PICO DE GALLO (AUTHENTIC)

This is an authentic recipe for Pico de Gallo from "Truly Mexican", a fabulous cookbook filled with authentic Mexican recipes. Use this recipe as a base and adjust to your taste - more or less spiciness, and even add olive oil if you want! This makes enough for 8 tacos (as a topping).

3 large tomatoes
1/3 cup cilantro/coriander leaves (, roughly chopped)
1/4 cup finely chopped white onion ((Note 1))
1 1/2 tbsp finely chopped jalapeño or serrano chilli ((adjust to taste))
1 - 2 tbsp lime juice ((adjust to taste))
1/2 tsp salt ((table salt) or 3/4 tsp kosher / sea salt flakes)

Steps:

  • Cut the tomatoes in half and use a teaspoon to scoop out the seeds and watery centre. Cut into 1cm / 1/3" dice.
  • Combine with remaining ingredients. Set aside for 5 to 20 minutes. Serve as a topping or side for things like tacos, burritos, enchiladas, quesadillas and any Mexican dish!
  • This can be made ahead up to 1 day. Leave out the lime juice and salt (otherwise the tomato juices will leech out), cover and refrigerate. Drain excess liquid, add lime juice and salt just before serving.

You can add a squeeze of lime juice to pico de gallo, but I prefer this basic recipe. Once you serve this with your Mexican dish such as tacos, you will want it with all your Mexican dishes!

1 medium tomato, diced
1 onion, finely chopped
½ fresh jalapeno pepper, seeded and chopped

Steps:

  • In a medium bowl, combine tomato, onion, jalapeno pepper (to taste,) cilantro and green onion. Season with garlic powder, salt and pepper. Stir until evenly distributed. Refrigerate for 30 minutes.

  • In a medium bowl, combine 4 diced plum tomatoes, 2 tablespoons chopped cilantro, 1/2 minced red onion, 1 minced garlic clove, 1 minced jalapeño (seeded), the juice of 1 lime, 1 teaspoon fresh celery juice (optional), 1/2 teaspoon kosher salt and a few grinds of pepper; mix well. Cover and refrigerate to allow the flavors to meld, 1 hour or up to 3 days. Drain any excess liquid before serving.

½ red onion, minced

½ lime, juiced
1 clove garlic, minced

This is an easy, healthy salad that hinges on the young paddles of the prickly pear cactus. If you don't gather them yourself, you can buy them already de-spined, and sometimes already diced, in Latin Markets. One note on this salad: Eat it straight away. It will get a bit slimy if you leave it for a day or two.

4 nopales paddles, despined
Fine grain salt
4 plum tomatoes, seeded and diced
1/2 white onion, chopped
1/4 cup lime juice
2 serrano or jalapeno chiles, seeded and minced
1 teaspoon Mexican oregano ((regular oregano is fine))
1 tablespoon olive oil
1/4 cup chopped cilantro
1/2 cup crumbled cotija or feta cheese
1 avocado, diced ((optional))

Steps:

  • Dice the nopales and toss with salt. You want all the cut sides of the nopales to have salt on them. Put them in a colander in the sink and let this drain for 1 hour. When the time has elapsed, rinse the nopales under cold water until they are no longer slimy, which should take maybe 3 to 5 minutes. Pat dry with a kitchen towel put into a large bowl.
  • While the nopales are sitting in the colander, mix the diced onion with a little salt and the lime juice and let them pickle a bit. This takes the harsh edge off the raw onion. If you want, you can add the minced chiles to the lime juice, too.
  • When you're ready, mix all the ingredients together and serve.

1 (24 ounce) jar cactus pieces
2 large tomatoes
1 medium yellow onion
2 jalapenos (depends on your taste)
2 tablespoons fresh cilantro
1/4 lb queso fresco (mexican cheese)
1/4 cup lemon juice
1/4 teaspoon salt
1 teaspoon fresh garlic

Steps:

  • Rinse cactus well under cold water. Cut the already sliced cactus into small pieces. The cactus also has a serrano in the jar, mince that also.
  • Dice tomatoes, onion, jalapenos (I leave the seeds in, but you can take seeds out) and cilantro. In a large bowl mix all ingredients together, add minced garlic and salt to taste. Crumble Queso Fresco into the mix and add lemon juice. You may want to add a little lemon juice at a time and mix and taste until it is to your liking.

  • Be super careful when cleaning nopales. You do not want to become a pin cushion! With a knife, cut along the edge and take off a thin slice of the edge of the paddle. Be careful not to touch the thorns when you grab with your hand. With a peeler and tongs, peel the thorns off while holding on to the cactus with the tongs. When you peel, it is okay if you include peeling some of the skin if necessary. Wash the nopales when you are done and slice them each.
  • Bring a medium pot to boil. Add the cactus slices into the pot and boil for 8-10 minutes until tender. The cactus will exude a sticky substance so when you are done. Place a strainer on top of a bowl and strain the nopales. Keep the nopales in the strainer and place a towel over the strainer and bowl for 10 minutes. This step helps get rid of the sticky substance!
  • Wash the nopales and place in a large bowl. Add the tomatoes, onion, cilantro, lime, olive oil and salt and pepper into the large bowl and stir. This is your garnish and also serves as a delicious salad!
