HOMEMADE PICKLES



Homemade Pickles image

Number Of Ingredients 7

1 1/2 cups rice wine vinegar
1/2 cup honey
1 tablespoon crushed red pepper flakes
1 tablespoon mustard seeds
1 tablespoon minced fresh dill
1 English cucumber, thinly sliced into rounds
1/2 small red onion, thinly sliced

Steps:

  • To a small saucepan, add the rice wine vinegar, honey, crushed red pepper flakes, mustard seeds, dill and 1/2 cup of water. Bring to a boil, then remove from the heat.
  • Toss together the cucumber and red onion slices and transfer them to a wide-mouth quart-size mason jar. Carefully pour over the warm vinegar mixture. Cover and refrigerate for at least 12 hours and up to 7 days.

QUICK PICKLES

1 1/2 cups cider vinegar
1/2 cup brown sugar
1 tablespoon crushed red pepper flakes
1 tablespoon celery seeds
1 tablespoon coriander seeds
1 tablespoon mustard seeds
1 tablespoon minced fresh dill
One 12-ounce cucumber, sliced into thin discs
1 jalapeño, seeded and sliced thinly, optional
1/2 small onion, thinly sliced

Steps:

  • Combine the vinegar, sugar, crushed red pepper flakes, seeds and dill with 1/2 cup water in a small saucepan. Bring to a boil, then remove from the heat.
  • Toss together the cucumber, jalapeño if using and onion, then transfer to a wide-mouth quart size Mason jar. Carefully pour over the warm vinegar mixture.
  • Cover and refrigerate for at least 12 hours or up to 7 days.

¼ cup salt
2 ½ pounds young yellow squash and zucchini, sliced into rounds
1 green bell pepper, seeded and sliced into strips
2 small onions, thinly sliced
2 ¼ cups white sugar
2 cups distilled white vinegar
2 teaspoons mustard seed
1 teaspoon ground turmeric
1 teaspoon celery seed

Steps:

  • In a large non-aluminum pot, combine the squash, bell pepper, and onions. Cover with salt, and let stand for 2 hours to release the liquids. Stir occasionally.
  • Just before the 2 hours are up, combine the sugar, vinegar, mustard seed, turmeric and celery seed in a saucepan. Bring to a boil. Drain the salty liquid from the vegetables. Pour the spice brine over the vegetables, and let stand for 2 more hours.
  • Bring to a boil once again, and simmer for about 5 minutes. Ladle into 1 pint sterile jars, filling with the liquid to within 1/4 inch of the top. Wipe rims with a clean towel, and run a thin spatula around the inside of the jar to remove air bubbles. Seal with lids and rings. Process for 10 minutes in a simmering water bath to seal completely.

PICKLED BUTTERNUT SQUASH WITH SAGE AND CARDAMOM



Pickled Butternut Squash with Sage and Cardamom image

It's somewhat unusual to pickle hard squashes like butternut or acorn, but it is actually a very nice way to use them. The pickle is firm and crunchy, and the sage and cardamom make a wonderful duo, aromatic and autumnal. You can buy cardamom in pod or seed form. Either will do, but seeds still in the pods tend to retain more of their volatile oils. Each pod contains about 15 or 20 seeds, which you can extract just by crushing the pod in your finger and picking out the seeds. Serve these with braised meats, stews or chopped up and mixed with couscous as a side dish.

3 pound butternut squash, other winter squash, or pumpkin, peeled, seeded and cut into 3/4-inch cubes (about 5 cups)
1 1/2 tablespoons kosher or other coarse salt
8 whole sage leaves
1 teaspoon cardamom seeds (without pods) lightly crushed
2/3 cup brown sugar
1 2/3 cups cider vinegar
3/4 cup apple juice

Steps:

  • In a non-reactive bowl, combine the squash and salt, toss to coat, and allow to stand at room temperature for about 4 hours. Drain, rinse well, and squeeze out extra moisture by the handfuls.
  • In a medium non-reactive pot, combine all remaining ingredients and bring to a boil over medium-high heat, stirring once or twice to dissolve the brown sugar. Add the squash, bring back just to a simmer, then remove from the heat and allow to cool to room temperature, uncovered.
  • When the mixture has cooled to room temperature, cover and refrigerate.
  • The squash will be tasty in about 2 hours, but will improve in flavor if allowed to sit overnight. This pickle will keep, covered and refrigerated, for about 2 months.

SUMMER SQUASH REFRIGERATOR PICKLES

With its spongy texture, summer squash will soak up the spicy flavors in this mix. Experiment with other spices if you wish. I like to use a mix of yellow squash and zucchini. Add the pickled squash to salads, use it as a relish or as a condiment with grains, meat or fish.

Number Of Ingredients 11

1 cup apple cider vinegar
1 cup water
2 tablespoons raw brown (turbinado) sugar
1 teaspoon kosher salt
2 large garlic cloves, cut in half lengthwise
1 teaspoon black peppercorns
2 teaspoons coriander seeds
2 teaspoons mustard seeds
2 dried red peppers
Several sprigs fresh dill (optional)
1 pound mixed zucchini and yellow squash, sliced thin

Steps:

  • In a small saucepan combine cider vinegar, water, brown sugar, salt and garlic cloves. Bring to a boil, reduce heat and simmer 2 minutes.
  • Meanwhile, divide spices and optional dill sprigs between 2 pint jars or use 1 quart jar. Pack sliced zucchini into the jars, leaving 1/2 inch head space below the rim of the jar.
  • Use hot, sterilized jars. If using pint jars, divide garlic that is in the vinegar mixture between the 2 jars. Pour in the hot vinegar mixture, leaving 1/2 inch below the rim of the jar. Push the squash down into the liquid to cover completely. Seal the jars and leave to cool, then refrigerate for up to 2 months. For best results, don't open for 2 days.

3 small yellow summer squash, thinly sliced
1 large sweet red pepper, cut into 1/4-inch strips
1 medium onion, chopped
1 tablespoon salt
1 cup sugar
3/4 cup white vinegar
3/4 teaspoon mustard seed
3/4 teaspoon celery seed
1/4 teaspoon ground mustard

Steps:

  • Place squash, pepper and onion in a colander over a plate; sprinkle with salt and toss. Let stand 1 hour to drain., In a large saucepan, combine remaining ingredients; bring to a boil, stirring to dissolve sugar. Add vegetables; return to a boil. Remove from heat; cool completely., Transfer to a covered container; refrigerate, covered, at least 4 days before serving. May be stored in refrigerator up to 3 weeks.

Number Of Ingredients 7

10 cups summer squash or 10 cups zucchini, sliced
2 cups onions, sliced
kosher salt, for sprinkling vegetables
2 cups white vinegar
3 cups sugar
1 1/2 tablespoons pickling spices
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • In a large pot or bowl, layer sliced squash and onions, and sprinkle eash layer generously with kosher salt.
  • Let sit 1 hour.
  • Drain.
  • In large pot combine vinegar, sugar, pickling spice, and crushed red pepper and bring to a boil.
  • Add squash and onions and return to boil.
  • Ladle vegetables and enough of the liquid to cover them within 1/2 inch into sterilized jars.
  • Wipe rims and jars clean, and put lids and rings on jars.
  • Process jars in hot water bath for 10 minutes.
  • Remove jars from water bath and allow to cool.
  • Any jars that do not seal should be refrigerated and used withing 2 weeks.
