PINEAPPLE DREAM DESSERT
Pineapple dream is one of those perfect potluck desserts. Cream cheese, pineapple, whipped cream and graham crackers, yum!

Steps:
- Preheat oven to 300 F.
- Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
- Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
- Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

- TO MAKE THE CRUST- Spray a 9 x 9 inch pan with a non stick spray. Set aside.
- In a medium dish combine graham cracker crumbs, melted butter and sugar. Press ½ of the mixture on the bottom of the pan. Save the rest for later.
- TO MAKE THE FILLING - In a large dish beat heavy whipping cream until stiff peaks form. Set aside.
- In a separate large dish beat, at low speed, cream cheese, butter, powdered sugar and vanilla until creamy.

- 1. Create the filling: Mix 1/4 cup of softened butter, 1 tsp of vanilla extract, 1 cup of sugar, walnuts, and crushed pineapple (well-drained).
- 2. Stack each snowball 4 wafers-high putting filling in between.
- 3. Mix the frosting: Prepare 2 boxes of Dream Whip according to directions on the box and add in 1/4 cup sugar and 1 tsp vanilla extract. You may need less frosting given that vanilla wafers are made so small these days (they were a lot bigger when I first made this recipe 55 yrs. ago!).
- 4. Spread the frosting generously over each snowball. Roll them in coconut. Crown with a cherry on top. Refrigerate for 24 hrs. Then, they can be frozen.

- In a bowl, combine the cracker crumbs, sugar and butter. Set aside 1/4 cup for topping. Press the remaining crumb mixture onto the bottom of a greased 11x7-in. baking dish. - Mix together the graham crumbs and sugar in a medium bowl. Add the melted butter and combine with a fork. Let cool slightly to help it form better to the pan.
- Spread into the bottom of a 9x13" pan and press firmly into the pan.
