4 pigs feet split in half lengthwise
2 medium onions, chopped
2 stalks celery, chopped
1 garlic clove, chopped
1 teaspoon salt
1 cup white vinegar
1 teaspoon black pepper
3 teaspoons crushed red pepper
barbecue sauce, optional to pour on after cooking
water

Steps:

  • Begin by giving the pigs feet a good washing. For the purpose of presentation, remove any unsightly hair that you observe. Yes, pigs grow hair on the toes and feet just like humans. A disposable razor will remove the hair
  • Place all the ingredients in a large boiling pot and cover with water. Bring water to a boil over medium-high heat and then reduce heat to a simmer.
  • Cover the pot with a lid and allow pigs feet to cook until tender, about 3 hours. While your meat is cooking stir constantly and skim away any foam that develops.

1 -2 lb pig's foot
1 lb pigs tails (optional)
1/2 onion
2 stalks celery
2 stalks green onions
1 bell pepper
2 cups dry pinto beans or 2 cups kidney beans, rinsed
2 chicken bouillon cubes
2 beef bouillon cubes
2 teaspoons relish (optional)
1 teaspoon minced garlic
salt
pepper
seasoning

Steps:

  • 1. Rinse pigs feet.use knife to remove hairs from pig feet (as if scaling a fish).
  • 2. Place in pot, cover with water, boil for 30-45 minutes to remove froth.
  • 3. Meanwhile -- finely chop (or use food processor) the celery, onion, green onion, bell pepper, garlic -- may also add relish, carrots, or any other vegetables -- Set Aside.
  • 4. Pour out water, rinse pigs feet, and use knife to remove any remaining hairs.
  • 5. Rinse out pot, put pigs feet back in pot, cover with water and boil for 30 minutes. (This can be skipped if desired, but wont be as tender).
  • 6. Pour out water, rinse pigs feet and rinse pot.
  • 7. Place back in pot with chopped vegetables, beans, bouillons -- Cover with water and season to taste with salt, pepper, and seasonings.
  • *** NOW IS THE TIME TO ADD PIGS TAILS IF DESIRED ***.
  • 9. Bring to a boil on medium heat, cover and occassionaly stir for 2 hours -- Bring to low heat for last 1 hour.
  • ** YOU WILL NEED TO ADD WATER TO STEW AS IT EVAPORATES **.
  • 11. Serve over a bed of white rice.

This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

1 ½ cups water
⅓ cup soy sauce
1 onion, diced

½ cup Lard or cooking oil
2 pieces Onion (diced)
1 piece Italian green pepper (diced (can be hot))
4 Pig's feet (halved)
4 teaspoons Paprika
1 tablespoon Parsley or Celery leaves (diced)
3 cloves Garlic (whole or minced)
1 Tomato (200g)
2 cup Water
Optional
½ teaspoon Fennel

Steps:

  • Heat lard or oil in a pot. Add the diced onion and saute it until it gets a translucent, glassy look for about 3 to 5 minutes.
  • Add the pig's feet and mix it well then cook it for 5 to 10 minutes until the skin gets some golden brown color.
  • Add the paprika, parsley or celery, garlic, tomato and Italian pepper.
  • Add water to submerge all the feet to around ¾. Place the lid on and simmer it on low heat for about 40 minutes or until the meat peals off the bones easily. Mind to have enough water during the cooking period or else it may burn down.
  • Remove the lid half an hour before finishing the cooking to reduce the excess water until the feet are only half or even less submerged.

2 lbs pork hocks (pig's feet- about 10-12)
1 tsp Kosher salt
1/4 tsp pepper
1/2 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
2 tbsp vegetable oil
2 1/4 cups lukewarm water
1 tbsp vegetable oil
1 cup grilled onions (1 cup of minced onions )
8 tbs browned flour (a sand colour- if you leave it longer to cook, it will give you a darker gravy)
1 cup lukewarm water

Steps:

  • Take the pork's feet and cut the skin from top to bottom with a kitchen scissor. Remove the meat from the feet with a knife and put in a medium bowl.
  • Add salt, cinnamon, ground cloves and nutmeg, and mix.
  • In a large saucepan over medium heat add oil. When oil is hot, add pork feet mixture, and cook until they meat is a dark brown colour.
  • In a skillet at medium heat, add 1 tbs of vegetable oil. When oil is hot, add 1 cup of onions and cook until they are grilled- slightly brown.
  • When the meat is nicely grilled, add the lukewarm water and roasted onions.
  • Cover and let cook at low for about 2 hours.
  • In a jar (Mason), add 1 cup of water and the browned flour. Close lid and shake until it's mixed.
  • Pour in the stew, stir regularly until the gravy has thicken (15 -30 minutes). If you find the gravy is not thick enough, add 4 more tablespoon of brown flour with 1/2 cup of warm water. Repeat as necessary.

1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 cup water
1/8 teaspoon nutmeg
2 tablespoons fat (or Crisco for health nuts) or 2 tablespoons lard (or Crisco for health nuts)
4 -6 cups warm water
1 cup chopped onion, sauteed
4 tablespoons browned flour

Steps:

  • Mix together salt, cinnamon, cloves and nutmeg. Coat pig's feet with mixture.
  • Melt fat in Dutch oven. Brown meat until dark brown (this is the secret to a successful stew.) When meat is well grilled, add warm water and onions. Cover and simmer until meat is tender, about 2 hours. Remove meat.
  • Mix together grilled flour and 1/2 cup water.
  • Pour into broth, stir until sauce thickens.
