- Place pineapple, cucumber, green onions, cilantro, and mint in a large bowl.
- Whisk chili sauce, sesame oil, lime juice, lime zest, and fish sauce together; whisk in brown sugar, 1 teaspoon at a time, until dressing has desired sweetness. Pour chili dressing over pineapple mixture; toss to combine.

- Drain pineapple, reserving 1 tablespoon juice (discard remaining juice or save for another use). , In a large bowl, combine the pineapple, cucumbers, grapes and chives. In another bowl, combine the mayonnaise, sugar, mustard, celery seed, horseradish and reserved pineapple juice. Pour over pineapple mixture; gently stir to coat. Serve with a slotted spoon.

Enjoy this sweet, refreshing salad alongside grilled meat or fish to cut through the richness and refresh the palate. If you like a little heat, adding jalapeño will give you the kick you crave. This is my favorite cucumber salad. It's really refreshing served with a spicy entree. I do cut back to about 1/2 cup sugar and like to use black sesame seeds to give it another dash of color. From the RSVP section of Bon Appetit magazine.

- Bring first 4 ingredients to boil in heavy small saucepan, stirring until sugar dissolves.
- Simmer until reduced to 2/3 cup, about 4 minutes.
- Transfer syrup to large bowl and refrigerate until cold.
- Add pineapple to syrup.
- Cover and refrigerate 1 hour.
- Add cucumber and next 3 ingredients to pineapple mixture; stir to coat.
- Line plates with lettuce leaves.
- Spoon salad atop lettuce.

GRILLED PINEAPPLE AND CUCUMBER SALAD

- Step 1 For the dressing, in a food processor add peanut butter, rice vinegar lime juice, garlic, chilli and soy sauce. Blitz until a smooth paste. Step 2 Preheat grill to medium high. Peel pineapple and cut lengthwise, cut cucumbers into long strips lengthwise. Step 3 Grill pineapple slices for 45 seconds. Cut grilled pineapple into small cubes. Step 4 In a large mixing bowl, add pineapple, cucumbers, tomatoes, red onions, red chilis, half of the roasted peanuts, coriander and mint together. Toss salad together. Step 5 Serve into a serving plate and scatter remaining roasted peanuts on top. Step 6 Drizzle peanut dressing over and serve.

- Heat broiler, with rack 4 inches from heat. Combine lime zest, chili powder, and 2 teaspoons salt. On a rimmed baking sheet, rub chicken all over with mixture. Turn skin side down.
- Broil chicken 5 minutes. Flip and broil until skin is crisp and chicken is cooked through, about 8 minutes.
- Meanwhile, combine lime juice, pineapple, cucumber, and cilantro. Season with salt and pepper. Serve chicken with salad.

CUCUMBER PINEAPPLE THAI SALAD
Steps:
- Gather the ingredients.
- Combine all salad dressing ingredients in a cup and set aside. Place pineapple chunks in a mixing bowl.
- To prepare cucumber: Remove skin with a vegetable peeler , then cut the cucumber in half lengthwise. Slice these sections again lengthwise (several times if the cucumber is thick), then slice the other way to create cubes or chunks. Add these to the mixing bowl.
- Slice red pepper thinly to create matchstick-like pieces. Add these to the mixing bowl.
- Add sliced spring/green onion, plus the whole roasted peanuts.
- Add most of the basil and coriander, putting aside a little of each for the garnish.
- Pour over the salad dressing over and toss well.
- Scoop salad onto a serving plate and top with the extra basil and coriander, plus a good sprinkling of nuts.
- If desired, serve with lime wedges on the side.
- Enjoy!
