BEER MAC 'N' CHEESE
A staple of Manhattan's East Village, Emma Freud's cheddar and pale ale pasta dish is the ultimate comfort food

- Heat the grill to its highest setting. In a flameproof casserole dish or metal frying pan, melt the butter and fry the garlic for 2 mins. Add the spinach and cook until it wilts, about 2 mins. Pour in the milk and beer and bring to a gentle bubble. Add the macaroni and stir intermittently for around 20 mins until the pasta is cooked and covered in sauce.
- Stir in the cheddar and half the mozzarella. When it starts to melt, sprinkle the remaining mozzarella on top and put it in the oven for around 7-10 mins or until browned on top and sensational underneath.

CAULI MAC 'N' CHEESE | SLIMMING & WEIGHT WATCHERS FRIENDLY
This recipe is a great way to pack in some extra veg as the cauliflower is barely recognisable when blended into the cheese sauce!

- Bring a pan of water to boil.
- Spray a frying pan with low calorie cooking spray and fry the bacon for a few minutes until crisp. Place on a plate and set to one side.
- Put 1/4 of the cauliflower aside and blitz the remaining 3/4 of the cauliflower until it looks like cauliflower rice. Place the blitzed cauliflower to one side.
- Wipe out your frying pan, spray with low calorie cooking spray and then sauté the onion and garlic on a medium heat.
- Once the onion begins to brown, mix in the blitzed cauliflower.
- Make up the stock and, alongside the mustard powder, add to the frying pan. Turn the heat down so that the pan is gently simmering and simmer for around 15 minutes.
- Add the pasta to the pan of water and cook as per the instructions on the packet. 5 minutes before the end of the cook time, add the remaining pieces of cauliflower that you set aside earlier (not the blitzed cauliflower!).
- Once the pasta and cauliflower are cooked, drain well, reserving a few tablespoons of the water in a cup. Return to the pan and set aside.
- Mix together the cheddar and parmesan.
- Stir the cream cheese into the cauliflower mix, alongside half of the cheddar and parmesan. Tip the whole mix into a blender and then blitz until smooth (it should be the consistency of cheese sauce). This might take a couple of minutes. If your sauce is too thick, then just add a little of the pasta water that you reserved earlier to thin it out a little.
- Pour the cheese sauce over the pasta and stir in the tablespoon of buffalo sauce and the cooked bacon.
- Pour into an ovenproof dish and sprinkle the remaining parmesan and cheddar mix evenly over the top.
- Place under a hot grill until the cheese has melted and is golden brown.

EASY CHEESY PASTA | SLIMMING & WEIGHT WATCHERS FRIENDLY

- Preheat oven to 200°C. Make the pasta up as per instructions on the pack, then drain and place in a bowl
- Mist a frying pan with low calorie cooking spray and cook the onion until brown
- Add the onion to the cooked pasta along with the Primula and stir well
- Transfer to an oven proof dish, sprinkle the cheese on top and bake for about 15-20 minutes until golden brown
- Cook the tomatoes, basil and salt until the tomatoes start to ooze
- Plate up the pasta and serve the tomatoes on the side!

- Preheat the oven to 375 degrees. Pour the macaroni into a large bowl and cover with hot water and stir in a big pinch of salt. Let the noodles soak for about 30 minutes while you prep the other ingredients.
- Melt two tablespoons of the butter. Pulse the bread through a food processor, and add the butter. Set aside.
- Melt the butter in a large saucepan. Add the flour and cook, stirring constantly, until light golden blonde. Add the evaporated milk and whole milk, very slowly, whisking constantly to achieve a nice smooth, thick sauce. Stir in the mustard. Bring to a simmer over medium heat. Remove from heat to add the cheeses – stir until melted. Season to taste.
- Whisk about a cup of sauce with the eggs in a separate bowl (to increase the temperature of the eggs gradually). Once combined, add that egg mixture in with the rest of the sauce. Add the drained macaroni and stir to combine. Pour into a greased rectangular or square baking dish.

- Firstly make a start on the sauce. Spray the pan with low calorie cooking spray and sauté the onion over a medium heat for 5 minutes, until soft. Add the cauliflower and the stockpot. Just cover with boiling water and allow to simmer for 10 minutes until tender.
- Wrap the grated courgette in a clean tea towel and squeeze out the excess liquid. You might be surprised at how much comes out.
- Place in a bowl along with the pork, breadcrumbs, egg, herbs and a good pinch of salt and pepper. Mix together with your hands until well combined, then roll into 30 equally sized balls.

- Cook the macaroni according to package directions. Drain and set aside. Heat the butter in a large skillet over medium low heat. Cut the onion into thin rings and add to the butter in the pan, sauteing over low heat until fragrant and golden, about 20 minutes.
- Meanwhile, remove the skin and the seeds from the squash. Cut the flesh into small cubes. Bring the broth to a boil and add the squash. Cook for 5-7 minutes or until fork tender. Drain, reserving 1/2 cup broth, and transfer squash to the blender. Add the onions, milk, salt, and reserved broth and puree until completely smooth and creamy. This should yield about 4 cups sauce.
- Pour the pureed sauce over the cooked noodles and add the shredded cheese. Stir to melt the cheese; add water or milk to adjust consistency as needed. Serve with parsley, salt, and pepper to taste.
