PICKLED HERRING AND CUCUMBER SALAD

Pickled Herring and Cucumber Salad image

It just so happens I like cucumber salad and pickled herring, so I decided to try this combination and the results are great. You can add your own seasoning to give it some zip, but I prefer just to leave it alone. The prep time and cook time are about the same.

Categories     Salad     Vegetable Salad Recipes     Tomato Salad Recipes

Time 1h50m

Yield 8

Number Of Ingredients 6

4 seedless English cucumbers, thinly sliced
4 vine-ripened tomatoes, diced
1 onion, thinly sliced
1 cup apple cider vinegar
½ cup granulated sugar
2 (12 ounce) jars herring pickled in wine sauce (such as VitaR)), liquid drained and reserved

Steps:

  • Combine cucumbers, tomatoes, and onion in a large glass mixing bowl.
  • Stir vinegar and sugar together in a small saucepan over medium-low and bring to a boil; cook and stir until the sugar dissolves. Pour over the vegetable mixture. Marinate mixture in the refrigerator for 30 minutes.

Categories     appetizer

Yield 6 servings

Number Of Ingredients 15

3 to 4 whole salted herrings
2 cups milk
1 1/2 cups water
1 cup white sugar
1 cup white vinegar
2 teaspoons ground allspice
2 teaspoons yellow mustard seeds
1 teaspoon caraway seeds
2 teaspoons whole black peppercorns
2 teaspoons whole white peppercorns
1 small red onion, sliced in rings
2 carrots, cut in thin slices
2 handfuls fresh dill
2 bay leaves
2-inch piece fresh horseradish, cut in big slices

Steps:

  • Soak the herring in the milk for at least 12 hours or up to 24 to draw out a lot of the excess salt. Drain the herring, rinse, and pat dry. Cut off the fins and fillet the herring, leaving the skin on. Cut the fillets crosswise into 2-inch strips.
  • In a saucepan, combine the water, sugar, vinegar, allspice, mustard seeds, caraway seeds, and peppercorns. Bring the mixture to a boil, stirring to dissolve the sugar. Remove from the heat and cool the pickling mixture completely.
  • Arrange the herring fillets, onion, carrots, dill, bay leaves, and horseradish in a glass dish or funky Mason jar. Pour the cooled pickling mixture into the jar so that all the ingredients are completely covered with the liquid. Cover and refrigerate overnight or up to 2 days before serving.

This herring has been on my Christmas table for some years and it's a refreshing addition to the Nordic festive meal. Commonly eaten as they are, with potatoes, eggs or beetroot salad. The onions are also edible. In itself Glögg is a Nordic mulled wine usually enjoyed in the Christmas season, or Yuletile. • Make the brine by dissolving the salt in warm water then cooling it down again. If we aren't bothered by the smell and have enough space simply covering the fish slices in salt would do as well.
  • Boning is not necessary if we aren't bothered about the spin which is a bit crunchy. Some like it others don't.
  • Rinse the pieces of fish well then place them into the brine in the fridge or under the brine in case of using dry salt.

PICKLED HERRING RECIPE - HOW TO PICKLE HERRING AT HOME

They’ll still be plenty salty. Having some salt in the fish is important: I once made this recipe with fresh herring that I failed to brine, and they turned to mush within 2 weeks. A disaster. You …
