I love the sweet and tangy pineapple sauce. I serve this over rice and accompany it with green beans. This recipe was handed down to me from my mother-in-law many years ago.

¼ cup butter
⅓ cup ketchup
¼ cup brown sugar
2 teaspoons cornstarch
¼ cup vinegar
1 teaspoon salt
1 teaspoon soy sauce
½ teaspoon Worcestershire sauce
1 (9 ounce) can crushed pineapple
3 pounds assorted chicken pieces such as breasts, thighs, wings, and drumsticks

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter in a saucepan over medium heat; stir ketchup and brown sugar into melted butter, stirring to dissolve brown sugar. Whisk cornstarch into vinegar until smooth; pour into pan. Whisk constantly and add salt, soy sauce, and Worcestershire sauce to mixture; bring to a simmer. Cook until thickened, about 2 minutes. Stir pineapple into sauce.
  • Arrange chicken pieces in a 9x13-inch baking dish; pour pineapple sauce over chicken.
  • Bake until sauce is bubbling, chicken is browned, and the juices run clear, about 45 minutes. An instant-read meat thermometer inserted into the thickest part of a thigh should read at least 160 degrees F (70 degrees C).

2 teaspoons all-purpose flour
1 (20 ounce) can pineapple rings, drained
4 potatoes, cubed
6 carrots, cubed
1 bunch spring onions, sliced
1 teaspoon salt
1 teaspoon ground black pepper
4 pieces of boneless chicken, such as thighs or breasts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place flour into a large oven roasting bag, inflate the bag slightly, and shake to distribute flour around the inside of the bag. Place pineapple rings, potatoes, carrots, spring onions, salt, and black pepper into the oven bag. Rinse the chicken pieces but don't dry them; add them to the bag. Shake to evenly distribute the ingredients and flour. Tie the top of the bag closed, and place on a baking sheet.
  • Bake the chicken, vegetables, and pineapple in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

¾ tsp. Italian seasoning
½ tsp. sweet paprika
¼ tsp. garlic powder
4 boneless skinless chicken breasts (about 2 lb.)
Kosher salt
Freshly ground black pepper
2 tbsp. extra-virgin olive oil
1½ c. shredded mozzarella
2 tbsp. freshly grated Parmesan
4 thin pineapple rounds
¼ c. diced red onion
2 tsp. freshly chopped cilantro

Steps:

  • Preheat oven to 375°. In a small bowl, combine Italian seasoning, sweet paprika, and garlic powder. Season chicken with salt and pepper.
  • In a large ovenproof skillet over medium-high heat, heat oil. Cook chicken on top side until golden, about 5 minutes. Remove from heat and sprinkle all over with seasoning mixture.
  • Sprinkle tops of chicken with 1 cup mozzarella and most of Parmesan. Arrange a pineapple round on top of each piece of chicken. Sprinkle with remaining ½ cup mozzarella and remaining Parmesan.
  • Bake until cheese is melty and chicken is cooked through, about 10 minutes.

  • Preheat oven to 425 degrees F. Spray a baking dish with cooking spray. I used an 11 x 7-inch dish.
  • In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.
  • Add uncooked rice, onion, bell pepper, pineapple and it's juices and chicken. Cover the baking dish tightly with foil. Bake for 50 minutes. Once cooking is done, uncover and stir ingredients.
  • Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until chicken is cooked through and rice is tender.
  • Let stand 5 minutes before serving. Top with diced bacon and cilantro.

1 (12 ounce) can pineapple chunks, drained and juice reserved

This recipe has minimal prep, but requires time to marinate in the refrigerator. The amount of garlic and the sweet red chili sauce give this dish it's zing. Easy to prepare. *Note* "prep time" does not include marinade time.
