1 pound seedless red grapes
1 ½ cups apple cider vinegar
1 cup water
1 cup raw sugar
½ small red onion, cut into slivers
2 teaspoons yellow mustard seeds
1 teaspoon whole black peppercorns
1 cinnamon stick
1 bay leaf
1 star anise pod
1 whole allspice

Steps:

  • Remove stems and discard any grapes that aren't firm and unblemished. Place grapes in a quart-size mason jar and set aside.
  • Combine vinegar, water, sugar, red onion, mustard seeds, peppercorns, cinnamon stick, bay leaf, star anise pod, and allspice in a saucepan; bring to a boil. Reduce heat to low and simmer until onion is softened, about 10 minutes. Remove saucepan from heat and cool for 15 minutes.
  • Carefully pour cooled liquid over grapes and gently swirl jar to incorporate spices. Cover jar and refrigerate 1 day before eating.

1 pound green, red or black seedless California grapes, stemmed and rinsed
Large pinch red pepper flakes
Wedge of Manchego or sharp cheddar
Multigrain crackers or toasted baguette slices
1 cup unseasoned rice vinegar
1 cup sugar
1/2 teaspoon kosher salt
1 teaspoon whole black peppercorns
1/2 teaspoon whole cloves

Steps:

  • With a sharp paring knife, cut an X in the stem end of each grape. Divide between 3 pint size canning jars. Combine the vinegar, sugar, salt, peppercorns, cloves and pepper flakes in a small saucepan and bring to a boil. Stir just until the sugar has dissolved and pour over the grapes. Cover and refrigerate at least 1 hour. Serve with the cheese and crackers or bread.

The pickling liquid for these grapes includes red wine, vinegar, and common pickling spices like coriander, mustard seeds and hot pepper; it also contains warm spices like cinnamon and star anise along with brown sugar. 5 cups seedless red grapes
4 jalapeno peppers, seeded and sliced
2 tablespoons minced fresh gingerroot
2 cinnamon sticks (3 inches), halved
4 whole star anise
2 teaspoons coriander seeds
2 teaspoons mustard seed
2 cups packed brown sugar
2 cups white wine vinegar
1 cup water
1 cup dry red wine
1-1/2 teaspoons canning salt

Steps:

  • Pack grapes into four hot 1-pint jars to within 1-1/2 in. of the top. Divide jalapenos, ginger, cinnamon, star anise, coriander seeds and mustard seed among jars., In a large saucepan, combine brown sugar, vinegar, water, wine and canning salt. Bring to a boil; cook until liquid is reduced to 3 cups, 15-18 minutes., Carefully ladle hot liquid over grape mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

1 1/2 cups white wine vinegar
3/4 cup sugar
9 whole cloves
1 Tbsp mustard seeds
1 Tbsp black peppercorns
1 1/2 tsp kosher salt
1/2 pound seedless red grapes, preferably med to large)
1 garlic clove, lightly crushed
10-12 thin slices prosciutto, halved lengthwise
extra virgin olive oil, for drizzling

Steps:

  • 1. Make the pickling liquid; In a small nonreactive saucepan, whisk together the vinegar, sugar, cloves, mustard seeds, peppercorns and salt, and simmer over medium heat, stirring to dissolve the sugar and salt, 3-5 minutes. Remove from the heat and let stand for 5 minutes. 2. Pickle the grapes; cut off the "belly button" at the top of each grape (where it connects to the stem), taking as little of the actual grape as possible, make a few shallow incisions in each grape, and put the grapes in a small bowl. Pour the pickling liquid over the grapes and let sit overnight in the refrigerator. These grapes keep for a long time, so make a jar and have them around for when you need them. 3. Serve the grapes; rub the garlic over the prosecution and wrap each grape in about 2 layers of the prosecution and set seam side down on a serving platter. Secure the ham around each grape with a toothpick, if desired. When ready to serve, drizzle a little of the pickling liquid and a little olive oil over them. If desired, you can brown the grapes in a saute pan in a thin layer of hot canola oil, turning them so the prosciutto crisps. Serve warm

We had pickled grapes as part of an appetizer that was served at Teatro ZinZanni. These ones don't taste exactly the same as the ones chef Tom Douglas served there, but they're a tasty addition to a cheese or charcuterie plate. They taste similar to a sweet pickle, only better. I like to mix red and green seedless grapes, but you can use one or the other. I also use Splenda, but feel free to use granulated sugar if you desire. This recipe is adapted from one I found on NPR, which in turn was adapted from a recipe from Seattle's Boat Street Cafe. They are ready to eat after about 8hrs in the brine.

1 lb seedless grapes (red or green, or a combination)
1 cup white vinegar
1 cup Splenda granular (sugar substitute)
1 1/2 teaspoons mustard seeds
1/2 teaspoon coriander seed
1 teaspoon peppercorn
2 1/2 inches cinnamon sticks
2 allspice berries
1/4 teaspoon kosher salt

Steps:

  • Rinse & dry grapes, and carefully remove all stems. Using a sharp paring knife, trim away the stem end of the grape (or 'belly button'). Put the grapes into a medium bowl, and set aside (I like to use a 1qt glass Pyrex measuring cup).
  • In a medium saucepan, combine remaining ingredients, except for the Splenda (but if you're using sugar, add it now). Bring mixture to a boil over medium heat. If using Splenda, remove from heat and add it now, stirring until dissolved. Pour mixture over the grapes; stir to combine. Cover, and set aside to cool at room temperature.
  • Cover the bowl with plastic wrap (or pour grapes & brine into jars with tight fitting lids); chill at least 8hrs or overnight. Serve cold.
