Armenian Cucumber And Gherkin Pickles image

Homemade pickling with armenian cucumber and small cucumbers aka gherkins.

1 kilo Armenian cucumber
1 kilo gherkin
10 cloves garlic, peeled
A few celery stalks
½ bunch of parsley
2 lemons, 1 squeezed, 1 sliced
1 ½ cup grape vinegar
1 tbsp sugar
Kosher salt or sea salt
Boiled cold water

Steps:

  • Wash armenian cucumbers and gherkins, wait them to dry.
  • Make a few tiny holes on veggies with a toothpick or knife so that they can absorb the brine. Place them into jars adding garlic cloves, lemon slices and celery stalks among them.

This is a wonderful sweet pickle recipe I got from my mother, who got it from a relative, who got it from a relative, and so on. It is very easy, a little time-consuming, delicious, and makes a lot of pickles. The recipe says to put them in jars, but I just store them in a clean gallon-sized ice cream bucket. Will keep in the refrigerator for up to a year.

6 unpeeled cucumbers, sliced
2 onions, sliced
2 large green bell peppers, chopped
2 red bell peppers, chopped
⅓ cup salt
2 trays ice cubes
5 cups white sugar
3 cups white vinegar
2 teaspoons mustard seeds
1 ½ teaspoons celery seeds

Steps:

  • Combine cucumbers, onions, green bell peppers, red bell peppers, and salt in a large container. Cover with ice cubes. Let stand for 3 hours. Drain off brine and squeeze out excess moisture.
  • Mix sugar, vinegar, mustard seeds, and celery seeds in a saucepan. Bring to a boil; cook for 3 minutes. Pour over cucumber mixture. Let cool, about 30 minutes.
  • Divide cucumber mixture among jars. Cover with lids and refrigerate.

These pickles taste so fresh and have just the right amount of dill and garlic. They taste great along-side a hotdog on a bun. They also taste great alone as a healthy snack. The pickles should be good for 6 weeks. Enjoy! You can also cut cucumbers into chips if you prefer a pickle chip instead of a spear.

3 ½ cups water
1 ¼ cups white vinegar
1 tablespoon sugar
1 tablespoon sea salt
4 cups cucumber spears
2 cloves garlic, whole
2 heads fresh dill

Steps:

  • Stir water, vinegar, sugar, and sea salt together in a saucepan over high heat. Bring to a boil; remove from heat and cool completely.
  • Combine cucumber spears, garlic cloves, and fresh dill in a large glass or plastic container. Pour cooled vinegar mixture over cucumber mixture. Seal container with lid and refrigerate for at least 3 days.

6 cups thinly sliced cucumbers
2 cups thinly sliced onions
1-1/2 cups sugar
1-1/2 cups cider vinegar
1/2 teaspoon salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
1/2 teaspoon ground turmeric
1/2 teaspoon ground cloves

Steps:

  • Place cucumbers and onions in a large bowl; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just until the sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate for at least 24 hours before serving.

Using only a handful of pantry ingredients, a Mason jar, and a few hours in the refrigerator, you can make classic dill pickles that are just as tangy and flavorful as those prepared according to more traditional (and labor-intensive) canning techniques. Plus this recipe can be scaled with ease, meaning you can make just one jar or ten in a matter of minutes. So if you're a pickle lover but short on time, this method is for you.

1 cup rice wine vinegar or distilled white vinegar
Kosher salt
1 teaspoon whole black peppercorns
1/4 teaspoon crushed red pepper flakes
6 sprigs dill
3 cloves garlic
1 1/4 pounds kirby cucumbers, ends trimmed (about 4 medium cucumbers; see Cook's Note)

Steps:

  • Bring the vinegar, 1 1/2 cups water and 1 tablespoon salt to a boil in a small saucepan over medium heat, stirring until the salt is dissolved, about 3 minutes. Remove from the heat.
  • Meanwhile, place the peppercorns, red pepper flakes, dill and garlic in a 1-quart Mason (or other glass) jar. Pack the cucumbers in the jar as tightly as possible.
  • Pour the vinegar mixture over the cucumbers so the cucumbers are completely submerged. Leave uncovered and allow to cool to room temperature, about 1 hour. Cover and refrigerate for at least 1 day before using. The pickles will keep in the refrigerator for up to 2 weeks.

  • Rinse cucumbers, and use a mandolin to slice them into thin slices. Place into a large glass bowl and set aside.
  • In a medium-size pan, combine vinegar, water, sugar, and peppercorns. Heat over medium heat and stir until sugar is just dissolved(do not allow to boil). Remove from heat and set aside to cool.
  • When mixture has cooled, add to the sliced cucumbers and gently mix together. Place the dill springs on top, and cover.
  • Place in refrigerator for at least three hours prior to serving. I like to marinade them at least one day ahead.
