Bougatsa is a traditional cream-filled phyllo pastry. The cream is a rich custard wrapped in crispy phyllo. Enjoy this pastry for breakfast or along with your cup of coffee.

4 cups cups full fat milk
1 cup fine semolina
1 cup sugar
1 package phyllo dough (10 sheets)
3-4 tbsp butter melted
1 tsp vanilla extract
icing sugar

Steps:

  • Preheat the oven to 350 F / 180 C.
  • Add milk, semolina and sugar in a pan on medium heat. Stir with a wooden spoon until mixture is creamy and thick. Remove from heat. Add 1 tablespoon melted butter and vanilla extract. Stir well. Put the pan aside.
  • Grease a 10x5 inches baking pan (pan should be a tad smaller than your phyllo sheets). Unroll the first phyllo sheet and lay it in the the pan, with the edges overhanging. Brush it with melted butter. Repeat process for the next four phyllo sheets. Gently pour the custard in the pan. Spread it evenly over the phyllo with a spatula. Trim the rest sheets of phyllo into the shape of the pan. Top custard with a phyllo and brush it with melted butter. Repeat process with the rest of phyllo sheets. Fold the overhanging edges towards the centre and brush with more melted butter.
  • Bake for 25 minutes until golden and crispy.
  • Allow to cool for 20 minutes before serving. Cut bougatsa in slices and generously dust each slice.

A traditional recipe for a Greek sweet pie

6 cups whole milk
1 cup fine semolina
¾ cup granulated sugar (divided)
1 tablespoon unsalted butter
1 teaspoon vanilla extract
3 eggs
Zest of 1 orange
1 package phyllo dough (about 12 to 16 sheets)
1 cup unsalted butter
1½ cups granulated sugar
1 cup water
¼ cup orange juice
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F. Have your pan ready to go - either a 16-inch round cake pan or a 10x13-inch lasagna dish. The phyllo should be room temperature or slightly cooler. Open the package right before using it so the sheets do not dry out.
  • Stir the milk, semolina, ½ cup of the sugar, the butter, and vanilla in a large sauce pan over medium heat. Stir the mixture gently but constantly until it becomes thick like pudding. This may take up to 15 minutes or so. Remove the pan from the heat and cool for 5 to 10 minutes. Beat the eggs with the remaining ¼ cup of granulated sugar in a small bowl and then stir it into milk mixture. Stir in the orange zest.
  • Melt the butter and begin by brushing the the bottom of your pan with melted butter.
  • Layer the bottom of the pan with about half of the phyllo, liberally brushing with butter between each layer. Lightly press the sheets into the sides and corner and let the edges hang over the top; you will fold them over later. (Do not skimp on the butter! You should use half on the bottom layers and half on the top.)
  • Pour the slightly cooled custard over the bottom sheets and spread to the sides. Layer the remaining sheets of phyllo on top of the custard as you did the bottom, continuing to brush melted butter between layers until you have used all the phyllo. Then, brush butter on the overlapping sides and roll the edges down creating a "rim" around the edge of the pan. Liberally brush the top and the edge with the rest of your butter.
  • Bake until the top is golden brown all over, 30 to 45 minutes. (I suggest checking early and often, as you don't want the phyllo to burn.)
  • While the pie is baking, make the syrup. Bring the sugar, water and orange juice to a boil in a small saucepan. Boil for 5 minutes then remove from the heat. Off the heat, stir in the vanilla extract; set aside.
  • When you remove the pie from the oven, let it cool for 15 minutes. Then, pour the syrup evenly over the entire pie. Allow the pie to sit for at least 1 hour before serving so the syrup can be absorbed. Store leftover pie in the refrigerator for up to 3 days.

Number Of Ingredients 10

4 cups milk
1 1/2 cups granulated sugar
1 cup (2 sticks), plus 2 tablespoons unsalted butter
Zest from 1 lemon
3/4 cup fine semolina (preferably Greek)
3 large eggs
1/4 cup olive oil
2 tablespoons ground cinnamon
9 sheets phyllo
3 tablespoons confectioners' sugar

Steps:

