Moist, nutty and slightly tropical, this one-hour pineapple coffee cake recipe is amazingly moist and definitely one for the books.

3 eggs (beaten)
2 cups granulated sugar
1 tsp salt
8 oz crushed pineapple with juice
1 tsp cinnamon
1 1/2 tsp pure vanilla extract
1 1/2 cups oil
3 cups all-purpose flour
1 tsp baking soda
2 cups bananas (very ripe, sliced)
1/2 cup walnuts (chopped)

Steps:

  • First, preheat oven to 325 degrees. Spray a 9" x 13" cake pan with non-stick cooking spray then set aside.
  • Mix-don't beat-the first 7 ingredients until well blended.
  • Next, sift flour and baking soda into the bowl and fold gently until completely incorporated. Add bananas and nuts then stir just until combined.
  • Transfer the batter into the prepared cake pan and bake 45 minutes before testing for doneness. When the center is firm and a cake tester comes out with a few moist crumbs attached, you'll know it is done, about 50-55 minutes.
  • Remove from oven, cool completely then slice and serve with a generous dusting of powdered sugar. Enjoy!

¼ cup white sugar
¼ cup brown sugar
1 tablespoon baking powder
1 teaspoon baking soda

1 large egg
1 cup plain yogurt
¼ cup canola oil
1 teaspoon vanilla extract
1 ½ cups pineapple tidbits in juice, drained and juice reserved
⅓ cup reserved pineapple juice
¼ cup chopped pecans
¼ cup brown sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
  • Combine flour, white sugar, 1/4 cup brown sugar, baking powder, baking soda, and salt in a bowl. Whisk egg, yogurt, canola oil, and vanilla extract in another bowl until smooth. Stir flour mixture into egg mixture until just blended. Add 1/3 cup reserved pineapple juice and fold in pineapple tidbits until batter is just mixed; pour into prepared baking dish.
  • Stir pecans and remaining 1/4 cup brown sugar in a small bowl; sprinkle over batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool in the pans for 10 minutes before removing to cool on a wire rack. Serve warm or completely cool.

1 cup sugar
2 cups flour
2 teaspoons baking powder
1 egg
1 cup milk
15 ounces crushed pineapple, drained
1 cup flour
1 cup brown sugar
1/4 lb butter or 1/4 lb margarine

Steps:

  • Cream sugar with butter.
  • Sift flour and baking powder.
  • Add to creamed mixture alternately with egg/milk mixture. (place egg in cup and add milk to make 1 cup).
  • Spread in 9x13 pan.
  • Cover with well-drained pineapple.
  • Mix topping ingredients till crumbly and sprinkle over pineapple.

1 - 20 (ounce) can chunk pineapple ( drained, saving 2/3 cup of juice )
2/3 c brown sugar, packed
1 tsp cinnamon
1/2 c walnuts,chopped
1/4 c butter, sliced
1 egg
2 c bisquick
2 Tbsp sugar

Steps:

  • 1. Preheat oven to 400 degree F. Grease a 9 inch pan or baking dish with non stick cooking spray.
  • 2. Mix the brown sugar, walnuts, cinnamon and butter. Set aside.
  • 3. Drain pineapple, reserving 2/3 cup syrup. Pat pineapple dry. Set aside.
  • 4. Mix the reserved juice with the egg; then add to the bisquick and sugar. Stirring about 30 seconds.
  • 5. Spread the bisquick batter into a 9 inch dish or pan. Sprinkle half the brown sugar mixture over batter. Add pineapples. then sprinkle with remaining brown sugar.
  • 6. Bake for 25 minutes, or until pick in the center comes out clean.

½ cup crushed pineapple
1 tablespoon cornstarch
2 ½ cups all-purpose flour

¼ teaspoon salt
¾ cup buttermilk

3 tablespoons brown sugar
3 tablespoons sweetened flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 7x10-inch baking pan.
  • Combine apricots, pineapple, and cornstarch in a small bowl. Combine flour, sugar, baking powder, cinnamon, baking soda, nutmeg, and salt in a large mixing bowl.
  • Combine buttermilk, melted butter, egg, and almond extract in another bowl. Mix wet ingredients into dry ingredients alternately with fruit mixture with a wooden spoon; do not beat. Fold in 1/2 cup almonds. Spread into the prepared baking pan.
  • Combine flour, butter, brown sugar, coconut, almonds, and cinnamon for topping together until a crumbly mixture is achieved. Sprinkle evenly over the top of the cake batter.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 40 minutes. Allow to cool for about 30 minutes before cutting into it.

1 can of crushed pineapple in syrup (20 oz. drained & syrup reserved)
3 cups all-purpose flour
1 cup light brown sugar (firmly packed)
1 cup granulated sugar
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1 cup salted butter (softened)
2 large eggs
3/4 cup buttermilk
1 teaspoon vanilla extract
Optional - maraschino cherries (chopped nuts, shredded coconut)

Steps:

  • Preheat oven to 350°F. Spray or grease & flour a 13"x9" baking dish.
  • In a large mixing bowl, whisk together flour, brown & white sugar, cinnamon, baking powder, baking soda, nutmeg and cloves.
  • Cut in butter (with a pastry blender) until mixture is pea sized crumbled.
  • Set aside 1 cup crumb mixture.
  • Add 1/4 cup reserved pineapple syrup, eggs, buttermilk and vanilla extract to mixing bowl. Mix until combined.
  • Stir in crushed pineapple until combined. Any optional ingredients can be stirred in here or sprinkled on top.
  • Pour cake mixture into prepped 13"x9" baking dish. Sprinkle with 1 cup reserved crumb mixture.
  • Bake until toothpick inserted in center of cake comes out clean, about 45-50 minutes.
  • Cool on wire rack. Cake can be served warm or cold.

  • Whisk both flours, 1/2 cup sugar, baking powder, baking soda, and salt in a medium bowl.
