Yield 7 half-pints.

Number Of Ingredients 6

6 cups sugar
6 cups shredded peeled zucchini
1 can (8 ounces) crushed pineapple, undrained
1/4 cup lime juice
2 packages (3 ounces each) pineapple gelatin
1 teaspoon rum extract

Steps:

  • Rinse 7 half-pint jars and lids with boiling water. Dry thoroughly. , In a Dutch oven, combine sugar, zucchini, pineapple and lime juice. Bring to a boil. Boil 10 minutes, stirring constantly. Remove from heat; stir in gelatin and extract until gelatin is dissolved., Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers. Cool completely before covering with lids., Refrigerate up to 3 weeks or freeze up to 1 year. Thaw frozen jam in refrigerator before serving.

1 can (10 ounces) frozen nonalcoholic pina colada mix, thawed
1/2 cup sugar
1/2 cup pineapple-orange juice
1/8 teaspoon almond extract
1/8 teaspoon coconut extract
1-1/2 cups green grapes
1-1/2 cups seedless red grapes
1-1/2 cups fresh blueberries
1-1/2 cups halved fresh strawberries
1 can (8 ounces) pineapple chunks, drained
1/2 cup fresh raspberries
Thinly sliced fresh mint, optional

Steps:

  • For dressing, mix first 5 ingredients until sugar is dissolved. Place fruit in a large bowl; toss gently with dressing., Refrigerate, covered, until serving. If desired, top with mint.

This jam recipe comes from the Ball website and uses the Ball Automatic Jam and Jelly Maker Pina Colada Jam

3-1/2 cups crushed fresh pineapple (or use canned like I did)
1/2 cup coconut water
4-1/2 tablespoon Ball® brand RealFruit™ Classic Pectin
1/2 teaspoon butter or margarine (optional)
5 cups granulated sugar
1/3 cup shredded coconut (coarsely chopped)

Steps:

  • Prepare your jars
  • Peel and core pineapple or used canned. Coarsely chop and then crush with a potato masher. Measure required quantity of crushed pineapple and remaining ingredients for your recipe; set aside.
  • Combine the crushed pineapple and coconut water in an 8-quart saucepan. Gradually stir in Pectin. Add butter, if using. Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly.
  • Add chopped coconut and the sugar, stirring constantly to dissolve. Bring to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam, if necessary, from top of jam.

Fruit jellies are a simple and sweet treat, but when you give them a pina colada flavor, you just might find them addicting.

1 cup granulated sugar
¾ cup Mott's® Natural Applesauce
1 (3 ounce) package pineapple-flavored gelatin mix (such as Jell-O®)
1 (.25 ounce) package unflavored gelatin
3 teaspoons freshly squeezed lime juice
¾ teaspoon coconut extract
½ cup granulated sugar for coating

Steps:

  • Spray an 8x8-inch baking dish with non-fat cooking spray. Place dish in refrigerator.
  • Combine granulated sugar, applesauce, pineapple-flavored gelatin, unflavored gelatin, lime juice, and coconut extract in saucepan.
  • Bring to a boil over medium heat, stirring constantly. Boil for about 1 minute. Remove saucepan from heat, and cool at room temperature for about 10 minutes. (Do not pour boiling hot liquid into a chilled glass dish.)
  • Remove baking dish from refrigerator, and pour warm mixture into the cooled baking dish. Refrigerate until firm, 1 to 2 hours.
  • When firm, remove from refrigerator, lift one side with a spatula, and turn out onto a cutting board or parchment paper sprinkled with granulated sugar.
  • Using a sharp knife, cut gelatin into squares or use a small cookie cutter for decorative shapes. Coat the jellies on all sides with sugar. Place on a rack, and allow to dry overnight.
  • Store in an airtight container.

Great small batch canning recipe made from fresh pineapples and coconut rum.

2⅓ cups pineapple (crushed...[$4.00])
⅓ cup coconut rum or coconut water (...[$1.58])
3 tbsp. fruit pectin (...[$1.50])
3⅓ cup white granulated sugar (...[$0.97])
¼ cup sweetened shredded coconut (...[$0.20])

Steps:

  • Prep all ingredients and water bath canning equipment including jars, lids, and rings.
  • In a large pot, bring pineapple to a boil. I usually crush the pineapple in the pot at this stage.
  • Sprinkle pectin evenly over pineapple and stir in. Bring back to a boil.
  • Add sugar, coconut rum, and shredded coconut and stir until dissolved.
  • Bring back to a boil until sugar has dissolved and reduce heat while filling jars.
  • Ladle jam into hot jars with ¼" headspace.
  • Process in a boiling water bath canner for 10 minutes.

If you like pina coladas, you'll like this! It is perfect to warm and serve as a dip for coconut shrimp or coconut chicken strips. It can be used as a cake filling or for crepes. I, personally, prefer it right off the spoon. :) A friend sent this recipe to me knowing that I like "different" kinds of jams and jellies...and I like pina coladas also. Cooking time does not include time for water to boil in canner. Prep and cooking times are estimates.

Number Of Ingredients 6

3 1/2 cups fresh pureed pineapple (NOT canned!)
1 cup cream of coconut (I use Coco Lopez, do NOT use coconut milk)
1/3 cup white rum
1/4 cup lemon juice
6 1/2 cups sugar
2 (3 ounce) envelopes liquid pectin

Steps:

  • In a large heavy bottomed pot, mix together pineapple puree, cream of coconut, rum, and lemon juice.
  • Stir in sugar and bring to a full rolling boil (one that can't be stirred down) over high heat.
  • Stir constantly, boil hard for three minutes.
  • Remove from heat and stir in pectin.
  • Skim off any foam.
  • Ladle into sterilized jars to within 1/4 inch of rim. Wipe rim clean.
  • Apply lids and rings and tighten rings just fingertip tight.
  • Process jars in boiling water bath canner for 5 minutes.
  • Let sit at room temperature until set.
  • Check seals -- center of lids should be indented.
  • Refrigerate any unsealed jar up to 3 weeks.
  • NOTE: Do NOT use coconut milk!
  • This made 9 half pints and 1 quarter pint(1/2 cup).
