10 lb mixed beef leg bones, shin, knuckle and marrow bones
12 oz ginger, 2 large hands, halved lengthwise
1 head large garlic, halved crosswise
4 kg medium yellow onion, halved lengthwise
8 sticks cinnamon
¼ cup whole black peppercorn
6 pods whole star anise
1 lb beef brisket
kosher salt
¼ cup fish sauce, plus more to taste
1 lb boneless sirloin steak
1 lb flat rice noodle, cooked according to package instructions
2 cups fresh mung bean sprouts
1 small red onion, very thinly sliced lengthwise
1 jalapeño, sliced into thin rounds
1 large bunch fresh thai basil
1 lime, cut into wedges
hoisin sauce
siracha

Steps:

  • Place the beef bones in a large stock pot, then add enough cold water to cover by 2 inches (5 cm). Bring the mixture to a boil over high heat and cook for 10 minutes to blanch the bones and remove any impurities.
  • Set a rack in the upper third of the oven and preheat the broiler.
  • Drain the bones in a colander and rinse under cold running water. Return the blanched bones to the stockpot.
  • Meanwhile, arrange the ginger, garlic, and onions cut-side up on a rimmed baking sheet and broil on high until the aromatics are deeply charred in spots, 5 minutes. Remove from the oven and add to the stockpot with the bones.
  • Meanwhile, combine the cinnamon sticks, peppercorns, and star anise in a medium skillet over medium-high heat and toast, shaking the pan occasionally, until the spices are darkened in spots and extremely fragrant, about 5 minutes. Add the toasted spices to the stockpot.
  • Season the brisket liberally with salt and add it to the stockpot.
  • Fill the pot with enough cold water to cover everything by 1 inch (2 cm). Bring to a boil over high heat, then reduce the heat to medium to maintain a gentle simmer, skimming off and discarding any fat that floats to the top as needed, until the brisket is fork-tender, 2-3 hours.
  • Using tongs, transfer the brisket to a plate and let cool completely. Refrigerate the brisket until ready to serve.
  • Continue to simmer the broth to get as much flavor out of the bones as possible, 3-4 hours more.
  • Using tongs, remove and discard the bones and aromatics. Slowly strain the broth through a fine mesh strainer set over a large pot. Skim and discard the fat from the broth, then stir in the fish sauce. Taste and add more as desired.
  • Thinly slice the brisket. Very thinly slice the raw sirloin steak against the grain.
  • Divide the noodles among 6-8 large bowls, then top with the brisket and raw steak. Ladle the hot broth over the noodles and meat and serve immediately with the bean sprouts, onion, jalapeño, Thai basil, lime wedges, hoisin sauce, and Sriracha alongside.

2 3-inch (7 to 8 cm) pieces ginger, cut in half lengthwise ((no need to peel))
2 onions ((peeled))
5 pounds beef marrow or knuckle bones
2 pounds beef chuck ((cut into 2 pieces))
5 quarts water
2 scallions ((cut into 4-inch lengths))
1/3 cup fish sauce
2 ½ ounces rock sugar ((2 1/2 tablespoons granulated sugar))
8 star anise
6 cloves
1 cinnamon stick
1 black cardamom pod ((optional))
2 teaspoons fennel seeds
2 teaspoons coriander seeds
1 tablespoon salt
1 pound dried pho noodles
1/3 pound beef sirloin ((slightly frozen, then sliced paper-thin against the grain))
Sliced chili
Thinly sliced onion
Chopped scallions
Cilantro
Mung bean sprouts
Thai basil
Lime wedges

Steps:

