PIMENTO CHEESE-BACON BURGER

- 1. In a medium bowl, combine cheddar cheese, goat cheese, cream cheese, 1/4 cup mayonnaise, onion, 1/8 teaspoon salt, sugar, tabasco, and pimento peppers using a fork.
- 2. Heat olive oil in a medium skillet over medium high heat. Transfer onion to skillet and saute for 4 to 5 minutes until wilted and browning. Toss regularly while sauteing.
- 3. Set onions aside and cook bacon in same skillet until brown and crispy. Drain on paper towel and break each slice in half.
- 4. Preheat gas grill or grill pan to medium high heat.
- 5. Combine ground chuck, 1 teaspoon salt, and pepper in a medium bowl. Do not overwork the meat. Divide into 4 portions and flatten. Make an indention in the center of each patty before cooking.
- 6. Grill patties for 3 to 4 minutes on each side until internal temperature reaches 130 degrees for medium rare or 140 degrees for medium. Remove patties and cover with aluminum foil for 5 minutes. While burgers are resting, place buns on grill for 45 seconds to 1 minute on each side. Watch carefully so you don't burn buns.
- 7. To assemble burgers, spread mayonnaise and mustard on each bun. Place lettuce leaves on bottom of each bun and top with a tomato slice. Top tomatoes with sauteed onions and burger patties. Add pimento cheese on top of burgers and top with bacon halves. Place bun tops on burgers and serve immediately.

- 1. Combine Hellmann's® or Best Foods® Real Mayonnaise, salt, pepper and cayenne in large bowl with fork. Stir in cheese and roasted peppers. Cover and refrigerate at least 30 minutes.
- 2. Meanwhile, shape ground beef into 4 patties. Season, if desired, with salt and black pepper; set aside.

- Preheat grill to medium-high.
- Process the cream cheese, mayonnaise, Cheddar and seasonings for the pimento cheese.
- Add pimentos; pulse to combine.
- Shape ground round or chuck into 8 (4 oz) portions on wax paper or parchment paper.
- Press each portion into a 4" patty using a fork, then season with salt and pepper.
- Top 4 patties with a slice of onion.
- Cover with remaining patties, seal edges with a fork, and season again.
- Grill burgers on an oiled grate for 4 minutes; flip and cook 2 minutes more.
- Spoon 1/4 cup pimento cheese on each burger; grill 2 minutes longer.
- Serve burgers on rolls that have been brushed with mayonnaise or Miracle Whip with bacon, lettuce and tomato.
PIMIENTO CHEESE-BACON BURGER
Steps:
- Whisk the mayonnaise, cayenne, 1/2 teaspoon salt and 1/2 teaspoon black pepper in a large bowl. Add the red peppers, white Cheddar and yellow Cheddar and gently fold until combined. Cover the bowl and refrigerate for at least 30 minutes before using.
- Meanwhile, preheat the grill to high for direct grilling. Divide the ground chuck into four equal portions, 6 ounces each. Form each portion into a 3/4-inch burger and make a deep depression in the center with your thumb. Brush both sides of the burgers with the oil and sprinkle liberally with salt and pepper. Grill the burgers until golden brown and slightly charred on both sides and cooked to desired doneness, about 4 minutes each side for medium doneness. During the last minute of cooking, place a dollop of the cheese mixture on top of each burger and close the grill lid. Cook until the cheese has just melted, about 1 minute.
- Place the burgers on the buns and top with the bacon, onions, tomatoes, pickles and lettuce if desired.
