PINEAPPLE LIME JELL-O MOLD
My mom made this at every holiday celebration. Very nostalgic. Very green. MMM MMM good! (Cook time is fridge time).

Steps:
- Drain pineapple and reserve liquid.
- Spray Jello mold or bowl with PAM cooking spray.
- Dissolve Jell-o in 2 cups of boiling water, stirring for a few minutes.
- Add enough cold water to the reserved pineapple juice to equal 1.5 cups, and add to Jell-o mixture.
- Whisk in about 8 oz. sour cream (mom used a little less).
- Dump pineapple inches.
- Chill until set.
- If you want to unmold the dish, set bowl into warm water for 30 seconds, and place plate on top of bowl.
- Invert the bowl onto the plate and let the jell-o slide out.
- Enjoy!

PINEAPPLE LIME GELATIN
This recipe was passed down by my mother. We serve it often, but especially at Christmas and Thanksgiving. Of course, the green color makes it nice for St. Patrick's Day, too. With the marshmallows, pecans and whipped cream, the sweet salad can even be served as a light dessert. I like to cook for both small groups and large crowds. When our entire family gets together for thanks and feasting, it's a wonderful time!

- In a bowl, add 1 cup boiling water to gelatin; stir 2 minutes to completely dissolve. In a small saucepan, combine marshmallows and remaining water; cook over low heat until blended, stirring occasionally. Stir into gelatin. Refrigerate until partially set., In a large bowl, beat cream cheese until smooth. Beat in pineapple. Fold in gelatin mixture, whipped cream, pecans and, if desired, food coloring. Pour into a 6-cup mold coated with cooking spray. Refrigerate, covered, until set. Unmold onto a serving plate.

- For 2nd layer, whip cream cheese with a few drops of milk.

LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

Steps:
- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.
