Homemade Pickled Jalapeños are easy to make! This simple recipe, which uses the waterbath canning method, makes tasty and crisp homemade pickled jalapeños slices.

Number Of Ingredients 5

1 1/2 pounds jalapeños peppers
3 1/2 cups white vinegar (MUST be 5% acidity)
1 cup water
1 tablespoon pickling salt, optional
Ball® Pickle Crisp or Mrs. Wages Xtra Crunch, optional

Steps:

  • Slice Peppers: Wash peppers and cut off steams. Slice peppers into 1/4-inch thick rings. Wear gloves for this step to avoid burning your hands. And do NOT touch your eyes or any other sensitive body parts.
  • Heat Jars: Place a rack into the bottom of a large pot. Fill pot with enough water to cover jars. Submerge jars in water. Bring water to a simmer, 180 degrees. Simmer jars for 10 minutes. (Since the peppers process for 10 minutes, you don't need to boil the jars.)
  • Prepare the Brine: While the jars heat, combine vinegar, water, and salt medium saucepan. Boil for five minutes.
  • Pack Jars. Remove jars from the water. Pack the peppers into hot jars, leaving 1/2 inch headspace. Add 1/4 teaspoon Pickle Crisp to each jar, if desired.
  • Add Brine. Ladle brine into jars, leaving 1/2 inch headspace. Using a wooden chopstick, bubble tool, or soft rubber spatula, remove air bubbles. Measure headspace. Add more brine if needed.
  • Clean Rim and Apply Lids. Wipe rim with clean, damp cloth. Place lid on jar. Screw on band to "fingertip tight." You should feel some resistance but you don't want to crank the band on too tight.
  • Process Jars. Lower jars into pot. Water should cover jars by 1 to 2-inches after all jars are in the pot. Cover the pot. Return water to a boil. Process for 10 minutes. (Start the timer once the water returns to a boil.) Be sure to maintain a rolling boil during the entire 10 minute processing time.When processing time completes, turn off the burner and remove lid. Wait 5 minutes before removing jars from the pot. Lift the jars out of the water straight. Avoid tipping the jars. Place hot jars on a towel-lined counter or wood cutting board. Allow jars to cool for 24 hours.
  • Check Seals. Press the center of the lid. It should not move. Remove outer ring. Gently try to lift the lid off the jar. It should not move. Wipe jars. Label. If any jar didn't seal, place into the refrigerator and enjoy within a week or so.
  • Store: Place jars in a cool place out of direct sunlight. For best flavor, wait six weeks before enjoying the peppers.

  • Stir jalapeno peppers into the pot. Let stand until slightly cooled, about 15 minutes.
  • Transfer jalapeno peppers to a large Mason jar; pour in pickling liquid to cover. Let cool to room temperature, about 30 minutes. Cover and refrigerate.

2 gallons water
2 cups pickling lime (calcium hydroxide)
7 pounds cucumbers, cut into chunks
6 cups cold vinegar
8 cups white sugar
2 teaspoons pickling spice
1 teaspoon salt
1 teaspoon celery seed
½ teaspoon whole cloves
1 drop food coloring, or as desired

Steps:

  • Mix 2 gallons water and pickling lime together in a large bowl; add cucumbers and soak, stirring often, for 24 hours. Drain and thoroughly rinse cucumbers under cold water.
  • Fill a large bowl with ice water and soak cucumbers for 3 hours; drain.
  • Pour cold vinegar into a large pot. Mix sugar, pickling spice, salt, celery seed, cloves, and food coloring into vinegar until dissolved. Add cucumbers; let sit, 8 hours to overnight.
  • Bring cucumber mixture to a boil; remove pot from heat.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack cucumber mixture into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1 cup white vinegar
1 cup water
1 clove garlic (smashed)
1 tablespoon honey (or use sugar)
1 bay leaf
1 tablespoon salt
1 teaspoon Mexican oregano
1 teaspoon peppercorns

Steps:

  • First, slice your batch of jalapeno peppers into rings and discard the stems. Stuff the jalapeno slices into a quart sized jar (Ball jar or Mason jar).
  • Next, add the vinegar, water, honey, garlic, bay leaf, salt, Mexican oregano, and salt to a pot. Bring the brine mixture to a quick boil.
  • Give it a quick stir, then remove the brine from heat. Cool slightly.
  • Pour the brine into the jar over the jalapeno peppers. Secure with a lid and let come to room temperature. Refrigerate until ready to use.

5 or 6 large limes
2 Tbsp salt
2 tsp dry mustard
1 tsp cayenne pepper, optional
1 clove garlic, crushed
1/2 tsp ginger
1 c salad oil

Steps:

  • 1. Wash limes; dry. Then slice crosswise into 1/8-inch slices. Arrange in a single layer on parchment covered cookie sheets.
  • 2. Combine salt and rest of ingredients, except oil, mixing well. Sprinkle 1/2 of mixture over lime slices; let set for 1/2 hour; turn slices over and sprinkle with remaining salt mixture. let stand for another 1/2 hour.
  • 3. While this is setting; bring the oil to boiling in a small saucepan; remove from heat let cool slightly. Pack lime slices into 2 hot and sterile pint jars. Cover with oil;-making sure there are no air bubbles. Seal quickly. Let stand in a warm place at least 4 days. Great side garnish to lamb,poultry, rice, pasta,or seafood.

