AIR FRYER SWEET POTATO FRIES WITH SPICY PINEAPPLE DIPPING SAUCE



Air Fryer Sweet Potato Fries with Spicy Pineapple Dipping Sauce image

Number Of Ingredients 13

½ cup finely chopped pineapple
3 tablespoons + ¼ cup water, divided
1 tablespoon apple cider vinegar
2 teaspoons finely chopped jalapeño pepper
1 teaspoon honey
1 garlic clove, minced
1½ teaspoons + 1 tablespoon non-GMO cornstarch, divided (can sub arrowroot starch)
1 tablespoon chopped fresh cilantro
2 large sweet potatoes, peeled and cut lengthwise into ½-inch thick slices, then sliced ¼-inch thick crosswise
2 teaspoons olive oil
¼ teaspoon chipotle powder
½ teaspoon garlic powder
½ teaspoon kosher salt

Steps:

  • Put the pineapple, 3 tablespoons water, vinegar, jalapeño, honey, and garlic in a small saucepan over medium heat. Cook, stirring occasionally, until it begins to simmer. Reduce the heat to medium-low and cook for 5 minutes, or until pineapple is very tender.
  • In a small bowl, whisk together the remaining ¼ cup water and 1½ teaspoons cornstarch until the starch is dissolved.
  • Whisk the starch slurry into the pineapple mixture. Increase the heat to medium, bring the mixture to a boil, and boil for 2 minutes, or until thickened. Remove from the heat and stir in the cilantro.
  • Preheat a 3.3-quart or larger air fryer to 375°F for 5 minutes.
  • In a large bowl, toss together the sweet potatoes, remaining 1 tablespoon cornstarch, oil, salt, garlic powder, and chipotle powder until evenly coated.
  • Transfer the fries to you air fryer basket and air fry 30 minutes, or until the potatoes are crisp and fork-tender, shaking the basket every 5 minutes.
  • Serve the sweet potato fries with the pineapple dipping sauce.

6 sweet potatoes
1 (20 ounce) can crushed pineapple
1 cup packed brown sugar
1 pinch ground cinnamon
1 pinch ground ginger
1 pinch ground nutmeg
1 pinch ground cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 9x13 inch baking dish.
  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl to cool. Peel and quarter.
  • In a sauce pan, combine pineapple, sugar, cinnamon, ginger, nutmeg and cloves. Bring to boil and reduce heat.
  • Arrange potatoes in a single layer in baking dish. Pour sauce over potatoes and bake for 45 minutes.

2 pounds sweet potatoes, peeled and cubed (about 6 cups)
3/4 cup sugar
1 can (8 ounces) crushed pineapple, drained
2 large eggs, lightly beaten
1/2 cup sour cream or plain yogurt
1/2 teaspoon grated orange zest
1/4 cup orange juice
1/4 cup butter, melted
1 teaspoon vanilla extract
TOPPING:
1 cup sweetened shredded coconut
1 cup chopped pecans
1 cup packed brown sugar
1/2 cup all-purpose flour
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a large saucepan; add water to cover. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, until tender, 10-15 minutes. Drain., Place sweet potatoes in a large bowl; mash potatoes. Stir in sugar, pineapple, eggs, sour cream, orange zest, juice, butter and vanilla; transfer to a greased 13x9-in. baking dish. For topping, in a large bowl, mix coconut, pecans, brown sugar and flour. Add butter; mix until crumbly. Sprinkle over top., Bake, uncovered, until heated through and topping is golden brown, 40-45 minutes.

I created this after tasting something similar at a restaurant but added my own twist. As always, I am sure my measurements ares slightly off as I am one of "those" cooks that dumps a little of this and a little of that in every recipe...

1/2 cup crushed pineapple, sometimes I mince up fresh pineapples if I have the extra time
1/4 cup orange preserves
2 tablespoons onions, finely minced, I like to use a red onion
2 tablespoons soy sauce, you may want to add 3, do it to taste
1 teaspoon chili paste with garlic, the asian kind in the little plastic jar
black pepper

Steps:

  • Mix all ingredients together. Add a little extra of "this "or "that" as your taste buds cry out.
  • This dip is perfect with sweet potato fries or wedges.
