- Adjust oven rack to upper-middle position and preheat oven to 375°F. Line 12-cup muffin pan with cupcake liners. Stir butter with sugar and salt in a large bowl until creamy. Whisk in eggs, one by one, until combined. Whisk in coconut milk and 3/4 cup coconut.
- Add flour and baking powder to the bowl and whisk until combined. Whisk in pineapple cubes. Divide batter between muffin cups and sprinkle the tops with the remaining coconut. - For jerk chicken, process ingredients (except chicken) in a food processor until smooth. Combine with chicken in a non-reactive container, toss to coat, cover and refrigerate overnight to marinate.
- Preheat a kettle barbecue or char-grill pan to medium and cook chicken, turning and basting occasionally with marinade, until cooked though (20-25 minutes), cover loosely with foil and set aside to rest (5-10 minutes).
