BEEF AND BEAN CHILI WITH TOPPINGS BAR



Beef and Bean Chili with Toppings Bar image

Number Of Ingredients 19

2 tablespoons vegetable oil
2 1/2 pounds ground beef (85 percent lean)
Kosher salt
1 large onion, chopped
3 tablespoons chili powder
1 1/2 teaspoons chipotle powder
2 tablespoons tomato paste
One 28-ounce can diced tomatoes
1 cup brewed coffee
One 15-ounce can kidney beans, rinsed and drained
One 15-ounce can pinto beans, rinsed and drained
Finely chopped cooked bacon
Shredded Cheddar
Crumbled cornbread
Corn chips
French fried onions
Chopped red onion
Finely chopped tomatoes
Sour cream

Steps:

  • For the chili: Heat the oil in a large Dutch oven over medium-high heat.
  • Add the ground beef and 1 1/2 teaspoons salt and cook, stirring and breaking up any clumps with a wooden spoon, until brown, about 10 minutes. Transfer to a bowl with a slotted spoon.
  • Reduce the heat slightly, add the onions to the pot, and cook, stirring occasionally, until softened, about 5 minutes. Add the chili powder and chipotle powder and cook for 30 seconds, stirring. Add the tomato paste; cook, stirring, about 30 seconds more.
  • Return the browned meat to the pot and add the tomatoes, coffee and 2 cups water. Bring to a simmer, then reduce the heat to low and cook at a low simmer, partially covered, for 1 hour. Skim off excess fat that rises to the surface during cooking.
  • After the hour, add the kidney beans and pinto beans. Continue cooking, partially covered, until the flavors have blended, another 30 minutes.
  • For the toppings bar: Serve the chili in mugs. Line up all of the toppings in small bowls and dishes for guests to add as they like.

Pimiento cheese has long been a favorite in our family, so these bite-sized appetizers are a treat! I add Worcestershire sauce and hot sauce to give them a little kick. Caramelized onions create another layer of flavor. You can make the cheese and onions three to five days in advance; they store well. 48 slices French bread baguette (1/4 inch thick)
CARAMELIZED ONIONS:
2 tablespoons canola oil
2 large onions, chopped
1/2 cup beef broth
2 tablespoons balsamic vinegar
1-1/2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
Dash dried rosemary, crushed
Dash dried thyme
PIMIENTO CHEESE:
2-1/2 cups shredded smoked Gouda cheese
2-1/2 cups shredded sharp cheddar cheese
1/2 cup mayonnaise
2 jars (4 ounces each) diced pimientos, drained
1 teaspoon Worcestershire sauce
1 teaspoon hot pepper sauce
1/2 teaspoon garlic powder
1/2 teaspoon pepper
9 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Place bread on baking sheets. Bake 4-6 minutes or until light brown., In a large skillet, heat oil over medium heat. Add onions; cook and stir 4-6 minutes or until softened. Stir in broth, vinegar, sugar and seasonings. Reduce heat to medium-low; cook 12-15 minutes or until liquid is evaporated, stirring occasionally., In a large bowl, toss cheeses; beat in mayonnaise, pimientos, Worcestershire sauce, pepper sauce and seasonings. Spread 1 tablespoon mixture over each baguette slice; top with 2 teaspoons onion mixture. Sprinkle with bacon. Bake 3-4 minutes or until cheese is melted.

Number Of Ingredients 10

20 ounces goat cheese, at room temperature
1/2 cup heavy cream
1/2 cup white wine, such as Pinot Grigio
2 teaspoons fresh thyme leaves
Freshly cracked black pepper
2 tablespoons chopped fresh chives
4 teaspoons honey
2 Gala apples, cut into wedges
1/2 pound red seedless grapes
1/2 loaf sourdough bread, cut into 1-inch chunks

Steps:

  • Place the goat cheese in a small saucepan over low heat. Pour in the heavy cream and white wine, then add the thyme leaves and some black pepper. Cook, stirring occasionally, until the cheese is melted and the wine has cooked off, 8 to 10 minutes. The fondue will be thick and creamy. Remove from the heat and stir in the chives.
  • Drizzle the honey over the fondue and serve warm with apples, grapes and sourdough bread for dipping.

1/2 large red onion, finely chopped
3 cloves garlic, finely chopped
1 1/2 teaspoons kosher salt
1 teaspoon mustard powder
1/4 teaspoon cayenne pepper
1/2 teaspoon Louisiana hot sauce
8 ounces cream cheese, cubed
1 cup sour cream
3 cups Pimento Cheese Spread, recipe follows
2 tablespoons red wine vinegar
1 jar roasted bell peppers, red and yellow
1 jar brined cherry peppers or Sweety Pepps
1 can sliced green olives
5 green onions, chopped
1 cup roasted, salted pumpkin seeds
Two 7-ounce jars sliced pimentos, drained
Three 10-ounce bricks sharp Cheddar, finely grated
1 cup mayonnaise

Steps:

  • Melt the butter in a large saute pan over medium-high heat. Add the red onions, garlic and salt and cook until translucent. Add the mustard powder, cayenne and hot sauce and mix well.
  • Reduce the heat to medium and add the cream cheese. Cook, mixing occasionally, until melted.
  • Add the sour cream, Pimento Cheese Spread and red wine vinegar and mix until everything is heated through.
  • Transfer to a warmer for serving.
  • Arrange the toppings in small bowls so you can top you dip as you like.
  • Place the drained pimientos in a blender or food processor and puree until smooth. Using an electric mixer, combine the pimentos and cheese, beating until smooth. Beat in the mayonnaise.

1 cup mayonnaise

  • Place the pimentos in a blender or food processor and puree until smooth. Transfer to a mixing bowl along with the Cheddar. Beat with an electric mixer until smooth. Beat in the mayonnaise.
