PICADILLO RECIPE
Ground beef and potatoes cooked in a tomato sauce is a dish known as picadillo sencillo, or carne molida con papas. All the ingredients are usually chopped before cooking. "Chopping" in Spanish is "picar" or "cortar", which is where the dish gets its name.

Steps:
- Heat oil in a large skillet; once oil is hot add the ground meat to cook. Break up large lumps of meat using a wooden spoon to make sure all the little pieces are well cooked. Fry until brown, about 8 minutes.
- Add the onion and garlic. Stir and cook for about 1 minute, just enough to allow the onion to get transparent, then add Serrano pepper plus diced potatoes. Stir and keep cooking until potatoes are slightly tender, but still firm. This will take about 5 more minutes since you will still keep cooking them when you add the tomatoes.
- Now, add the diced tomatoes and Knorr beef bouillon and stir again. The tomatoes will release their juices and the beef bouillon will dissolve, adding more flavor to the picadillo. Place a lid on your skillet and lower the heat. Keep cooking the picadillo until your potatoes are completely cooked and the tomatoes have formed a thick sauce.
- Finally, season with salt and pepper and add the chopped cilantro.

PICCALILLI
Growing up in England, Piccalilli was commercially available, but none were as good as my grandmother's recipe. This was always a favorite with cheese. It is a good relish to have on hand and would be tasty in a ham sandwich.

PICADILLO
Picadillo is a ground meat hash with vegetables. It usually has capers and green olives in it as well. This recipe may be served over rice or used as a filling for sweet peppers, tortillas, taco shells or pita breads, even spooned over toasted buns. Source of recipe: Anne Lindsay's New Light Cooking. When I made this I found the flavour of 2 tbsp of Worcestershire sauce to be too strong for my taste. I would try 1 tbsp and then taste it. I would also add the same quantity of vinegar so if you only added 1 tbsp Worcestershire sauce then only use 1 tbsp vinegar. Note: May substitute 14 oz can tomato sauce for tomato paste and water but salt content will be higher.

Steps:
- Using a large nonstick skillet, cook beef over medium heat, breaking up with spoon, until browned and drain off any fat.
- Add onions and cook, stirring often, for 5 minutes or until nearly tender.
- Add garlic and peppers, and cook, stirring often, for 2 to 3 minutes or until onions are softened.
- Mix tomato paste with water and stir into beef mixture along with raisins, olives, capers and Worcestershire sauce (original recipe called for 2 tbsp Worcestershire sauce but I found that to be too much).
- Simmer for 5 minutes to blend flavors then stir in vinegar (I would add the same amount of vinegar as Worcestershire sauce), salt and pepper.

- Brown beef with onions and jalapeno pepper in a large pot or Dutch oven over medium heat, breaking up the beef as you go. Once almost cooked though, add potatoes, carrots, bell pepper, and all seasonings and cook for 3 minutes. Add garlic and cook for 30 seconds.
- Add tomato sauce, beef broth, Worcestershire sauce, raisins and bay leaf and bring to a simmer. Cover, reduce heat to low and continue to simmer for 10 minutes. Uncover and continue to simmer for 15-20 minutes, stirring occasionally, or until the potatoes are tender and most of the liquid is absorbed. If the potatoes aren't done by the time the sauce is reduced, add additional water. Alternatively, if there is too much liquid, continue to simmer until it reduces to desired consistency.
- Stir in peas and cilantro and cook 1 additional minute or until heated through. Serve with rice or see post for TONS of serving ideas.

Mix until all combined. Cover and cook for about 15 minutes, we really want the flavors to combine and marry.
- Lastly, mix in the red wine vinegar, crispy potatoes and diced boiled egg. Give it a taste and adjust the salt according to your liking. Serve alongside rice and tostones or maduros.

- Wash the ground beef in a colander using cold water. I do this for two reasons. When the ground beef cooks it cooks really fine so there are no big chunks and second it removes excess fat. Make sure to clean up sink area after washing to avoid creating any bacteria.
- Heat a sauté pan on medium high heat. When hot add ground beef and cook about 10 to 15 minutes. When all the ground beef is cooked through and is no longer pink drain in a clean colander. Heat sauté pan again with 2 tablespoons of olive oil on medium high heat and return ground beef to pan. Season beef with salt, garlic powder and black pepper.
- Next, add diced onions and bell peppers and cook with the ground beef until tender about 4-5 minutes. Add in garlic and cook another 1-2 minutes. Just to clarify I measure the garlic cloves before smashing. Deglaze the pan with the vino seco.
- Stir in tomato sauce, water, salt, garlic powder, cumin and olives with some of the juice. If you decide to add raisins and or capers add them now. Last add the cilantro and let simmer for another 5 - 10 minutes so all of the flavors incorporate with each other. Serve over a bed of white rice.
