1 can (8 ounces) unsweetened pineapple chunks
1/2 cup water
1/2 cup soy sauce
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon paprika
1 pound beef top sirloin steak, cut into 1-inch pieces
16 medium fresh mushrooms
1 large onion, cut into chunks
1 medium green pepper, cut into 1-inch pieces
1/2 cup butter, melted

Steps:

  • Drain pineapple, reserving juice; refrigerate the pineapple. In a large resealable plastic bag, combine the water, soy sauce, garlic powder, salt, ginger, paprika and reserved pineapple juice; add steak. Seal bag and turn to coat; refrigerate for at least 30 minutes. , Drain and discard marinade. On metal or soaked wooden skewers, alternately thread the steak, mushrooms, onion, green pepper and pineapple. Grill, covered, over medium-hot heat or broil 4-6 in. from the heat for 4-5 minutes on each side or until meat reaches desired doneness, basting frequently with melted butter.

1 can (6 ounces) unsweetened pineapple juice
1/3 cup honey
1/3 cup soy sauce
3 tablespoons cider vinegar
1-1/2 teaspoons minced garlic
1-1/2 teaspoons ground ginger
1-1/2 pounds beef top sirloin steak, cut into 1-inch pieces
1 fresh pineapple, peeled and cut into 1-inch chunks
12 large fresh mushrooms
1 medium sweet red pepper, cut into 1-inch pieces
1 medium sweet yellow pepper, cut into 1-inch pieces
1 medium red onion, cut into 1-inch pieces
2-1/2 cups uncooked instant rice

Steps:

  • In a small bowl, combine first six ingredients. Pour 3/4 cup into a large resealable plastic bag; add beef. Seal bag and turn to coat; refrigerate 1-4 hours. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. On 12 metal or soaked wooden skewers, alternately thread the beef, pineapple, mushrooms, peppers and onion. Moisten a paper towel with cooking oil; using long-handled tongs rub on grill rack to coat lightly., Grill, covered, over medium-hot heat 8-10 minutes or until meat reaches desired doneness, turning occasionally and basting frequently with reserved marinade., Cook rice according to package directions; serve with kabobs.

1/2 cup hot (spicy) honey
1/2 cup orange juice
2 tablespoons olive oil or vegetable oil
1 1/2 teaspoons kosher salt
1 teaspoon red curry seasoning
1/2 teaspoon freshly ground black pepper
1 1/2 pounds beef tenderloin, cut into 1-inch chunks
4 pineapple rings (canned or fresh), cut into 1-inch chunks
Yellow rice, for serving, optional

Steps:

  • Add the honey, orange juice, olive oil, salt, red curry seasoning and black pepper to a medium bowl. Whisk until the honey and oil are dispersed. Reserve 1/4 cup of the marinade, then divide the remaining marinade in half between two resealable plastic bags. Add the beef chunks to one bag and the pineapple to the other bag. Seal both bags and let rest at room temperature for 2 hours. If you are using wooden skewers, soak them in water while the beef and pineapple are marinating.
  • Preheat the grill to 400 degrees F.
  • Remove or strain the beef and pineapple chunks from the bags and discard the marinade. Pat everything dry. Build the skewers by alternating between the beef and pineapple, placing 3 to 4 pieces of each on each skewer. Place them over the direct heat of the grill and cook on each side for 1 to 2 minutes. Brush the skewers with the reserved marinade. Remove from the grill and serve with yellow rice, if using.

Delicious pineapple kabobs, sprinkled with cinnamon and brown sugar then grilled for the perfect summertime dessert!

1-2 fresh pineapples cut into chunks (dispose of top, shell, and core)
2 T brown sugar
1/2 tsp. ground cinnamon
good olive or canola oil

Steps:

  • Soak skewers in water for at least 10 minutes to prevent burning.
  • Preheat grill to high or 400 degrees.
  • Poke the skewers through 8-10 fresh pineapple chunks each, depending on the size of the chunks. Lay them out on a baking sheet or tray when finished.
  • Brush lightly on all sides with good olive or canola oil.
  • Mix brown sugar and cinnamon together in a small bowl and lightly sprinkle onto the skewers. I just do this lightly on one side, but you can do more, and on both sides if you want a sweeter result.
  • Place skewers onto preheated grill. Monitor carefully as they cook. Flip every 2-3 minutes until warmed/cooked through. I flipped my skewers a total of 3 times. The individual chunks may flip and have a mind of their own. It is totally okay if some sides get cooked more than others.
