6 Ounces Milk Substitute (or Milk)
½ Teaspoon Vanilla Extract
1 Scoop Protein Powder (Vanilla)
½ Teaspoon Ground Cinnamon
½ Cup Pineapple (Crushed)
1 Tablespoon Shredded Coconut (Unsweetened)
Greek Yogurt (Fat Free Pineapple)

Steps:

  • Take out a microwavable safe bowl
  • Add in your Rolled Oats and Milk
  • Microwave your oatmeal for around 2 minutes
  • Add in the rest of your ingredients aside from your Coconut and Greek Yogurt
  • Mix those ingredients together
  • Top with your Coconut and Greek Yogurt

Eat cake for breakfast! Pineapple Upside-Down Oatmeal Cake is perfect for breakfast or snack and is perfect balance between healthy and indulging dessert yet healthy enough for breakfast. Gluten free, dairy free and vegan friendly, and made with simple ingredients you probably already have in your kitchen.

Yield 1 8x8 or 9x9 pan (4 breakfast or 9 snack servings)

Number Of Ingredients 10

2 c rolled oats
1 c almond milk, non dairy milk of choice ((Unsweetened Almond Milk))
1/4 c honey, maple syrup, or agave ((local Bare Honey))
2 large eggs, or sub flax eggs*
1 tsp vanilla
1 1/2 tsp baking powder
¼ tsp salt
1 20oz can crushed pineapple, divided*
1/3 c packed brown sugar
2 TBSP butter, dairy free butter, or coconut oil

Steps:

  • Drain pineapple over a bowl, reserve juice for a smoothie or drinking.
  • Preheat oven to 350F.
  • In a Vitamix, or food processor, grind half the oats to flour or close to flour like texture.
  • Pulse baking powder and salt in with the oats and set aside.
  • In a large bowl whisk eggs, honey/maple syrup, vanilla, and almond milk together.
  • Add oat flour mixture and remaining oats in with the wet ingredients.
  • Fold in 1/3c of the crushed pineapple. Set aside.
  • Grease an 8x8 or 9×9 ceramic or glass pan with coconut oil or spray with coconut oil spray, or non stick spray.
  • Melt butter and drizzle in the bottom of the pan.
  • Sprinkle brown sugar evenly over the melted butter.
  • Sprinkle remaining crushed pineapple evenly over the brown sugar and butter in the pan.
  • Slowly pour oat batter evenly over the pineapple.
  • Bake for 34-37 minutes, or until middle is set.
  • Let site for 5 minutes before running a knife around the edge of the pan and inverting onto a large plate or pan.
  • Leave pan on top for 5 minutes before removing. If there is a little pineapple or brown sugar in the pan you can scrap it with a spatula and spread it on the cake.
  • Top with cherries if desired. Enjoy warm or let cool for a bit before enjoying. I personally like it slightly cooled or cooled.
  • Enjoy!

1/2 pineapple, peeled and cored
1/3 cup packed plus 2 tablespoons dark brown sugar
4 frozen pitted cherries, thawed, rinsed and drained
2 3/4 cups old-fashioned oats
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
2 cups 2-percent milk or plant-based milk
2 tablespoons unsalted butter, melted and cooled slightly
1 1/2 teaspoons pure vanilla extract

Steps:

  • Spray an 8-by-8-inch baking dish without handles with nonstick cooking spray.
  • Slice the pineapple into four 1/4-inch-thick rings and cut the remaining pineapple into small dice. Measure out 1/2 cup diced pineapple and set aside, reserving the rest for another use. Sprinkle 2 tablespoons of the brown sugar over the bottom of the prepared baking dish and arrange the pineapple slices in a square in the dish. Place a cherry in the center of each pineapple ring.

ELSIE'S PINEAPPLE OATMEAL BARS

A sweet lady at the church I attended growing up used to make these for potlucks and church dinners. She once gave me the recipe on a card, which I've long since misplaced, but I had copied the recipe into another cookbook and have made it many times. Every time I take these bars somewhere, people ask for the recipe. They're also great made with zucchini pineapple (the recipe is also posted here on the zaar, by another chef). I like to cut the sugar down by at least 1/4 cup, because the pineapple is sweet enough, and I've always made these with real butter. Quick oats or old-fashioned will work, but the old-fashioned does make it a little more challenging to press the crust into the pan. I intend to try a mixture of the two at some point, but haven't ever done it. These would be great for a bake sale, potluck, or gifts. The crust does tend to be a little soft, so I'd be sure to package with something firm underneath, rather than just wrapping in plastic. I've seen other recipes that add nuts, coconut, etc. I'm sure that would be great as well, but this is just the basic, buttery, oatmeal and brown sugar crust and topping. Yum!

1 cup sugar
3 1/2 tablespoons cornstarch

Steps:

  • For the filling, combine the sugar and cornstarch in a saucepan and mix well. Add the pineapple and its juice, and cook over medium heat until thickened, stirring constantly. Cool.
  • For the crust, combine oatmeal, salt, brown sugar, flour, and baking powder together. work in butter until mixture is uniform.
  • Reserve 1 1/4 cup of crumb mixture, and press the rest into an ungreased 9 x 13 pan, working up edges just slightly to help hold filling off of the edge of the pan.
  • Pour filling over oatmeal mixture and spread evenly.
  • Sprinkle reserved crumbs evenly over filling.
  • Bake at 350 for 20 minutes. cool and cut into bars.