  • Place the bones and beef chuck in large stockpot and add water to cover. Bring to a boil and boil for 5 minutes. Drain in a colander and thoroughly clean the stockpot. This process removes any impurities/scum and will give you a much cleaner broth.
  • Meanwhile, char your ginger and onions. Use tongs to hold the ginger and onions (one at a time) over an open flame, or place each directly on a gas burner. Turn until they're lightly blackened and fragrant, about 5 minutes. Rinse away all the blackened skins.
  • Add water (5 quarts/4.75 L, or more/less if you've scaled the recipe up or down) to the stockpot and bring to a boil. Transfer the bones and meat back to the pot, along with the charred/cleaned ginger and onions. Add the scallions, fish sauce and sugar. Reduce the heat to low, and simmer until the beef chuck is tender, about 40 minutes. Skim the surface often to remove any foam and fat.
  • Remove one piece of the chuck and transfer to a bowl of ice water to stop the cooking process. Then transfer this piece of beef to a container and refrigerate (you will slice this to serve with your pho later. If you were to leave it in the pot, it would be too dry to eat). Leave the other piece of chuck in the pot to flavor the broth.
  • Now toast the spices (star anise, cloves, cinnamon stick, cardamom, fennel seeds, and coriander seeds) in a dry pan over medium low heat for about 3 minutes, until fragrant. Use kitchen string to tie up the spices in a piece of cheesecloth, and add it to the broth.
  • Cover the pot and continue simmering for another 4 hours. Add the salt and continue to simmer, skimming as necessary, until you're ready to assemble the rest of the dish. Taste the broth and adjust seasoning by adding more salt, sugar, and/or fish sauce as needed.
  • To serve, boil the noodles according to package instructions. Add to a bowl. Place a few slices of the beef chuck and the raw sirloin on the noodles. Bring the broth to a rolling boil and ladle it into each bowl. The hot broth will cook the beef. Garnish with your toppings, and be sure to squeeze a lot of fresh lime juice over the top!

2 beef shanks with meat on them (about 2 1/4 pounds total)
3 large yellow onions, halved
1 6-inch piece ginger, halved lengthwise
1 head garlic, halved crosswise
2 tablespoons vegetable oil
Kosher salt
2 cinnamon sticks
4 star anise pods
3 tablespoons black peppercorns
3 quarts low-sodium beef broth
1/3 cup fish sauce
1 pound flat rice noodles
8 ounces deli-sliced roast beef, torn into pieces
4 cups bean sprouts
1 large bunch Thai basil or mint, leaves torn
2 jalapeno peppers (red and/or green), thinly sliced
1 large red onion, thinly sliced
Hoisin sauce and/or Sriracha (Asian chile sauce), for serving

Steps:

  • Make the broth: Position a rack in the upper third of the oven and preheat to 450 degrees F. Toss the beef shanks, onions, ginger and garlic with the vegetable oil on a rimmed baking sheet and season generously with salt. Roast, turning once halfway through, until the meat and vegetables are slightly charred, about 30 minutes. Transfer to a large pot.
  • Meanwhile, toast the cinnamon sticks, star anise pods and peppercorns in a small skillet over medium heat, shaking the pan, 5 minutes.
  • Add the beef broth, 2 quarts water, the toasted spices and the fish sauce to the pot with the beef shanks. Bring to a boil, then reduce the heat to maintain a gentle simmer. Cook, skimming off any foam that rises to the top, until the meat is tender, 1 hour to 1 hour, 30 minutes. Remove from the heat and transfer the beef shanks to a cutting board; strain the broth through a fine-mesh sieve into another large pot. (The broth can be made up to 2 days ahead; let cool, then refrigerate in a covered container.)
  • Shred the meat from the shanks with two forks, discarding any bits of cartilage, then stir back into the broth. Discard the bones.
  • Cook the noodles as the label directs. Divide the broth and shredded meat among bowls, then add the noodles and roast beef. Top with the bean sprouts, basil, jalapenos and red onion; serve with hoisin sauce and/or Sriracha.

Vietnamese Chicken Pho Ga - A tasty and fragrant chicken noodle soup full of vibrant flavours.

