CUY AL HORNO RECIPE
The Peruvian guinea pig dish is mostly served on special occasions rather than as a meal eaten regularly but is readily available for adventurous tourists to try in restaurants or at different food stalls.

Steps:
- Crush or finely chop the garlic and combine with salt, cumin and pepper to create a seasoning.
- Marinate the guinea pig in the seasoning and leave to rest for 2-4 hours.
- Prepare a hot grill, put a bamboo skewer stick through the body of each guinea pig and place on to the grill, turning occasionally.
- Meanwhile, boil the potatoes in a pot of boiling water.
- Finely chop the peppers, mix with chili panca, minced garlic and the ground peanuts.
- Spoon the mixture into a frying pan with a little oil and cook for 5 minutes.
- Once the potatoes are boiled, cut into slices and place on the plate with the cooked guinea pig, then drizzle over the sauce.

Kids love this one. My mom made it for me as did her mom. If making for a small child, cut the hot dogs into fourths length wise. The cheese is always optional.

- Preheat oven to 350 degrees F (175 degrees C).
- Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.
- Bake in preheated oven until biscuits are brown, about 10 to 15 minutes.

- Soak the pig head for 1 night to get the blood out. Then salt very well and place in a large clay pot with the cleaned garlic cloves, used to spike it.
- Add the bay leaves, black pepper and pour the wine over it. Bake the pig head at 266°F (130 °C) for 8-9 hours or until the meat starts to come off the skull on its own. You can turn it over during baking.

- Then add the meat and in parallel, put the cleaned and sliced potatoes to bake with spices of your choice. Toward the end, sprinkle the meat and onions with paprika and more salt if needed, stir and remove it from the heat after 3 minutes.
