Steps:
- In a blender, blitz the tofu, coconut milk, vanilla seeds (or extract), orange juice, and maple syrup for a few seconds, until you have a smooth cream.
- Place the spiralised (or chopped) apple, plus the pineapple, and most of the chopped cashews and desiccated coconut into a large bowl, then pour over the cream mixture.
- Gently fold everything together, making sure everything is well-coated.
- Spoon into four serving glasses or dishes, sprinkle over the rest of the coconut and cashews, and serve immediately.
- This will also keep in the 'fridge for up to 24 hours, and actually tastes even better on the second day!

CREAMY VEGAN AMBROSIA FRUIT SALAD WITH PINEAPPLE
Steps:
- In a large bowl, toss the fruit and coconut until well blended. Refrigerate.
- Combine the cornstarch with the lemon juice in a medium saucepan and stir until well blended. Place the saucepan over medium heat and add the sugar and orange juice. Cook, stirring constantly, until the mixture thickens, about 5 to 10 minutes. Remove the saucepan from the stove and allow to cool thoroughly.
- Fold the pureed tofu, orange zest, and poppy seeds if using into the juice mixture and chill for at least 1 hour.
- Immediately before serving, pour the dressing over the fruit and serve.

- Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. - Drain the liquid from all the cans of fruit. Thin the sour cream with whichever fruit juice you would like. Mix all the ingredients together with the thin sour cream.

- Pour the orange juice into a medium bowl. Peel and core the apples, and then grate them into the orange juice using the large-hole side of the grater. Add the pineapple, coconut and sugar. Mix well, adding more orange juice if the mixture is not juicy enough. Store in the refrigerator until ready to serve. The apples will continue to absorb juice, and orange juice can be added as needed to keep it as juicy as you like.
