PINA COLADA
Thanks to the inclusion of coconut rum, it's difficult to detect any taste of alcohol in this extra creamy-delicious Piña Colada. The rum may be left out altogether for a delightful tropical drink your entire family will enjoy!

Steps:
- Mix ingredients in blender until smooth; pour into glasses; garnish with pineapple wedges and maraschino cherries if desired.
- Note: This recipe is my adaptation of "The Authentic Piña Colada" printed on back of the Coco Lopez Real Cream of Coconut® can, which is the same as this but uses all (3 ounces) regular rum only ~ It's a great drink but I just love the inclusion of part coconut rum to make it even better!

PINA COLADA I
The real Pina Colada was invented in the Hotel Caribe Hilton in Puerto Rico during the decade of the 1950's. The inventor was a bartender who entered a world competition, and won for this drink. He did not patent the recipe for which reason I am able to make some modifications for your delight.

ISLAND PINA COLADA
Ever wonder why the Piña Coladas you make at home taste nothing like the ones served at your favorite tropical destination? Most recipes simplify the colada into a mixture of rum, pineapples & ice with a splash of coconut milk. A flavorful Piña Colada has two kinds of rum (light and dark), cream and even bitters added which make the concoction a true tropical delight. Use high quality Puerto Rican rum in this recipe for the best result. Enjoy!

- Preheat oven to 325 degrees. Lightly grease a 9-inch springform pan and place on a baking sheet. (You can securely wrap your pan with a double thickness of foil. I have a leak proof pan and skip this step.)
- In the bowl of a food processor, combine cookie crumbs, coconut flakes and nuts. Pulse until finely ground, about 1 minute. Drizzle in butter over crumbs and mix until moist and wet. Press the crust mixture into bottom and 1 ½ inch up the sides of pan. Bake until set and lightly browned, about 8-10 minutes. Let cool on wire rack.
- In the bowl of an electric mixer, beat the cream cheese and sugar on medium speed until fluffy, about 3 minutes. Add in eggs, one at a time and beat until well after each addition. Beat in the cream of coconut, rum, milk, zest and coconut extract. Mix until blended. Fold in crushed pineapple. Pour mixture into prepared crust.
- Bake cheesecake at 325 degrees F until edge is set and center still jiggles slightly, about 1 hour and 15 minutes. (Note: I did not use a water bath and my cheesecake baked just fine. If you would like to use a water bath, wrap your cheesecake pan with double foil and place pan in a large baking pan and add about 1 inch of hot water to larger pan). Turn off oven and open door. Let cheesecake remain in oven for at least 30 minutes to an hour.

- Preheat oven to 350 F degrees. Using pencil and ruler, draw a 10 1/2 X 4 inch rectangle on a piece of kitchen parchment. Spray kitchen parchment with vegetable oil spray on unmarked side and place pencil side down on baking sheet.
- In a bowl add the semolina flour, all-purpose flour salt and baking powder. Whisk to thoroughly combine.
- In a food processor mix eggs until lightened in color and almost double in volume, about 3 minutes. With processor running, slowly add sugar until combined, about 15 seconds. Add melted butter and vanilla extract and process until combined, about 10 seconds. Transfer egg mixture to medium bowl. Sprinkle half of the flour mixture over egg mixture and, using spatula, gently fold until just combined. Add remaining flour mixture then the pineapple, coconut and nuts. Gently fold until combined.
- Using floured hands, form the dough into a 10 1/2 X 4 inch rectangle using the penciled lines a s a guide. Spray the loaf lightly with oil spray. Using rubber spatula that is lightly coated with oil spray, smooth tops and sides of the rectangle. Using a sharp knife coated with oil spray, cut the loaf in half making it into two -- 2 X 10 1/2 inch loaves. Separate loaves leaving 2 inches between them. Here we put a 4 X 14 inch strip of oiled parchment in-between the loaves, tucking the oiled strip under the cut loaves and leaving the 2 inch gap between the loaves. Bake until loaves are golden and just beginning to crack on top, 25 to 30 minutes, rotating pan halfway through baking.
