VIRGIN (NON ALCOHOLIC) PINA COLADA
This is just a variation of some of the other pina colada recipes i have seen on here. It has mostly the same ingredients and all, and probably tastes the same, but I just made it to suit our taste. I am just posting it so that I can keep up with it, but everyone is welcome to try it and review it. I did however make it for my family's 4th of July party and everyone raved about it. Too bad we ran out of it. :D

- In a large bowl, combine first three ingredients until smooth. Fold in pineapple, coconut and nuts. Divide and pour mixture into prepared crusts. Refrigerate, covered, until firm, at least 4 hours. If desired, serve with additional whipped topping and cherries.

Steps:
- Wisk together milk, first 2 eggs, brown sugar and cocunut milk. Whip until smooth.
- Add other eggs and rum extract, whip until smooth again, stir in pineapple.
- Coat a 9 inch pie pan, with nonstick spray, place in baking pan, large enough to hold, pour custard into pie shell. Fill baking pan with water until it reaches halfway up the sides of the pie pan (water baking).
- Bake for 1 hour at 350 degrees.
- Sprinkle with coconut and refrigerate for 2 hours before serving.

- Bloom the gelatin in 2 tablespoons rum in a medium size bowl. Place the butter on top of the bloomed gelatin. Put a fine mesh sieve over the bowl and keep it near the stove.
- Thoroughly combine the eggs and sugar in a medium saucepan. Add the pineapple juice, lemon juice and salt. Heat the egg/juice mixture over medium low heat, stirring constantly. You must be sure to keep stirring across the entire bottom and corners of the pot so the custard does not have a chance to stick. The mixture will start out opaque with a fine white foam over the surface. As it heats up the curd will thicken, become more translucent and the foam will disappear. Cook until the curd coats the back of a wooden spoon and it JUST BEGINS to boil. Don't allow it to come to a full rolling boil.
- Immediately remove from the heat and pour through the sieve over the butter and gelatin. Stir until the butter and gelatin are melted and thoroughly incorporated. Cover the bowl with plastic wrap and refrigerate at least 4-6 hours.
