- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold water. Refrigerate 45 minutes or until slightly thickened. Remove 1-1/2 cups gelatin; let stand at room temperature.
- Stir drained fruit into remaining gelatin. Spoon into 6-cup mold sprayed with nonstick cooking spray. Refrigerate 15 minutes or until set not firm.
- Whisk whipped topping into reserved gelatin until blended. Spoon over gelatin layer in mold. Refrigerate 4 hours or until firm. Unmold.

- Drain pineapple, reserving juice in a 2-cup measuring cup; add enough water to measure 2 cups. Set pineapple aside. Pour juice mixture into a small saucepan. Bring to a boil; remove from heat. Dissolve gelatin in juice mixture. Cool for 10 minutes. , In a large bowl, beat cream cheese until creamy. Gradually add gelatin mixture, beating until smooth. Refrigerate until slightly thickened, 30-40 minutes., Fold in pineapple and carrots, then whipped topping. Transfer to an 8-cup ring mold coated with cooking spray. Refrigerate until set. Unmold onto a serving platter.

- Drain pears, reserving juice; set pears aside. In a small saucepan, bring juice to a boil. Stir in gelatin until dissolved. Remove from the heat; cool slightly. , In a food processor, combine pears and cream cheese; cover and process until smooth. Transfer to a large bowl; stir in gelatin mixture until blended. PEAR & PINEAPPLE PIE
Took an old Pear Pie recipe and added the pineapple that was sitting on the counter and the result was delicious!

Steps:
- 1. Combine the sugar, flour, cinnamon,salt and lemon zest in a small bowl.
- 2. Mix the Pear and Pineapple with the juice from 1 Lemon and place 1/2 of the mixture into the pie crust. Sprinkle 1/2 of the flour mixture over the fruit. Add the rest of the fruit mixture and sprinkle the rest of the flour mixture on top. Pat the filling down a bit to make it firm.
- 3. Thinly shave the butter and place randomly around the top of the pie filling. Cover the pie with second crust, press the sides together with a fork and cut a slit in the top of the crust.
- 4. Bake at 450 degrees for 10 minutes then cover crust with foil and bake at 350 degrees for 30 minutes.
- 5. Uncover crust and bake an additional 10-15 minutes until crust in golden brown. Remove pie and let it cool for 45 minutes on cooling rack.

- Whisk together the lime gelatin and boiling water in a large bowl until the gelatin dissolves. Pour the mixture into the container of a blender, and add the pear halves and cream cheese. Cover and blend until smooth. Pour back into the bowl, and gently whisk in the whipped topping. Transfer to a mold or serving bowl, cover and refrigerate until firm, at least 4 hours. To unmold, dip the mold briefly into hot tap water to loosen the gelatin, then invert onto a plate.

- Drain pineapple and reserve liquid.
- Spray Jello mold or bowl with PAM cooking spray.
- Dissolve Jell-o in 2 cups of boiling water, stirring for a few minutes.
- Add enough cold water to the reserved pineapple juice to equal 1.5 cups, and add to Jell-o mixture.
- Whisk in about 8 oz. sour cream (mom used a little less).
- Dump pineapple inches.
- Chill until set.
- If you want to unmold the dish, set bowl into warm water for 30 seconds, and place plate on top of bowl.
- Invert the bowl onto the plate and let the jell-o slide out.
- Enjoy!

- Peel and cut the pineapple into 1-inch chunks; discard the fibrous core and outer peel.
- Add all ingredients into a medium-sized pot and bring to a boil. Do not cover.
- Reduce heat simmer over LOW heat. Simmer for about 30 minutes or until the pineapple is tender and most of the liquid has evaporated; Stirring occasionally. Do not Cover.
- Remove from the heat and allow to cool slightly.
- With an immersion blender or potato masher, crush the fruit to small bite-sized (or smaller) pieces.
- The natural sugars in the fruit will thicken the jam.