1 organic whole chicken (small)
1 Tbspn oil
ginger, 1 inch sliced
1 onion, finely chopped
2 Tbspn fish sauce
3 whole star anise
1 cinnamon stick
1 Tbspn coriander seeds
1/4 tspn black pepper corns
1/4 tspn chinese five spice powder
1 tspn coconut sugar
1 Tspn salt
Dried flat rice noodles 400g/14oz
4 spring onions
2 cups mung bean sprouts
1 cup fresh coriander (cilantro)
1 cup fresh mint (Vietnamese mint)
1 cup thai basil (optional)
1 chili freshly chopped (optional)
6 lime wedges

Steps:

  • In a small saucepan add the oil and gently saute the onion and ginger for a couple of minutes until golden. Set aside.
  • Clean and rinse the chicken in cold water, remove excess fat and roughly cut into four pieces.
  • In a large pot place the chicken and top with enough cold water to cover the chicken. Add the onions, ginger, spices, fish sauce and salt. Bring to a boil and then simmer over a low heat uncovered for 25 minutes. Discard any scum that comes to the surface.
  • Check the chicken is cooked, remove with tongs and set aside for shredding into bite sized pieces.
  • Add the bones back into the broth and simmer (don't let boil) for another 25 minutes to 60 minutes if time permits.
  • Meanwhile prepare any fresh vegetables and cook the rice noodles according to the packet, do not over cook.
  • Once the broth is cooked discard the bones and strain the broth through a sieve. Taste and season with more fish sauce if needed.
  • Assemble the cooked noodles into bowls. Top with the shredded chicken. Pour the chicken broth evenly over each bowl. Top with carrot, mung beans, fresh herbs and fresh chili as desired.
  • Serve with a lime wedge and chili sauce if desired.

10 whole cloves
6 pieces star anise
2 sticks Vietnamese cinnamon
2 black cardamom pods
2 teaspoons whole black peppercorns
2 teaspoons coriander seeds
1 teaspoon fennel seeds
1 (4-inch) piece ginger, halved lengthwise
2 large onions
4 shallots
1/3 cup Vietnamese fish sauce
1 (1 1/2-inch) piece yellow rock sugar
1 (16-ounce) package pho rice noodles
1/2 onion, halved lengthwise and thinly sliced
4 to 5 scallions, thinly sliced
8 ounces eye of the round, frozen until firm and thinly sliced
Vietnamese cilantro, for serving

Steps:

  • Make the broth: Fill a large stockpot with water and bring to a boil over high heat. Add bones, oxtail, and brisket to boiling water and cook for 5 minutes. Drain and return to stockpot.
  • Meanwhile, place cloves, star anise, cinnamon, cardamom, peppercorns, coriander seeds, and fennel seeds in a medium skillet and toast over medium high heat until fragrant, 2 to 3 minutes. Transfer spices to a plate to cool; set aside.
  • Preheat broiler. Place onions, shallots, and ginger on a baking sheet and place under broiler until blistered and charred. Alternatively, using tongs, hold onions, shallots, and ginger individually over an open flame; transfer onions, shallots, ginger, and spices to stockpot with bones and meat.
  • Add enough water to stockpot to cover bones, meat, onions, shallots, and ginger (32 to 40 cups). Place stockpot over medium-high heat and bring to a simmer. Let simmer 6 to 8 hours, skimming impurities from the top as necessary.
  • Remove brisket from stockpot and transfer to refrigerator; chill until firm before thinly slicing. Remove bones, oxtail, and large pieces of onions and ginger from stockpot and discard. Strain broth through a fine-mesh sieve lined with cheesecloth; discard solids. Stir in fish sauce and yellow rock sugar. Skim any remaining fat from surface (refrigerating broth overnight will make this easier) and discard.
  • To serve: Place noodles in a large bowl and add enough water to cover; let soak 30 minutes and drain.
  • Bring broth to a simmer over medium-high heat. Bring a large pot of water to a boil over high heat; add soaked noodles and cook, swishing noodles to release starch and prevent clumping. Immediately divide noodles evenly between 8 to 10 serving bowls. Top with sliced onions, scallions, and eye of the round and brisket sliced. Ladle over hot broth and serve immediately with cilantro, Thai basil, lime wedges, bean sprouts, chile, chile sauce, and hoisin sauce.

