PICNIC CAKE (WITH DATES)



Picnic Cake (With Dates) image

This was given to me years ago by an old lady of my acquaintance. It is easy to make and delicious.

Number Of Ingredients 12

1 cup dates, cut up
1 teaspoon baking soda
1 1/2 cups hot water
1/2 cup margarine
1 1/2 cups sugar
2 eggs
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup sugar
1/2 cup nuts, chopped

Steps:

  • Combine the first 3 ingredients; let rest until cool.
  • Cream margarine and sugar, adding eggs one at a time, beating well after each addition.
  • Sift together flour, baking powder and salt. Add to egg mixture. Fold in cooled dates.
  • Pour in a 9" x 13" baking pan. Mix TOPPING ingredients and sprinkle over batter.
  • Bake at 350 F for 35-40 minutes.

1 cup chopped dates
1 1/2 cups boiling water
1 tsp. baking soda
3/4 cup shortening
1 cup sugar
1 tsp. vanilla
1 tsp. cinnamon
2 eggs
1 3/4 cup flour
1/2 tsp. salt
1 cup brown sugar
1 cup chocolate chips ((I use milk))

Steps:

  • Combine dates, boiling water and baking soda. Stir well and set aside to cool.
  • In a mixing bowl, cream shortening and sugar. Add eggs and vanilla. Mix well. Stir in cooled date mixture. Add cinnamon, flour and salt and mix until well combined.
  • Pour into a greased 9x 13 pan.
  • Sprinkle brown sugar and chocolate chips evenly over top. Bake at 350 degrees for 35-40 minutes.

3/4 cup shortening (not margarine)
1/2 tea salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
2 cups flour
1 cup brown sugar
1/2 cup chopped nuts
1 cup chocolate chips

Steps:

  • Soak the chopped dates in the hot water until cool.
  • Cream together the eggs, granulated sugar and shortening.
  • Add the salt, soda, cinnamon and vanilla.
  • Add the flour, dates and water.
  • Pour into a greased and slightly floured 9X13 pan.
  • Sprinkle the toppings onto the batter.
  • Bake at 350 degrees for 40 minutes.

1 cup chopped dates
1-1/2 teaspoons baking soda, divided
1-1/2 cups boiling water
3/4 cup shortening
1-1/2 cups sugar, divided
1 large egg
2 cups all-purpose flour
1/2 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped pecans

Steps:

  • Place dates and 1 teaspoon baking soda in a large bowl. Stir in boiling water; cool completely. , In another large bowl, cream shortening and 1 cup sugar. Beat in egg. Combine the flour, salt and remaining baking soda; add to creamed mixture alternately with date mixture., Pour into a greased 13x9-in. baking pan. Sprinkle with remaining sugar; top with chocolate chips and nuts. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

24 large marshmallows
1 ½ cups all-purpose flour
¾ teaspoon salt
½ teaspoon baking soda
1 teaspoon baking powder
½ cup margarine, softened
1 ½ cups white sugar
2 eggs
1 teaspoon vanilla extract
½ cup buttermilk
1 cup chopped nuts
1 cup mashed very ripe banana

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 pan. Place marshmallows in a single, even layer in the bottom of the pan.
  • Sift together flour, salt, baking soda, and baking powder. Set aside.
  • In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. By hand, stir in the flour mixture alternately with the buttermilk, mixing just until incorporated. Fold in nuts and bananas.
  • Pour batter over marshmallows, making sure that marshmallows are covered, and that the batter reaches all sides of the pan.
  • Bake on center rack of oven for 45 minutes. Marshmallows will rise to top and make a topping. The cake may look slightly underbaked because of the marshmallow topping. Allow the cake to cool before serving.

1 cup white sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground cloves
2 eggs
1 cup vegetable oil
2 cups applesauce
½ cup chopped walnuts
½ cup raisins
½ cup brown sugar
1 cup chopped walnuts
1 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Whisk flour, white sugar, cinnamon, baking powder, baking soda, salt, and ground cloves together in a bowl. Beat eggs and vegetable oil in a separate large bowl until creamy; mix applesauce into egg mixture. Add dry ingredients to wet ingredients; stir until batter is smooth. Fold 1/2 cup walnuts and raisins into batter. Pour into prepared baking pan.

1 3/4 cups Gold Medal™ all-purpose flour
1/2 cup granulated sugar

2 eggs

Steps:

  • In large bowl, pour boiling water on dates. Stir in 1 teaspoon baking soda. Cool about 15 minutes or until lukewarm.
  • In small bowl, mix all topping ingredients; set aside.
  • Heat oven to 350°F. Stir all cake ingredients into date mixture. Pour into ungreased 9-inch square pan. Sprinkle with topping.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool completely, about 2 hours.