CUCUMBERS: DAY 1
7 lb medium sized cucumbers
sliced to 1/4 to 1/2 inch, weigh, cover with .....
2 c hydrated lime mixed with 2 gallon of water
soak cucumber slices in water / lime mixture 24 hours.
DAY 2
1 Tbsp salt
1 tsp whole cloves
4 1/2 lb white sugar
2 qt vinegar
1 tsp celery seed
1 tsp pickling spice
DAY 3 EXPLAINED BELOW

Steps:

  • 1. Day 1: Simply soak cucumber slices in lime water for the 24 hours.
  • 2. Day 2: Drain Cucumber slices and rinse thoroughly and cover with fresh water, soak 3 hours longer. Drain well as you mix the following soaking solution.
  • 3. Mix the salt, cloves,sugar, white vinegar,celery seed and pickling spice together. Pour over cucumber slices in a non aluminum crock; soak over night making sure the solution covers the cucumber slices.
  • 4. Day 3: Place the container of cucumber slices and solution on medium heat bring to a gentle boil and boil 40 minutes. May need to turn burner down a little.
  • 5. Pack in clean, sterilized glass pint jars and seal using new lids. When pickles have cooled to room temperature...Any not sealed..refrigerate.

4 pounds pickling cucumbers
2 tablespoons canning salt or kosher salt
2 1/2 quarts water
2 cups cider vinegar
1 cup white vinegar
3 cups water
2 tablespoons sugar
2 tablespoons canning or kosher salt
6 teaspoons dill seeds
3 teaspoons pickling spices
6 teaspoons minced garlic
6 teaspoons dried minced onion
6 pint mason jars and lids (and bands)

Steps:

  • Slice cucumbers into 1/4-inch thick slices.
  • Place slices in a large non-reactive bowl. Combine two tablespoons of salt and the water. Stir until salt is dissolved. Pour salt water over cucumber slices. Cover and let 2-3 hours. Drain the cucumbers and discard the salt water.
  • In a nonreactive pot, combine vinegars, water, sugar, and salt. Cover, bring to a simmer until the salt and sugar is dissolved. Remove from heat and set aside.
  • In the bottom of a pint mason jar, add 1 teaspoon of dill seed, 1/2 teaspoon pickling spices, and 1 teaspoon minced garlic and 1 teaspoon minced onion. Fill jars with cucumber slices.
  • Using a funnel, carefully pour vinegar mixture over the cucumber slices, leaving 1/2-inch of room between the pickles and to top of the jar. Wipe rims with a clean damp rag or paper towel. Place a lid on each jar and secure tightly.
  • Allow jars to set for 3 weeks before opening.
  • Jars will last for up to three months in the refrigerator. Pickles can also be preserved using the water bath canning method. Properly canned pickles should be store in a cool dry place and are good for up to one year.

¾ cup white vinegar
3 cloves garlic ((smashed))
¾ cup filtered water
1 TBSP sea salt ((or Himalayan salt))
½ cup honey ((optional))
2 heads fresh dill ((or 3 TBSP fresh leaves, or 2 TBSP dried))
3-5 small cucumber ((sliced))
½ onion ((thinly sliced, optional))

Steps:

  • In a small saucepan, combine the vinegar, garlic, water, salt, and honey if using.
  • Bring to a boil, then simmer for 5 minutes, whisking occasionally.
  • While waiting for the brine to cook, place the dill in the bottom of a quart-size jar.
  • Add a few layers of cucumber slices. The cucumbers can be sliced as thick or as thin as desired, but the thinner they are the faster they'll pickle.
  • Add a layer of onions (if using), then more cucumber slices, repeating until the jar is nearly full. Leave about ½ inch of head space at the top of the jar.
  • Pour the brine over the pickles, put the lid on, and place it in the fridge. If you don't have enough liquid to cover the pickles, then add some more vinegar and water in equal amounts until you do.
  • Wait at least 12 hours before eating the pickles (the longer you wait the more flavorful!).
  • Tip: Since these are going to be kept in the fridge, a canning jar isn't necessary. Whatever heat safe lidded glass jar you have on hand that's big enough will work.

7 lbs cucumbers, sliced lengthwise
2 cups pickling lime
2 gallons water
2 quarts vinegar
8 cups sugar
1 tablespoon salt
3 drops green food coloring (optional)
2 quarts vinegar
8 cups sugar
1 tablespoon salt

Steps:

  • Soak the cucumbers lime and water in enamel or crockery for 24 hours, stirring occasionally.
  • (Do not use Aluminum Ware).
  • Remove from lime water and rinse in 3 cool waters.
  • Soak 3 additional hours in ice and water.
  • Remove carefully to drain.
  • Mix syrup ingredients and stir until dissolved.
  • Pour over the cucumbers.
  • Let set 5 or 6 hours or overnight.
  • Add pickling spices to taste.
  • (Use whole cloves or allspice).
  • Boil mixture for 35 minutes.
  • Fill sterilized jars with cucumber slices and pour syrup over cucumbers leaving 0.125 inch head space.
  • Seal jars.
  • If syrup does not cover cucumbers while boiling, mix partial recipe of syrup and add it.
