- In a large bowl, combine the broth, soy sauce, garlic, cornstarch, ginger and cayenne pepper. Add chicken; stir to coat. Heat oil in a large skillet over medium-high heat. Add chicken mixture. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat to medium. Add peppers and water; cook and stir for 5-8 minutes or until peppers are tender.

BAKED CHICKEN AND PEPPERS
These Italian Baked Chicken and Peppers are so simple to make and so DELICIOUS to eat! With as little as 10 min of prep and one dish you can have this flavor packed meal in the oven baking to perfection.

- Place the onions and peppers in the bottom of a 9x13 baking dish.
- Mix the oregano, basil, salt and pepper together in a small bowl. Place the chicken in a single layer on top of the peppers and season with a couple pinches of the seasoning.
- Mix the crushed tomatoes, remaining seasonings, garlic, and vinegar together and pour over the top of the chicken to cover.
- Bake uncovered at 400˚F for 35 minutes. Then remove the dish and sprinkle the mozzarella cheese over the top and finish cooking for 5-10 minutes or until the chicken is cooked through (165˚F) and the sauce is bubbling on the sides.

- Using a pestle and mortar (if you have) add the peeled garlic, salt, cumin, paprika and a drop of the olive oil. Grind together to make a paste. If you don't have a pestle and mortar, add all the ingredients to a food processor, but make sure the garlic is minced well first.
- Add the chopped and de seeded peppers to the processor, add a bit at a time. Blend until all smooth.
- Add the olive oil. Blend. Taste to see if you need a little more salt.
- Serve in a bowl or store in an air tight container in the fridge until ready. This will keep for up to 3 - 4 days refrigerated. Simply bring to room temperature when ready to serve.

It's so easy to create quick and tasty dishes with chicken. I created this one night when I had peppers that needed to be used up. I needed something quick, and to please the family there had to be some heat. We use medium or hot picante sauce, but you could use mild.

Steps:
- Pound the chicken breast halves with a meat mallet until uniformly about 1/4" thick.
- Sprinkle them with a generous coating of seasoned salt on one side.
- Melt butter in a skillet and saute the chicken breast halves until golden brown, about 3- 5 minutes per side.
- Slice onion into 1/4" thick slices and quarter the slices.
- Cut all peppers into strips about 1/4" wide.
- Add onion, garlic and peppers to the sauteed chicken breasts and saute for a few minutes.
- Add the picante sauce over the top of the chicken and vegetables.
- Cover and simmer for about 5- 10 minutes, until vegetables are tender.

Steps:
- Place chicken breasts in a slow cooker, with the bell pepper rings over top of the chichen.
- Combine picante, brown sugar, and mustard, and spoon over top of the chicken.
- Cover and cook for 4 1/2 hours.
CHICKEN SAUCE PIQUANT
Steps:
- Cut each chicken thigh into 6 pieces. Sprinkle with 1 tablespoon of Creole seasoning. Place in a medium bowl and add flour. Stir to coat the chicken evenly.
- Heat 1/4 cup of oil in a Dutch oven over medium-high heat.
- Cook the chicken in 2 batches until golden on both sides, about 3 minutes per side. Transfer to a plate. Reserve the flour left in the bowl.
- Add the onion, green pepper, celery, garlic, remaining tablespoon of oil and the leftover flour to the Dutch oven. Cook, stirring often for 5 minutes.
- Preheat the oven to 350 degrees.
- Stir in the tomato paste and then add the crushed tomatoes, chicken broth, bacon, Worcestershire sauce, sugar, bay leaves, and thyme.
- Add chicken and any juices back to the Dutch oven. Bring to a simmer, cover and place in oven for 30 minutes. Uncover and cook another 15 minutes.
- Add Tabasco sauce and season to taste with salt and pepper. Remove the bay leaves.
- Serve with rice and sprinkle with green onions.

Steps:
- Soak the pepper overnight in a big bowl of water. Put chicken in a big pot with salted water and boil until fully cooked, remove chicken and reserve broth. Discard water of the peppers and drain them,using a small knife cut open the peppers in order to remove the seeds. Then put peppers in blender or food processor and make a puree by adding a little bit of the reserved broth from the cooked chicken. Heat oil in heavy saucepan and add onions, sautee until lightly brown and then add garlic and tomatoes, sautee 5 mins and add cumin and black pepper and sugar, stir and add salt to taste. Add puree of pepper and let it cook for 10 mins and add 1/2 cup reserved chicken broth, bring to a boil and let sauce cook for 20 mins stirring constantly. If sauce starts to dry up add a little bit more of the broth and salt. Add chicken pieces to sauce and peas, let it cook for 5 more mins and remove it from heat. Serve with rice and potatoes and sprinkle with chopped parsley. Done
