PICANTE BEEF ROAST
I created Picante Beef Roast because I love the flavor of taco seasoning and think it shouldn't be reserved just for tacos! My recipe couldn't be easier, and it works great with a pork roast, too. -Margaret Thiel, Levittown, Pennsylvania

- Cut roast in half; place in a 5-qt. slow cooker. In a large bowl, combine the picante sauce, tomato sauce and taco seasoning; pour over roast. Cover and cook on low for 8-9 hours or until meat is tender. , Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer 3 cups to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast.

- In a large resealable plastic bag, combine the first five ingredients. Add the pork, a few pieces at a time, and shake to coat., In a large nonstick skillet or wok, brown pork in oil. Add salsa and peach preserves; cover and simmer for 10-15 minutes or until meat is no longer pink. Serve over rice if desired.

PICANTE POT ROAST
Steps:
- 1. Pour oil into crock pot or dutch oven and add meat.
- 2. Mix spices and sauces in bowl and pour over meat.
- 3. Cook slowly in dutch oven, and check meat for tenderness after 2 hours.
- 4. If added to crock pot instead, turn on low and let cook 6-8 hours.
- 5. In either case, re-move meat to serving plate and keep warm; bring sauce to a boil and stir frequently until thickened (about 5 minutes).
- 6. Skim fat from sauce, and serve with additional picante sauce over meat.
