With a pleasant pumpkin flavor, caramel and almonds, this rich and creamy pudding from our Test Kitchen tastes decadent, but it's surprisingly light.

3/4 cup cold fat-free milk
1/3 cup canned pumpkin
2 tablespoons sugar-free instant vanilla pudding mix
1/2 cup plus 1 tablespoon fat-free whipped topping, divided
1-1/2 teaspoons fat-free caramel ice cream topping
1 teaspoon sliced almonds, toasted

Steps:

  • In a large bowl, combine milk and pumpkin. Add pudding mix; whisk for 2 minutes or until slightly thickened. Let stand for 2 minutes or until soft-set. Fold in 1/2 cup whipped topping. , Spoon into two dessert dishes. Garnish with remaining whipped topping; drizzle with caramel topping and sprinkle with almonds.

2 ounces fresh orange juice

Steps:

  • Shake ingredients with ice and serve over ice in a stemmed goblet. Garnish with a cinnamon stick and flame the orange zest.

Pilgrim Punch
Makes one punch bowl
Ingredients
750 ml Plymouth Gin
1½ c. white port
1½ c. chamomile tea
1½ c. white cranberry juice
1½ c. fresh lemon juice
1 ½ c. rich simple syrup*
1½ oz. whiskey barrel-aged bitters
Frozen cranberries
Make an ice block by freezing a plastic container full of water.
Combine all ingredients in a large punch bowl. Add the block of ice so that the punch dilutes slowly and evenly.
Float handfuls of frozen cranberries in the punch (as pictured).
*To make a rich simple syrup, combine 4 cups of organic cane sugar and 2 cups of water. Stir until the sugar evaporates over low heat, and then bring to a boil for a few minutes. Let cool and thicken.

Yummy sandwich. I see this sandwich in a lot of restaurants in my hometown in Alaska, but I rarely see it in the lower 48. Sandwiches can be cut into 4 squares to serve at parties or brunches.

8 slices French bread or 8 slices sourdough bread (If using french bread, cut off majority of crust so that it can be fried on both sides.)
3/4 cup thousand island dressing
1/2 lb swiss cheese
1 lb sliced turkey breast
mayonnaise

Steps:

  • Spread outside of bread lightly with mayonnaise.
  • Spread inside of bread with thousand island dressing.
  • Equally divide turkey between 4 sandwiches.
  • Equally divide cheese between 4 sandwiches.
  • Put in frying pan, as you would fry a grilled cheese sandwich over medium heat.
  • When toasted and cheese is melted, sandwich is ready to enjoy!
