A cool and refreshing boozy summer punch recipe that can be made with tequila, vodka or even gin!

Steps:
- Blend the pineapple up in a blender; it should blend on its own without any additional liquid, but feel free to add 1-2 tbsp water to get it going.
- Pour pineapple juice into a cocktail shaker, then add ginger beer, tequila, rosemary, and top it off with club soda until the shaker is close to full.
- Shake, pour and enjoy!

- In a small saucepan combine the water, sugar, and ginger. Bring to boiling, stirring until sugar is dissolved; reduce heat. Simmer, uncovered, for 10 minutes. Cool ginger mixture to room temperature. Strain ginger mixture through a fine-mesh sieve into a bowl.* If desired, add rum. Cover with plastic wrap; chill for at least 2 hours.
- In a large punch bowl or pitcher combine the chilled ginger mixture, pineapple juice, lemon juice, and lime juice. Stir in club soda. Add ice cubes and lime slices and/or pineapple wedges.

- Bring water, sugar, and ginger to a boil in a 1- to 1 1/2-quart saucepan, stirring until sugar is dissolved. Chill, covered, until cold, about 2 hours.
