Pineapple dream is one of those perfect potluck desserts. Cream cheese, pineapple, whipped cream and graham crackers, yum!

2 1/2 cups graham crumbs (2 sleeves)
1/2 cup unsalted butter
2 cups powdered sugar (sifted)
1/2 cup unsalted butter (softened)
4 oz cream cheese (softened)
8 oz Cool Whip (fat-free)
20 oz crushed pineapple (drained well)

Steps:

  • Preheat oven to 300 F.
  • Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
  • Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
  • Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

2 1/2 cups Graham cracker crumbs
1 stick Unsalted butter, melted
4 tablespoon Granulated sugar
FILLING
8 oz Cream cheese, softened
1 stick unsalted butter, softened
2 1/4 cups Powdered sugar
1 (20 ounces) can crushed pineapple, very well drained
1 cup Heavy whipping cream
1/2 teaspoon Vanilla extract

Steps:

  • TO MAKE THE CRUST- Spray a 9 x 9 inch pan with a non stick spray. Set aside.
  • In a medium dish combine graham cracker crumbs, melted butter and sugar. Press ½ of the mixture on the bottom of the pan. Save the rest for later.
  • TO MAKE THE FILLING - In a large dish beat heavy whipping cream until stiff peaks form. Set aside.
  • In a separate large dish beat, at low speed, cream cheese, butter, powdered sugar and vanilla until creamy.
  • Stir in pineapple. Fold in the whipped cream. Spread over the graham cracker layer.
  • Top with the remaining graham cracker mixture

1/4 c softened butter
2 tsp vanilla extract
1 1/4 c sugar
2 can(s) crushed pineapple, 20 oz each
1 c walnuts
2 box vanilla wafers
2 box Dream Whip
2 bag(s) coconut

Steps:

  • 1. Create the filling: Mix 1/4 cup of softened butter, 1 tsp of vanilla extract, 1 cup of sugar, walnuts, and crushed pineapple (well-drained).
  • 2. Stack each snowball 4 wafers-high putting filling in between.
  • 3. Mix the frosting: Prepare 2 boxes of Dream Whip according to directions on the box and add in 1/4 cup sugar and 1 tsp vanilla extract. You may need less frosting given that vanilla wafers are made so small these days (they were a lot bigger when I first made this recipe 55 yrs. ago!).
  • 4. Spread the frosting generously over each snowball. Roll them in coconut. Crown with a cherry on top. Refrigerate for 24 hrs. Then, they can be frozen.

1/4 cup sugar
1/3 cup butter, melted
FILLING:
1/3 cup sugar
3 tablespoons cornstarch
2 cups milk
1 egg, beaten
1-1/2 teaspoons vanilla extract
1 can (20 ounces) crushed pineapple, drained
1 cup heavy whipping cream, whipped
1/2 cup pastel miniature marshmallows

Steps:

  • In a bowl, combine the cracker crumbs, sugar and butter. Set aside 1/4 cup for topping. Press the remaining crumb mixture onto the bottom of a greased 11x7-in. baking dish. Bake at 350° for 10-14 minutes or until lightly browned and set. Cool on a wire rack., For filling, combine sugar and cornstarch in a saucepan. Gradually whisk in milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 1 minute. Remove from the heat; stir in vanilla. Cool for 30 minutes, stirring several times., Stir in pineapple. Pour over crust. Top with whipped cream (pan will be full). Sprinkle with marshmallows and reserved crumb mixture. Cover and refrigerate for at least 3 hours.

1/2 cup cream cheese (4 oz.)
1/2 cup butter (4 oz. )
1 1/2 cups icing sugar
1 litre (33 oz.) whip topping
14 oz. can crushed pineapple, well drained
1 3/4 cups graham crumbs
1/2 cup melted butter
1/3 cup white granulated sugar
1/3 cup flaked coconut

Steps:

  • Mix together the graham crumbs and sugar in a medium bowl. Add the melted butter and combine with a fork. Let cool slightly to help it form better to the pan.
  • Spread into the bottom of a 9x13" pan and press firmly into the pan.
  • For the pineapple layer, cream the butter and cream cheese together well with a standup or hand mixer. Add in the powdered sugar slowly.
  • Mix in the whip topping and fold in the pineapple
  • Spread over the prepared graham cracker crust.
  • Sprinkle on the coconut, cover and refrigerate until ready to serve.

1/2 cup brown sugar
1/2 teaspoon vanillla extract
1 1/2 cups cake flour
1 cup well drained crushed pineapple
1/4 cup melted butter
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup shredded coconut

Steps:

  • base:.
  • Cream the 1/2 cup butter with the brown sugar and vanilla.
  • Mix in the cake flour, combining well.
  • Press into a ungreased 9 inch square pan.
  • Bake at 375 degrees for 15 minutes, until golden brown.
  • Remove and cool.
  • Filling:.
  • Spread well drained 1 cup crushed pineapple over the cooled cooked base.
  • Beat well together the melted butter with the granulated sugar, egg vanilla and coconut.
  • Spread this mixture evenly over the pineapple.
  • Return to oven at 375 degrees and bake for 25 to 30 minutes.