1l low salt beef stock
1 large onion, peeled and cut into quarters
large thumb-sized piece ginger, peeled
1 cinnamon stick
2 star anise
1 tsp coriander seeds
½ tsp cloves
230g sirloin steak
1 tsp palm sugar
1 tbsp fish sauce
1 ½ tbsp soy sauce
200g flat rice noodles
2 spring onions, shredded
1 small red (bird's-eye) chilli, finely sliced
handful each of Thai basil and coriander
1 lime, cut into wedges

Steps:

  • Tip the beef stock along with 500ml of water into a large saucepan. Sit the onion and ginger in a frying pan over a high heat and char on all sides, around 3-5 mins (you can also do this under your grill). Once charred, add to the beef stock. In the same pan, toast the spices for 2-3 mins and once they begin to smell fragrant, add them to the beef stock as well. Bring the stock to the boil, then turn to a simmer and cook for 30mins before straining.
  • Meanwhile, cut the fat from the steak and wrap in cling film, then put into the freezer for 15 mins - this will make your steak really easy to slice! Slice it thinly, then cover with cling film again and pop into the fridge.
  • Taste the beef stock and use the palm sugar, fish sauce and soy to season. Cook the noodles according to package instructions and split between two bowls, topping each with the sliced beef. Bring the stock to the boil and then pour into the bowls (the heat will cook the beef). Top each with the spring onions, chilli slices and herbs. Serve with the lime wedges to squeeze over.

1 lb oxtail
1/2 medium onion (charred)
2 oz ginger (halved lengthwise and charred, about 3")
8 cups water
5 star anise
1 cinnamon stick
1/2 tsp cloves
1/2 tsp coriander seeds
1/2 tsp peppercorns (white preferred)
5 cardamom pods
1/2 tsp fennel seeds
1/2 tsp whole cumin seeds
1 lb brisket
1 lb sirloin (thinly sliced)
2 tbsp fish sauce
2 tbsp sugar (or to taste)
1-3 tsp sea salt (or to taste)
4 portions fresh pho noodles (or dried)
4 lime wedges
1 cup bean sprouts (raw or blanched)
4 springs Thai Basil
4 springs cilantro
1/2 medium onion (thinly sliced)

Steps:

  • Bring a small pot of water to the boil and blanch the oxtails for 5 minutes. Bring a second, larger pot with 8 cups of water to a boil.
  • Transfer the oxtails to the second pot along with the charred onion, charred ginger, and 8 cups of water. Simmer on low for 3.5 hours.
  • Char pho spice mix, then add to the pho soup along with the brisket and continue simmering for another 2 hours (5.5 hours total)
  • Transfer the brisket to its own container, then strain and separate the pho soup. Refrigerate both.
  • Skim the solidified fat from the pho soup with a fork and melt over low heat, then strain and refrigerate in a new small container. Prepare pho toppings as needed, cover and refrigerate.
  • Combine the pho soup with enough water to make 8 cups, then season with fish sauce, sugar, and salt, if needed. I like 1 tsp of fine sea salt, but you should feel that your pho is on the verge of being too salty to compensate for the unsalted meat and noodles. Bring the soup to a low simmer. Slice the cold brisket and drop into the soup to reheat.
  • Bring a large pot of water to the boil and cook the noodles halfway, then rinse in cold water and drain. Heat up the bowls with hot tap water for 5 minutes, the drain. Divide the pho noodles evenly between bowls.
  • Slice sirloin if necessary, then divide between bowls along with brisket.
  • Ladle pho broth overtop, serve and enjoy immediately with many toppings.

This easy Vietnamese inspired Pho is my quick and easy adaptation that's perfect when you're tight on time. It's made with rice noodles, broth, and choice of chicken, beef, pork or shrimp.