  • In a medium saucepan, combine the milk, 1 cup granulated sugar, 2 tablespoons butter, and lemon zest. Bring to a simmer over low heat. Whisk in semolina, and cook, stirring, until the mixture is thick, 6 to 8 minutes. Remove from heat, and whisk in eggs, one at a time. Return saucepan to heat, and cook, stirring constantly, for 30 to 40 seconds, to cook the eggs. Remove custard from heat, and let cool to room temperature.
  • Preheat oven to 325 degrees. In a small saucepan, melt remaining 2 sticks butter with olive oil; use some of this mixture to brush an 8-inch round nonstick springform baking pan. In a small bowl, combine remaining 1/2 cup granulated sugar and 1 tablespoon cinnamon.
  • Stack phyllo on a work surface, cover with parchment paper, and top with a damp kitchen towel. Working with one sheet of phyllo at a time, place one of the corners into the center of the pan and gently press the dough so that it fits tightly in the pan. Lay the corner of the second sheet of phyllo into the center of the pan, slightly overlapping the first sheet of phyllo. Press the second sheet tightly into the pan. Lay a third sheet of phyllo in the same manner, covering the remainder of the pan (one layer of dough is now completed). Using a pastry brush, brush the phyllo with a generous amount of the butter mixture. Lightly sprinkle with the cinnamon-sugar mixture.
  • Place three more sheets of phyllo into the pan in the same manner, brushing with the butter mixture and sprinkling with the cinnamon-sugar mixture. Repeat process again with the remaining 3 sheets of phyllo (you will now have completed three layers). Fill phyllo-lined pan with custard; spread evenly.
  • Working with one layer at a time, fold phyllo sheets toward the center of the pan. Brush generously with the butter mixture and sprinkle with the cinnamon-sugar mixture. Repeat folding, buttering, and sprinkling until all layers have been folded toward the center. Do not sprinkle the top layer as the cinnamon-sugar mixture may burn and darken the pastry. Prick all over with a fork, and bake, on a Silpat-lined baking sheet, until golden brown, about 1 hour.
  • Combine remaining tablespoon of cinnamon with the confectioners' sugar, and sprinkle over the surface of the phyllo when removed from oven. Let rest 5 to 10 minutes before slicing. Serve warm or at room temperature.

2 lbs baking apples
6 tablespoons sugar
1 lemon, zest of
1 tablespoon lemon juice (use the lemon you zested)
1/2 golden raisin
1/2 teaspoon cinnamon
4 sheets phyllo pastry, thawed
2 tablespoons butter, melted
powdered sugar, to dust

Steps:

  • Peel, core and dice apples.
  • Place them in a saucepan with sugar and lemon zest.
  • Drizzle the lemon juice over.
  • Bring to a boil, stirring well and then cook for 5 minutes or until apples are soft.
  • Stir in the golden raisins and cinnamon.
  • Pour mixture into a 5 cup pie dish.
  • Level top with a spoon and let cool.
  • Preheat oven to 350F.
  • Place a pie funnel in the center of the fruit.
  • (alternately, insert several pieces of macaroni or penne pasta.) The function of this is to let the steam that builds up under your crust vent.

4 1/4 cups of whole milk
1 lemon peel (sliced)
1 1/4 cups sugar (granulated)
3/4 cup of semolina
4 eggs
1/4 teaspoon of vanilla extract
12 sheets of phyllo dough
6 ounces of butter (melted)
Optional garnish: sugar (confectioner's) and ground cinnamon for sprinkling

Steps:

  • Gather the ingredients.
  • Warm the milk and lemon peel in a saucepan. Stir in semolina with a wooden spoon until the mixture is thoroughly blended and thickened.
  • In a mixing bowl, beat the eggs, sugar, and vanilla until light and add to the pan, stirring over medium-low heat until the mixture reaches a creamy custard consistency.
  • Remove from heat, take out and discard the lemon peel, and allow the mixture to cool completely. Stir occasionally to keep the custard from forming a skin on top.
  • Preheat oven to 350 F (180 C).
  • Lightly brush a baking pan (13 x 9 x 2 or equivalent) with butter.

Steps:

  • Stir 1 1/4 cups sugar and 2/3 cup water in heavy medium saucepan over medium heat until sugar dissolves. Add cinnamon sticks and 1/2 teaspoon orange peel and simmer 2 minutes. Set syrup aside to cool.
  • Preheat oven to 350°F. Mix semolina and 1/2 cup sugar in heavy medium saucepan. Whisk in milk and 4 tablespoons melted butter; bring to boil, whisking occasionally. Boil until mixture is thick and creamy, whisking constantly, about 3 minutes. Remove from heat. Whisk eggs and 1/2 teaspoon orange peel in medium bowl to blend. Gradually whisk in semolina mixture. Mix in vanilla. Cool filling completely.
  • Lightly butter 10-inch glass pie dish. Place 1 phyllo sheet in bottom of dish. Brush with melted butter. Top with second sheet. Continue layering with 3 more sheets, brushing each with butter. Spoon filling into dish. Top with 5 more phyllo sheets, brushing each with butter. Using scissors, trim excess phyllo from sides of dish. With very sharp knife, score tip of phyllo sheets, forming diamond pattern.
  • Bake pie until phyllo is golden brown and filling is set, about 45 minutes. Transfer pie to rack. Immediately strain 1 cup cooled syrup over pastry. Cool completely. Cut into wedges and serve.
