PINEAPPLE HIGHBALL



Pineapple Highball image

If you make the vanilla-and-star-anise syrup in advance, this tiki-inspired cocktail comes together in mere minutes. Simply combine the syrup with rum and pineapple juice in a highball glass.

Number Of Ingredients 7

3/4 cup sugar
1 vanilla bean
2 star-anise pods
2 ounces white rum
4 ounces pineapple juice
Seltzer
Pineapple slice, maraschino cherry, and star-anise pod, for garnish

Steps:

  • Vanilla Syrup:Combine sugar, vanilla bean, star anise, and 3/4 cup water in a medium saucepan; bring to a boil. Remove from heat; cover 30 minutes. Strain into a heatproof container; let cool completely. (Makes 1 cup, or enough for 8 drinks.)
  • Cocktail:Add rum, pineapple juice, and 1 ounce vanilla syrup to a highball glass filled with ice; top with seltzer. Garnish with pineapple, cherry, and star anise.

This cocktail with rye whiskey, pineapple, and sherry sits right at home with the way we drink now, but Tom Bullock's Bizzy Izzy Highball dates back to 1917.

Number Of Ingredients 8

1 oz. fresh pineapple juice
1 oz. Amontillado sherry (preferably Lustau)
1 oz. rye whiskey
¾ oz. fresh lemon juice
¾ oz. simple syrup (1:1)
1 dash Angostura bitters
1 oz. chilled club soda
Lemon wheel (for serving)

Steps:

  • Combine 1 oz. fresh pineapple juice,1 oz. Amontillado sherry, 1 oz. rye whiskey, ¾ oz. fresh lemon juice, ¾ oz. simple syrup, and 1 dash Angostura bitters in a cocktail shaker and fill with ice. Cover and shake until well chilled, about 7 seconds.
  • Pour 1 oz. chilled club soda into an ice-filled Collins or highball glass and strain cocktail into it. Garnish with lemon wheel.
