1/4 cup sifted flour
2 tablespoons sugar
Pinch of salt
2 eggs
2 tablespoons water
2 tablespoons milk
1/8 teaspoon grated lemon zest
Dash of nutmeg
Peanut oil for deep frying
2 pineapples
3 tablespoons confectioners' sugar with a pinch of cinnamon

Steps:

  • Note: batter needs to sit for a day in the refrigerator before cooking Place the flour, sugar, and salt in a medium-sized bowl. Separate the eggs. Make a well in the ingredients and place the egg yolks in the well. Mix, adding the water and, gradually, the milk. Beat the egg whites to stiff peaks and gently fold them into the mixture. Add the lemon zest and the nutmeg, stirring to mix them in. Cover the bowl with a damp clean dish towel and place it in the refrigerator for a day.
  • When ready to prepare the fritters, heat the oil to 375 degrees in a heavy Dutch oven or deep fryer. Peel the pineapple, core and cut into 1-inch pieces. With tongs, dip the pieces into the batter and fry them until they are golden brown on each side. Remove the fritters with a slotted spoon and let them drain on absorbent paper. Place them on a serving platter and sprinkle them with both the confectioners' sugar and cinnamon by placing them into a small sieve and shaking it over the fritters. Serve warm

1 plantain, peeled and chopped into 1/2-inch chunks (ripe, with black sports or all-black skin)
1 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup milk
1 large egg
1 cup fresh pineapple, chopped
vegetable oil, for frying
powdered sugar (optional)

Steps:

  • Place plantain in medium saucepan; pour water over to cover. Boil plantains for 10 minutes. Drain well; transfer plantains to paper towels to absorb moisture.
  • Stir together flour, sugar, baking powder, cinnamon, and nutmeg, in medium bowl. Whisk together milk and egg; add to flour mixture. Mix until smooth. Stir in plantain and pineapple until blended.
  • Pour oil into deep saucepan or skillet to depth of 1-1/2 inches. Heat to 375ºF.
  • Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry fritters for about 2 to 3 minutes or until golden brown, turning once with slotted spoon.
  • Transfer fritters to paper towels to drain. Sprinkle powdered sugar over them, if desired. Serve warm.

1 1/2 cups flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup crushed pineapple
1/2 cup pineapple juice
oil (for deep frying)

Steps:

  • Mix all the ingrediants together in a medium sized bowl.
  • dough will be thick.
  • Drop tablespoons of dough into oil that is about 3 inches deep.
  • Oil should be about 350F degrees.
  • Fry for about 2 minutes per side.
  • Drain on paper towels.
  • I sometimes sprinkle these with xxx sugar.

2 eggs
1/8 teaspoon cinnamon
2 cups panko (Japanese) bread crumbs
2 bananas, cut into 1-inch pieces
1/2 pineapple, cut into 1-inch pieces
Canola oil, for frying
1/4 cup organic honey, optional

Steps:

  • In a shallow bowl, whisk the eggs with the cinnamon using a fork. Place the panko bread crumbs on another plate. Toss the fruit in the egg, then into the crumbs. Repeat this 1 more time to make a second coating.
  • In a 6 to 8-quart pan heat canola oil, filled just 3 inches from top of the pan, to 365 degrees F. Drop the fruit into the oil and cook until brown on all sides. Drain on paper towels.
  • Serve immediately, drizzled with honey, if desired.

1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
1 cup self-rising flour
½ cup milk
1 egg
2 cups white sugar
2 tablespoons confectioners' sugar for dusting, or as needed

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk pineapple, flour, milk, and egg together to form a light and fluffy batter.
  • Bring reserved pineapple juice to a boil in a small saucepan. Add white sugar and stir to dissolve; lower heat. Simmer until thickened glaze forms, about 10 minutes. Remove from heat and cool to room temperature, about 15 minutes.
  • Drop spoonfuls of batter in the hot oil, 2 to 3 pieces at a time, and fry until golden brown, 3 to 4 minutes. Drain on paper towels.
  • Drizzle glaze over fritters and dust with confectioners' sugar.

2 large ripe plantains or bananas, peeled
1 cup self-rising flour
1 small onion, cut into wedges
1/4 teaspoon salt
Dash pepper
Oil for deep-fat frying

Steps:

  • Place plantains in a food processor; cover and process until smooth. Add the flour, onion, salt and pepper; cover and process until blended (batter will be moist). , In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop tablespoonfuls of batter, a few at a time, into hot oil. Cook until golden brown, 1 minute on each side. Drain on paper towels.

2 ripe plantains, peeled
1 small apple, peeled, cored, and grated
1/2 tsp ground cinnamon
2-4 TBS coconut oil

Steps:

  • 1. Mash the plantains in a bowl with a fork or a wire potato masher (the fritters taste better if you leave some lumps and don't overmash). Add the grated apple and cinnamon and mix to combine. 2. Heat 1-2 tablespoons of the coconut oil in a skillet over medium high heat. Drop heaping spoonfuls of the plantain batter into the pan and flatten with the back of a spoon. The fritters should be 2-3 inches in diameter, or about the same size as your spatula; otherwise they can be tricky to flip. Depending on the size of your skillet, you may have to cook the fritters in batches. 3. Cook 12-12 minutes, until golden brown on the bottom. Add a little extra coconut oil if the fritters absorb it all. If they are browning too fast, turn down the heat. 4. Carefully flip the fritters and cook for 7-8 min on the other side. Add extra coconut oil if needed. If batch cooking, you can keep the finished fritters warm on a baking dish in a 200 degree oven.

1 cup all-purpose flour
1/2 teaspoon salt
1 tablespoon sugar
1 egg, lightly beaten
1 cup milk
1 (20 ounce) can pineapple rings
1/4 cup confectioners' sugar

Steps:

  • Heat 3 cups oil in a large deep pot over high heat until temperature reaches 365 degrees F.
  • Meanwhile, combine flour, salt, and sugar in a large bowl.
  • Mix egg, milk and remaining oil in a small bowl.
  • Slowly add liquid ingredients, stirring with a fork or shisking until smooth.
  • Pat pineapple rings completely dry.
