Lime Delight image

CREATED by my husband's cousin, this salad appeared in her church's recipe book. Since it's quick and easy to prepare, I make it often for my husband and me now that we're "empty nesters". It's light and attractive. -Nancy Vavrinek, Adrian, Michigan

Number Of Ingredients 4

1 can (8 ounces) crushed pineapple, undrained
1/4 cup lime gelatin powder
1/2 cup cream-style cottage cheese
1 cup whipped topping

Steps:

  • In a small saucepan, bring pineapple to a boil over medium heat. Remove from the heat; stir in gelatin until dissolved. Chill until slightly thickened, about 30 minutes. Stir in cottage cheese and whipped topping. Cover and refrigerate until thickened.

This punch is a special occasion family punch. Great to serve on Christmas, Thanksgiving and any time.

8 cups crushed ice
3 (0.13 ounce) packages unsweetened lemon-lime flavored drink mix
3 cups white sugar
1 (46 fluid ounce) can pineapple juice, chilled
½ gallon lime sherbet
3 liters lemon-lime flavored carbonated beverage

Steps:

  • Fill punch bowl 1/2 full with ice. Add drink mix, sugar and pineapple juice. Sir to dissolve. Place lime sherbet in punch bowl. Pour in the carbonated beverage. Gently stir and then serve in chilled glasses.

2 small boxes Jell-O Lime Green Gelatin
3 cups boiling waters
1 large pkg. Philadelphia Brand Cream Cheese, softened
1 can (15 oz.) crushed pineapple, drained
1 pkg (8 oz.) crushed pecans

Steps:

  • In bowl, add the water to the Jell-O and mix. Add the softened cream cheese and mix well. Pour into bowl you will be serving in.
  • Put in refrigerator till it starts to gel and then add drained pineapples and pecans; mix all together.
  • Put in refrigerator again till firmly set. If putting onto plate to serve, can dip bowl in warm water to loosen sides and then tip over and place on plate.

2 1/2 cups graham cracker crumbs
1/2 cup butter or 1/2 cup margarine, melted
1/2 cup butter or 1/2 cup margarine
1 1/2 cups icing sugar
2 eggs
1 cup whipping cream, fresh
1 teaspoon vanilla
1 tablespoon icing sugar
1 (19 ounce) can crushed pineapple, drained

Steps:

  • Crust: Mix graham crackers and butter together.
  • Press into 9 x 13 inch pan.
  • Bake in 250f degree oven for 15 minutes.
  • Cool.
  • Filling: In a bowl, cream together butter and icing sugar.
  • Add eggs and beat well.
  • Spread over cooled crust.
  • Bake in 350f degree oven for 25 minutes.
  • Cool.
  • Topping: Beat together whipping cream, vanilla and icing sugar until stiff.
  • Fold in pineapple.
  • Spread over filling.
  • Sprinkle extra graham wafer crumbs on top for a finishing touch.
  • Chill.
  • Cut into squares and serve.
