1 pkg yellow cake mix

PIG PICKIN' CAKE

Pig Pickin' Cake image

The perfect finale to a barbecue feast, this light and fresh Pig Pickin' Cake will be a new summer staple. Layers of yellow cake are stacked with a fruity mixture of whipped topping, pineapple, vanilla instant pudding, and pecans to form a cake that's as unique as its name. While nobody is quite sure where this cake earned its name, the Pig Pickin' Cake pays homage to the traditional Southern Pig Pickin', a hog roast that's essentially an early version of the barbecue. This light, fruity cake undoubtedly pairs well with a heavy, meaty meal. This cake uses ingredients you probably already have in your pantry, from boxed cake mix to canned pineapple, to create a dessert that's utterly unique. It's easy to make and an impressive offering to bring to a summer celebration. Leave the sides unfrosted to reveal all the creamy, fluffy goodness of the cake's thick layers. The fuss-free presentation earns this cake a spot at all of our casual cookouts and potluck parties this season.

PIG PICKIN' CAKE

Pig Pickin' Cake image

Traditional dessert served at a Southeastern North Carolina Pig Pickin...right up there with banana pudding!

Provided by Leta8076

Categories     Dessert

Time 1h5m

Yield 1 9X13 cake, 12 serving(s)

Number Of Ingredients 10

1 (18 ounce) box yellow cake mix (or your favorite recipe)
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (16 ounce) can crushed pineapple, drained, liquid reserved
1 (3 1/2 ounce) box vanilla pudding mix (or your favorite pudding recipe)
2 cups milk
1 banana (optional)
12 ounces Cool Whip or 12 ounces fresh sweetened whipped cream
1/2 cup toasted coconut

Steps:

  • Prepare the yellow cake mix as directed for a 9 X 13 pan.
  • (I sometimes use the liquid reserved from the crushed pineapple as part of the liquid in the cake).
  • Allow the cake to cool completely in the pan.
  • Spread the crushed pineapple evenly over the cake (use good judgement, you don't want to oversoak the cake).
  • Prepare the pudding mix as directed with the 2 cups of milk, or prepare your own recipe for vanilla pudding.
  • If using a cooked pudding, prepare it ahead and allow it to cool completely before adding to the cake.
  • Spread the pudding evenly over the cake and pineapple.
  • If using, slice the banana and arrange slices evenly over the pudding.
  • Spread the Cool Whip or whipped cream evenly over the top of the cake to frost.
  • Sprinkle with toasted coconut to taste.
  • Keep in the refrigerator.
  • The longer it sets, the better it tastes.

Nonstick baking spray, for the pan
One 18.25-ounce box yellow cake mix
8 tablespoons (1 stick) salted butter, softened
1 teaspoon vanilla extract
4 large eggs
One 23.5-ounce jar mandarin oranges, drained and 1/2 cup juice reserved
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 cups chilled heavy cream
2 teaspoons vanilla extract
One 20-ounce can crushed pineapple, drained

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with baking spray.
  • Combine the cake mix, butter, vanilla, eggs and 1/2 cup reserved mandarin juice in the bowl of an electric mixer and beat for 4 minutes on medium-high speed. Add 1 1/2 cups of the drained orange slices and beat again until the oranges have broken into small pieces, about 1 minute. Transfer the batter to the prepared cake pan and bake until golden brown and set, 25 to 27 minutes. Allow to cool completely, then turn out onto a large platter.

Add the cream cheese mixture, distributing it evenly around the bowl. Whip until stiff peaks form, 3 to 4 minutes. Fold in the pineapple.
  • Spread the frosting evenly over the cooled cake and refrigerate for at least 2 hours. Garnish with the remaining mandarin orange slices.
