Steps:
- In a bowl, mix 1 1/2 cups flour, 3/4 cup light-brown sugar, 1/3 cup granulated sugar, and 1/4 teaspoon each salt and cinnamon.
- Cut 1 1/2 sticks chilled unsalted butter into pieces. With your hands, work in butter pieces, until large clumps form. Divide mixture in half; freeze in plastic storage bags.

PIE TOPPING (FOR STORE BOUGHT PIES)
This is a great topping for store-bought pies of any kind to bring it over the top. Try it on your homemade (pre cooked) pies too. I've never used it on a crustless pie but I suspect it would work just as well.

Steps:
- Mix together the dry ingredients making sure it's all combined.
- Add the butter until it becomes crumbly.
- Place it on top of the pie and, with the tines of a fork, spread it over the entire top of the pie.
- Bake at 350 degrees for 20-25 minutes (keeping an eye on it so it doesn't burn).
SUGAR CREAM PIE RECIPE
Steps:
- Gather the ingredients. Heat the oven to 425 F.
- Roll the pie pastry out and fit into a 9-inch pie plate; crimp as desired . Line the pie shell with foil and add pie weights, dry beans, or rice. Bake the pie crust in the preheated oven for 8 minutes. Remove the weights and foil and return the crust to the oven. Bake for about 6 minutes longer, or until the pie is lightly browned around the edge. Remove the pie shell to a rack and set aside. Reduce the oven temperature to 325 F.
- Combine the sugar, cornstarch, and salt in a medium saucepan. Whisk to blend and then whisk in the cream and milk until smooth. Cook over medium heat, stirring constantly until it begins to boil.
- Add the butter and vanilla and continue to cook, stirring constantly until the filling is thickened.
- Pour the filling mixture into the pie shell and sprinkle with ground cinnamon or nutmeg. Bake at 325 F for 35 to 45 minutes or until firm and lightly browned.
- Remove the pie to a rack to cool completely.
- Chill the pie thoroughly before slicing. Enjoy!

- Swap the milk variety. I have to start with my favorite pumpkin pie hack – the one that really started it all. Instead of using a can of evaporated or sweetened condensed milk, use a different variety.
- Cook with a fresh pumpkin. Fresh pumpkin has a lot more flavor than the canned variety. If you have the time, bake a pie pumpkin and puree your own filling.
- Add chocolate. Pumpkin and chocolate are a deliciously indulgent flavor combo. You can add it to your pie by using a chocolate cookie crust, stirring chocolate chips into the filling, or sprinkling grated chocolate on top.
- Change up your pie spice blend. Traditional pumpkin pie spice is cinnamon, ginger, and nutmeg. You can also make pie with just cinnamon. Or, change it up and use a completely different spice blend, such as chai or curry.