8 oz dried rice vermicelli noodles
Desired meat: chicken, pork, steak or raw shrimp* ((See notes))
1 large yellow onion (, quartered)
2 (2-inch pieces) fresh ginger (, unpeeled and halved, length-wise)
6 cups broth ((chicken, beef or vegetable, depending on protein choice))
2 cups water
1/4 tsp ground coriander
1 whole clove ((optional))
1 1/2 Tablespoons fish sauce ((or less, to taste preference))
¼ teaspoon hoisin sauce
1/4 teaspoon soy sauce
¼ teaspoon red chili paste ((sambal oelek))
1 stick cinnamon
salt and freshly ground black pepper
4 green onions (, chopped)
2 fresh jalapeño peppers or red thai chili peppers (, thinly sliced and seeds removed)
1 bunch fresh cilantro (, chopped)
1 bunch Thai basil leaves
1 cup fresh bean sprouts

Steps:

  • Place a large dry pot over medium heat add the onion halves and ginger pieces. Cook for 4 minutes, stirring occasionally.
  • Add the broth, water, coriander, clove, fish sauce, hoisin sauce, soy sauce, chili garlic paste, cinnamon stick and a pinch of fresh cracked salt and pepper to the pot. Bring to a slow boil, then reduce heat and simmer for 30 minutes.
  • Meanwhile, prepare noodles according to package instructions. Once soft, drain, rinse and set aside.
  • Ready the garnishes in individual small bowls for serving: cilantro, basil, green onions, bean sprouts, lime wedges and sliced chilies.
  • 1-5 minutes before the broth is done cooking, add desired meat to the broth to cook, just until done (2-3 minutes for raw, thinly sliced chicken or pork, 1-2 minutes for shrimp or thinly sliced steak).
  • Discard the ginger, clove, cinnamon stick and onion pieces from the pot.
  • Divide the noodles among bowls; ladle broth on top (and meat). Add desired toppings.

QUICK BEEF PHO



Quick Beef Pho image

I wrote this recipe for fast pho because you don't always want to take a whole day to source the ingredients for and make pho from scratch. This is an awesome hack to be eating pho in an hour! You can find all the ingredients locally and even have them delivered. Slicing beef paper thin can be a pain. Japanese and Chinese markets always stock paper-thin meats for shabu shabu or sukiyaki.

2 tablespoons (30 g) beef bouillon or base
1 tablespoon (15 g) Vietnamese fish sauce
1 tablespoon (15 g) white sugar
One (2" [5-cm]) piece ginger, sliced into thin tiles
1/2 yellow onion, large dice
Pinch kosher salt
2 whole cloves
2 whole star anise
1 cinnamon stick
1/2 pound (240 g) thin rice stick noodles, rinsed
1/2 pound (240 g) beef strip loin or fillet, shaved thin
1 cup (240 g) Vietnamese basil leaves
1 cup (240 g) bean sprouts
1/2 cup (95 g) cilantro leaves
5 jalapeno or serrano chiles, sliced thin
4 scallions, sliced thin on the bias
1/2 yellow onion, sliced paper thin
1 lime, cut into wedges
Hoisin sauce, for the table
Chili sauce, such as Sriracha, for the table

Steps:

  • For the Pho Stock: Add the beef base and 1 quart water to a 2-quart (1.9-L) saucepan and bring to a low boil. Add the fish sauce, sugar, ginger, onion and salt to the stock and reduce the heat to a simmer. Wrap the cloves, star anise and cinnamon stick in a piece of cheesecloth and tie it into a satchel. Add the satchel to the broth and simmer for at least 30 minutes, but no more than 45 minutes.
  • Around the 30 minute mark, taste the broth to see that the spice flavors have been extracted, and adjust seasonings if necessary. Strain the aromatics and satchel from the broth, return to a sauce pot, and reserve for assembly.
  • For the assembly: Bring the broth back to a simmer. In a separate pot, bring water to a boil. Using a sieve or basket, quickly dip the noodles into the water until they are hot and al dente, 10 to 20 seconds. Drain the excess water from the noodles and distribute the noodles between 4 bowls.
  • Top each bowl with some sliced beef, basil, bean sprouts, cilantro, jalapeno, scallions and onion, or as each person wishes. Ladle in enough broth to cover the ingredients in the bowl. Garnish with a lime wedge. I like to serve pho with Sriracha and hoisin sauce.

We realize our recipe may look daunting, but this is quite simple to do and there is a lot of inactive time while you wait for the broth (we've just been extra tedious to share everything we know).

