Steps:
- Mix all ingredients except pineapple, cornstarch and bell pepper in 3 1/2- to 6-quart slow cooker.
- Cover and cook on low heat setting 7 to 8 hours (or high heat setting 3 to 4 hours) or until vegetables are tender and chicken is no longer pink in center.
- Mix reserved pineapple juice and cornstarch until smooth; gradually stir into chicken mixture. Stir in pineapple and bell pepper.
- Cover and cook on high heat setting about 15 minutes or until slightly thickened. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

- Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.
- Heat the remaining 1 tablespoon of olive oil in a wok. Add bell pepper and stir-fry for 3 minutes. Add scallions and cook for 2 more minutes. Remove chicken from marinade and add to the wok; discard marinade. Cook, stirring occasionally, until chicken is cooked through and no longer pink in the centre, 10 to 15 minutes.
- Combine pineapple juice and cornstarch in a bowl; mix together. Add pineapple chunks to the skillet and cook for 2 to 3 minutes. Pour in pineapple juice mixture and bring to a boil. Simmer until sauce has thickened, about 3 minutes.

- In a wide pan over medium heat, heat oil.
- Add potatoes and carrots and cook, turning once or twice, until lightly browned. Remove from pan drain on paper towels.
- Remove excess oil except for about 1 tablespoon. Add bell peppers and cook for about 30 to 40 seconds. Remove from pan and drain on paper towels.
- Add onions and garlic and cook until softened.
- Add chicken and cook, turning as needed, until lightly browned.
- Add fish sauce and cook for about 1 to 2 minutes, stirring as needed.
- Add tomato sauce and reserved juice from canned pineapples (about 1 cup). Bring to a boil.
- Lower heat, cover, and simmer for about 20 to 30 minutes or until chicken is cooked through.
- Season with salt and pepper to taste.
- Add potatoes, and carrots, and continue to cook until vegetables are tender and sauce is thickened.
- Add green peas, pineapple chunks, and bell peppers and cook for another 1 to 2 minutes or until heated through.

- Flatten the chicken to 1/4-in. thickness. - Wipe the chicken thighs dry with paper towels. Place in a bowl, pour in the Worcestershire Sauce and add half of the minced garlic. Mix well. Cover the bowl, place in the fridge and allow the chicken to marinate for a couple of hours or overnight. Remove from the fridge half an hour before cooking time to allow the chicken to warm to room temperature.
