PINEAPPLE WASSAIL

I love tea and pineapple juice, but had never had them like this together. This was a wonderful switch from my apple cider recipe I usually make.

Number Of Ingredients 8

2 1/2 cups water
2 orange pekoe tea bags, regular size
3/4 cup pineapple juice
1 (6 ounce) can frozen orange juice concentrate, thawed
2 tablespoons honey
1/2 teaspoon lemon juice
3 whole cloves
1 cinnamon stick

Steps:

  • Bring the water to a boil in a saucepan. Add tea bags and cover; steep 10 minutes and discard tea bags.
  • Add the remaining ingredients in the saucepan. Cook over medium-low heat for 15 minutes or until well heated.
  • Discard cloves and cinnamon stick and pour into mugs.

½ gallon apple cider
1 (46 fluid ounce) can pineapple juice
46 fluid ounces cranberry juice cocktail
1 orange, thinly sliced
5 cinnamon sticks
1 tablespoon whole allspice berries
1 tablespoon whole cloves

Steps:

  • Pour apple cider, pineapple juice, and cranberry juice into a stockpot. Place orange slices, cinnamon sticks, allspice berries, and cloves in a muslin pouch or directly into the apple cider mixture. Bring apple cider mixture to a boil; reduce heat and simmer until flavors have blended, 15 to 20 minutes. Remove orange slices and spices before serving.

A quick and delicious hot cider drink - Great for cold weather entertaining. Always a big hit with young and old! Cloves can be placed into cheesecloth or teabag infuser for easy removal if desired. A cinnamon stick in each cup makes a nice garnish.

Steps:

  • In a large stock pot over medium heat, combine the apple cider, orange juice, pineapple juice, cinnamon sticks, cloves and honey. Bring to a boil, then simmer over low heat, or transfer to a slow cooker to keep warm while serving. Strain out cinnamon sticks and cloves before serving if desired.

An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

2 quarts apple cider
1-1/2 cups orange juice
3/4 cup pineapple juice
1 tablespoon brown sugar
1/2 teaspoon lemon juice
2 cinnamon sticks (3 inches)
Dash ground cinnamon
Dash ground cloves

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.

1 ¼ cups pineapple juice

¼ cup clover honey

1 teaspoon ground allspice
½ teaspoon ground ginger
12 fresh mint leaves
12 orange slices for garnish

Steps:

  • In a large saucepan or pot, combine cider, cranberry juice, lemon juice, pineapple juice, orange slices, cloves, honey, sugar, and cinnamon sticks. Bring to a boil. Reduce the heat to a simmer; add nutmeg, ginger, and allspice. Simmer for 10 to 15 minutes, stirring occasionally.

1 cup orange juice

Steps:

  • Place the cinnamon stick, cloves and cardamom on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag., In a large saucepan, combine the apple cider, pineapple juice, apricot nectar and orange juice. Add spice bag. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until flavors are blended. Discard spice bag. Stir in rum if desired. Serve warm.
