CARL JOHN'S FRIED BOLOGNA SANDWICH
Steps:
- In a cast-iron skillet set over medium-high heat, melt the butter and then add the bologna. Fry until the bologna turns dark golden brown and then flip and fry the other side, about 2 minutes per side. Top each slice of bologna with 2 slices of cheese and let melt.
- Assemble the sandwiches by spreading mayonnaise on 4 slices of the bread and mustard on the remaining 4 slices. Place a slice of cheese-covered fried bologna on a slice of bread topped with mayonnaise, then layer on a piece lettuce and tomato. Top with a slice of bread topped with mustard. Repeat with the remaining slices of fried bologna. Slice each sandwich in half and serve.

Steps:
- Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
- Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
- Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.
BOLOGNA SALAD SANDWICH SPREAD I
A girlfriend's mom made this spread years ago for our Teen Club Luncheon back in Iowa in the 50's. I asked her to tell my Mom how to make it. I made the recipe for my kids while they were growing up & they still love it. Sweet relish and eggs round out the flavor of bologna in this simple but delicious spread. Serve it on cocktail toast, or use it in sandwiches. The amount of egg, creamy salad dressing and relish should be adjusted to taste.

Steps:
- Grind the beef with a meat grinder fitted with a large grinding blade. Make a paste out of the milk powder, salt, dextrose, curing salt, black pepper, paprika, nutmeg, garlic powder, coriander and the ice water (strain out the ice cubes). Combine the spice paste with the ground meat and mix well. Refrigerate for at least 2 hours and preferably 12 to 24 hours.
- Grind the meat again using the smaller grinder blade. Stuff the ground bologna into 88-millimeter casing using a sausage stuffer. Tie off both sides and poke holes in the casing to release any trapped air.
- Cold-smoke the bologna at or under 100 degrees F for 45 minutes to 1 hour. Cool completely in an ice water bath, about 30 minutes.
- Wrap the bologna liberally in plastic wrap and then in aluminum foil. Cook in an immersion circulator at 155 degrees F for 2 hours (or place a water bath in a cool oven with the bologna fully submerged and cook until it reaches an internal temperature of 150 degrees F). Slice the bologna to your preferred thickness.

PICKLE DIP FRIED BOLOGNA SANDWICHES
Steps:
- Melt a nice layer of butter in a medium pan over medium heat. Toast the bread on each side until golden, smooshing it slightly so that it gets a good amount of butter. Transfer to a wire rack or tent them against each other to cool and get crisp. Add the bologna to the pan and cook on both sides until browned. Spread each slice of bread with a layer of Pickle Dip. Top one slice with lettuce and then the bologna and then the chips and then top with the other slice of bread.
- Stir together the Havarti, cream cheese, ranch dressing, sriracha, dill, pickle brine, and pickles in a medium bowl. (If you'd like to serve this as a dip and not as a spread, thin it with another 1/4 to 1/2 cup of ranch dressing.)

- Spray a large skillet with non-stick spray and heat over medium heat. Add bologna and pan "fry" just until crispy. Be sure to stir the bologna with tongs or a fork so that it doesn't stick to the pan and to ensure that each piece gets crispy.
- Meanwhile, place cubed processed cheese and milk in a small saucepan over medium low heat. Stir until mixture is smooth. Whisk in the beer.
- Divide the crispy bologna between the two rolls, drizzle with cheese and top with jalapenos. Serve immediately.
