PICADILLO STUFFED POBLANO PEPPERS - RECIPE

Picadillo Stuffed Poblano Peppers - Recipe image

This stuffed poblano peppers recipe is filled with Mexican picadillo, a zesty mix of seasoned ground beef and potatoes, flavored with rich ancho peppers and more. Perfect for dinner any night of the week, and nice and spicy.

Provided by Mike Hultquist

Categories     Main Course

Time 1h5m

Number Of Ingredients 14

2 ancho chili peppers
1 tablespoon olive oil
8 ounces yellow potatoes (about 3-4 small, diced)
1 medium yellow onion (chopped)
1 jalapeno pepper (chopped)
2 cloves garlic (chopped)
1 pound ground beef
8 ounces tomato sauce
1 tablespoon paprika
1 tablespoon Mexican oregano
1 teaspoon cumin
Salt and pepper to taste
4 poblano peppers
FOR SERVING: Crumbly white cheese (fresh chopped cilantro, your favorite hot sauce)

Steps:

  • Heat a pan to medium-high heat and dry toast the ancho peppers on each side until the skins become puffy. Make sure they do not burn. This brings out the oils in the peppers. Set them into a bowl and pour boiling water over them. Let them soak for 20 minutes to soften.
  • While the ancho peppers are soaking, heat a large pan to medium heat and add the olive oil. Add the potatoes, onion and peppers and cook them down about 5 minutes to soften.
  • Stir in the garlic and ground beef. Break up the ground beef with a wooden spoon and brown it up about 5 minutes or so.
  • Stir in the tomato sauce and seasonings and reduce the heat to simmer.
  • Remove the stem and seeds from the rehydrated ancho peppers. Add the pepper skins to a food processor along with a bit of the darkened ancho water, about a tablespoon or so. Process until it is very smooth.
  • Swirl the ancho paste into the meat mixture and allow it to simmer at least 10 minutes. 20 minutes or longer is better. If you need more moisture, add in a few tablespoons of water or extra tomato sauce.
  • While the picadillo is cooking, set your oven to broil. Slice the poblano peppers in half lengthwise and set them onto a lightly oiled baking sheet, skin sides up. Broil them for about 10 minutes, or until the skins char and puff up.
  • Remove from the oven and cool slightly. Peel away the skins, then flip the peppers over.
  • Fill each poblano pepper half with the picadillo, then bake for another 10 minutes.
  • Serve with fresh cilantro, crumbly white cheese and your favorite hot sauce.

AUTHENTIC MEXICAN PICADILLO

Authentic Mexican Picadillo image

Picadillo is a popular dish in most South American cuisines. It is made with lean ground beef (or can be made with ground turkey as well), tomatoes, potatoes, and other ingredients. This authentic recipe will bring the flavors of Mexico to your plate.

Provided by mytable_yourtummy

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h10m

Yield 8

Number Of Ingredients 18

6 tomatoes
¾ cup water
¼ onion, halved
1 clove garlic
3 tablespoons vegetable oil
½ onion, chopped
1 serrano pepper
1 clove garlic, minced
1 tomato, chopped
2 pounds lean ground beef
1 (7.75 ounce) can Mexican-style hot tomato sauce (such as El Pato®)
3 potatoes, peeled and cubed
3 medium carrots, peeled and cubed
1 jalapeno pepper, sliced
2 tablespoons chicken bouillon granules
½ tablespoon ground cumin

PICADILLO RECIPE

Picadillo recipe image

Ground beef and potatoes cooked in a tomato sauce is a dish known as picadillo sencillo, or carne molida con papas. All the ingredients are usually chopped before cooking. "Chopping" in Spanish is "picar" or "cortar", which is where the dish gets its name.

Provided by Mely Martínez

Categories     Main Course

Time 35m

Number Of Ingredients 10

1 ½ Tablespoons vegetable oil
1 lb ground beef (85/15%)
1/3 cup white onion (chopped)
2 garlic cloves
1 serrano pepper
1 ½ cup diced potato (about 8 ounces)
1 lb tomatoes (diced (About 2 large tomatoes))
1 Knorr® beef bouillon cube
1/3 cup chopped cilantro
Salt and pepper to taste

Steps:

  • Heat oil in a large skillet; once oil is hot add the ground meat to cook. Break up large lumps of meat using a wooden spoon to make sure all the little pieces are well cooked. Fry until brown, about 8 minutes.
  • Add the onion and garlic. Stir and cook for about 1 minute, just enough to allow the onion to get transparent, then add Serrano pepper plus diced potatoes. Stir and keep cooking until potatoes are slightly tender, but still firm. This will take about 5 more minutes since you will still keep cooking them when you add the tomatoes.
  • Now, add the diced tomatoes and Knorr beef bouillon and stir again. The tomatoes will release their juices and the beef bouillon will dissolve, adding more flavor to the picadillo. Place a lid on your skillet and lower the heat. Keep cooking the picadillo until your potatoes are completely cooked and the tomatoes have formed a thick sauce.
  • Finally, season with salt and pepper and add the chopped cilantro.
  • Mexican Picadillo recipe the easy version
  • Serve with rice and warm corn tortillas. Enjoy!

PICADILLO POPPERS RECIPE - (4.6/5)

Picadillo Poppers Recipe - (4.6/5) image

Provided by á-174535

Number Of Ingredients 14

SAUCE:
1 (8-ounce) package lean ground beef
1/3 cup onion, chopped
1 (8.8-ounce) pouch cooked Spanish-style rice
1 cup Monterey Jack cheese, shredded, about 4 ounces
1/2 cup golden raisins
1/2 cup sliced pimiento-stuffed green olives
1 tablespoons dry sherry, or lime juice
24 fresh plump jalapeño peppers
1 (8-ounce) container sour cream
milk, as needed
1/2 cup toasted almonds or pecans
1 squeeze of lime juice
pinch of cinnamon

Steps:

  • FILLING: In a large skillet, cook ground beef and onion over medium-high heat until meat is brown and onion is tender, using a wooden spoon to break up meat as it cooks. Drain off fat. Stir in cooked rice, the 1 cup cheese, raisins, olives, and sherry. Set aside. Cut a lengthwise slit in one side of each jalapeño pepper to create a pocket, being careful not to cut the pepper in half. Cut a very small crosswise slit on both ends of the long slit, making an "L" shaped opening. Leave stem intact and use a small spoon to remove seeds and scrape out membranes. Spoon filling into peppers. Place filled peppers, slit sides up, in a greased grill basket or on a greased vegetable grilling pan. For a charcoal grill, grill peppers in basket on the rack of a covered grill directly over medium coals for 8 to 12 minutes or until peppers are crisp-tender and filling is heated through. For a gas grill, preheat grill. Reduce heat to medium. Place peppers in basket on grill rack over heat. Cover and grill as above. If desired, sprinkle grilled peppers with additional cheese. If you want a sauce to serve with these Mexican bites, thin one 8-ounce carton of sour cream with a little milk and stir in 1/2 cup ground toasted almonds or pecans, a squeeze of lime juice, and a pinch of ground cinnamon.
