- In a large skillet combine ham, chicken broth, pineapple, pineapple juice, soy sauce, worcestershire sauce, and salt and bring to a boil over medium high heat.
- Rinse rice well using a fine mesh sieve.
- Stir in rice, cover and reduce heat to medium-low. Cook 10 minutes, stir, cover and continue cooking 5-10 minutes until rice is tender. Stir in green onions and serve.

- Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.
- In a separate medium bowl, combine the pineapple juice, vinegar, brown sugar, mustard and cornstarch. Stir this together well and pour over the ham mixture in the skillet. Stir well and allow to heat through and thicken, about 5 minutes.

- Drain the pineapple, reserving 1/2 cup juice; set pineapple aside. In a large bowl, combine the mayonnaise, salt, mustard, pepper and reserved pineapple juice; mix well. Fold in the rice, ham, green pepper, 1 cup of Swiss cheese, onion and pineapple., Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes. Sprinkle with remaining cheese. PINEAPPLE HAM JALAPENO CASSEROLE
You'll bake a ham just for the leftovers that you can use in this amazing pineapple jalapeno ham casserole! OMG! It's one skillet. Super EZ!

Steps:
- Grease well a 10-12" cast iron skillet (bottom and perimeter).
- In a medium mixing bowl, whisk together well one-half cup of pineapple juice, celery soup, cream cheese and eggs. Set aside.
- Put the ham cubes in and sprinkle on top one cup of grated cheese and one-half of the stuffing mix. Add one-third of the liquid juice/soup/cream cheese/egg mixture.
- Add the previously frozen baby broccoli mixture, drained pineapple tidbits hen one-third of the juice/soup/cream cheese/egg mixture.
- Top with the remaining stuffing mixture and the remaining juice/soup/cream cheese/egg mixture.
- Cover the skillet with heavy foil. Bake in a preheated 400 oven for 45 minutes.
- Remove foil and bake another 20 minutes. Sprinkle on top the remaining grated cheese. Return to oven (uncovered) for about 5 minutes or until cheese is melted and turning slightly golden brown.
- Remove and let the casserole rest before serving.

- Cook noodles according to package directions; drain. In a large skillet, saute celery in 1 tablespoon butter until tender. Stir in cream cheese and milk; cook and stir until cheese is melted. Add noodles, ham, pineapple, worcestershire sauce, salt and pepper.
- Transfer to an ungreased 1 1/2 quart baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over top. Bake, uncovered, at 350 for 30-35 minutes or until heated through.
