Steps:
- Make cups:
- Preheat oven to 375°F.
- Cover stack of phyllo with 2 overlapping sheets of plastic wrap and a dampened kitchen towel. Put 1 phyllo sheet on a work surface and brush with some butter, then top with 2 more sheets of phyllo, brushing each with butter.
- Cut buttered stack into 6 (4 1/2-inch) squares with a sharp knife, trimming sides as needed. Line each of 6 muffin cups with a square. Make 6 more phyllo cups (4 are extra, in case of breakage) in same manner with remaining pastry sheets and butter.
- Bake cups in middle of oven until golden, about 8 minutes, then cool completely in pan on a rack.
- Make filling:
- Increase oven temperature to 400°F.
- While cups are cooling, melt butter in a 3-quart heavy saucepan over moderately low heat, then whisk in flour. Cook roux, whisking, 3 minutes. Add milk in a stream, whisking, and bringto a boil, whisking. Reduce heat and simmer, whisking occasionally, 5 minutes. Remove from heat and whisk in mustard, yolks, and 1/4 cup Parmigiano-Reggiano until combined, then fold in goat cheese. (Cover surface of mixture with wax paper if not using immediately.)
- Beat egg whites in a large bowl with an electric mixer until they just hold stiff peaks. Fold one third of whites into sauce to lighten, then fold in remaining whites gently but thoroughly.
- Spoon batter into 8 phyllo cups and sprinkle with remaining Parmigiano-Reggiano. Bake in middle of oven until soufflés are puffed and golden, about 15 minutes.
- Make salad while soufflés bake:
- Whisk together vinegar, mustard, and salt in a bowl, then add oil in a slow stream, whisking until emulsified.
- Just before soufflés are ready, toss frisée and radishes in a large bowl with just enough dressing to coat. Mound salad onto 8 plates and sprinkle with chives, then make a small nest in center of each.
- Place a soufflé cup in each salad and serve immediately.

- Add about 1 teaspoon of goat cheese to each phyllo cup. Bake for 10 minutes, or until cups are starting to turn golden and goat cheese is soft.
- Remove from oven and top each cup with about 1/2 teaspoon of fig jam. (I prefer to have more goat cheese than jam in each cup so that it isn't overly sweet.) Serve immediately.

- For a bit of extra crispness, preheat oven to 350°F and lightly toast phyllo shells for 5-6 minutes or until edges are golden. This step is optional but adds extra crunch!
- Finely dice your tomato. I like to use Roma or plum tomatoes for these but other varieties will work as long as they're ripe. If using a block of feta, crumble and measure out 1/3 cup. Slice green onions with a chef's knife or with kitchen scissors.
- Combine tomatoes, feta, and green onion with olive oil and a squeeze of fresh lemon juice. Season with dried basil, garlic powder, salt, and pepper. Mix well and adjust ingreidents to taste.
- Spoon into lightly toasted phyllo shells and enjoy! I use a 1/2 TBSP measuring spoon to add a heaping spoonful to each phyllo cup.

- Bring the chicken stock to a boil in a saucepan and drop in the pearl onions. Reduce the heat to medium and simmer until the onions are very tender, 30 to 45 minutes. Drain and set aside.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll the cheese log in the chopped herbs.
- Layer the phyllo sheets on a piece of parchment paper, brushing each sheet lightly with melted butter. Work quickly so that the phyllo doesn’t dry out or it will crack when you roll it.
- Place the goat cheese log along the long edge of the stacked phyllo. Tuck the ends of the dough over the ends of the log. Using the parchment paper as a guide, roll up the dough tightly, completely enclosing the goat cheese. Brush the roll with melted butter and egg wash, and score into portions, cutting one-third the depth of the strudel. Place on the parchment-lined baking sheet and bake for 20 minutes, until golden brown.

- Fig and Goat Cheese Bites in Phyllo Cups. Cheese and fruit are a classic combination, especially when the cheese is soft and creamy. In this case, it’s soft, creamy, and wonderfully tangy.
- Mini-Apple, Cheddar & Bacon Fillo Snack Tart Recipe. Here’s another terrific salty-sweet phyllo cup appetizer that I’ll bet even the kids will love. Start with diced apple, cinnamon, and honey, tossing it all together until the apples are fully coated.
- Phyllo Shells Sweet Potato Bites. These mini-sweet potato pies will be the talk of your next holiday party. I love these because you can have a portion or two of sweet pie and still have room for other tasty dishes.
- Mediterranean Phyllo Cups. I almost always think of olive oil, roasted red peppers, olives, and feta when I think of Mediterranean flavors. Their food is always so bright and fresh, and there is usually a tangy dressing involved.
- Bruschetta Phyllo Cups. Although there are endless different recipes for bruschetta, the original and most popular is a combination of garlic, tomatoes, olive oil, and sometimes balsamic.
- Spinach Artichoke Dip Phyllo Cups. After more than a year of social distancing and lockdowns, I understand why some people may be reluctant to share a bowl of delicious spinach and artichoke dip.
- Jalapeño Popper Cups. Jalapeño poppers are such a tasty appetizer, but they can be a pain to make. First, you’ll need to prep the chilis and filling.
- Whipped Feta Strawberry Phyllo Cups. Although these are billed as a dessert, if you drizzle over a touch of balsamic and maybe some cracked black pepper, they make such a light and bright little appetizer.
- Green Bean Casserole Cups. I always make a batch of these when I know my vegetarian family and friends are coming over. Between the beans and earthy mushrooms, they’re always a hit.
- Pimento Cheese Fillo Cups. Pimento cheese is a southern dip made using cheddar and cream cheese, pimento peppers (typically sweet and not spicy), mayonnaise, and a selection of spices.
