough scraps and roll them out again in order to make 8 biscuits.) Set the biscuits aside until needed. In a small bowl, whisk together the egg yolk and cream or milk to make an egg wash.
  • When the filling is ready, remove the baking dish from the oven and arrange the biscuits on top of the filling. Brush the tops of the biscuits with the egg wash. Return the baking dish to the oven and continue baking until the biscuits are golden brown, 15 to 20 minutes.

  • Serve warm with Vanilla Ice Cream (page 143).

  • Have a sheet of aluminum foil on the lower rack of the oven during baking since this cobbler is quite juicy and the foil will catch any spills.