1/4 cup fish sauce
1-inch piece yellow rock sugar (see note below)
1 pound small (1/8-inch wide) dried or fresh "banh pho" noodles (see note)
1/2 pound raw eye of round, sirloin or tri-tip steak, thinly sliced across the grain (see note)
1/4 cup thinly sliced onions (see note)
1/4 cup chopped cilantro leaves
Sprigs of fresh mint and/or Asian/Thai basil
Bean sprouts
Thinly sliced red chilies (such as Thai bird)
Lime wedges
Fish sauce
Hoisin sauce

Steps:

  • Add beef bones to a large pot that will hold at least 10 quarts. Then, cover bones with cold water. Place pot onto high heat and bring to a boil. Boil for 3 to 5 minutes. During this time, impurities and foam (or scum) will be released and rise to the top. Drain bones, discarding the water. Then, rinse bones with warm water and scrub stockpot to remove any residue that has stuck to the sides. Add the bones back to the stockpot and cover with 6 quarts of cold water.
  • Meanwhile, move an oven rack to a high position then turn broiler to high. Line a baking sheet with aluminum foil. Place quartered onions and halved ginger onto baking sheet then broil for 10 to 15 minutes, turning onions and ginger occasionally so that they become charred or browned on all sides.
  • Add cinnamon sticks, coriander seeds, fennel seeds, star anise, cloves and the black cardamom pod to a dry frying pan. Place onto low heat and cook, stirring occasionally until fragrant. About 5 minutes. Place toasted spices into a cotton muslin bag/herb sachet or cheesecloth then tie with butchers twine to seal.
  • Bring stockpot with parboiled bones and water to a boil then lower to a gentle simmer. Add charred onion and ginger as well as the bag or sachet of toasted spices. Add 1 1/2 tablespoons of salt, a 1/4 cup of fish sauce and the rock sugar. Continue to simmer broth, uncovered, for 3 hours. If at any time foam or scum rises to the surface, use a spoon to remove it.
  • Use tongs or a wide mesh spoon to remove bones, onion and ginger from broth then strain broth through a fine mesh strainer. The broth will have a layer of fat at the the top. There are two ways to remove this. First, if you plan to enjoy the broth now, skim the fat from the top of the broth using a spoon. If you do not mind waiting, you can also pour broth into containers then refrigerate overnight. As the broth cools, the fat will solidify, making it very easy to remove.
  • Bring the broth to a gentle simmer over medium heat.
  • If you are using dried noodles, add noodles to a bowl then cover with hot water and soak for 15 to 20 minutes until soft and opaque. If you are using fresh, add to a colander then rinse with cold water.
  • To cook the noodles, bring a medium saucepan filled with water to a boil. Place noodles into boiling water and cook for about 10 seconds or until they collapse. Drain noodles then divide between bowls. (We like to fill each bowl by 1/3 with noodles).
  • Arrange slices of raw meat into bowls, and then top with the hot broth. Finish broth with onion slices and cilantro. Serve bowls with a plate of optional garnishes listed above.

Using this recipe, you'll be able to whip up a tasty bowl of pho soup without anything going wrong. Even though the total cook time is a little intimidating, don't worry. Most of that time is spent waiting for the soup to simmer so that all the flavors of your ingredients can mix together. Use all the helpful tips that this article pointed out above so that you can have the best pho you've ever had.

Your Aromatics:
4.5 oz ginger (slice them right down the center)
2 Onions (cut them in half)
Your Spices
2 tbsp of coriander seeds
9 individual star anise
2 cloves
5 cinnamon quills
3 cardamon pods
Beef:
2.5 lb marrow (From the leg or knuckle. Saw them in half)
2.5 lb beef brisket (half moist, half dry)
4 quarts water
1.5 lb beef bones
Your Seasoning:
3 tbsp fish sauce
1.5 tbsp sugar
1.5 tbsp salt (sea salt for best taste)
Fixings:
3 - 5 brisket slices
2 oz rice sticks
1 oz beef tenderloin (slice it thin and keep raw)
Your Toppings:
4 - 5 sprigs Thai basil
4 - 5 sprigs coriander or cilantro
Bean sprouts (as much as you want)
Hot Chili Sauce (optional)
Lime wedges served on the side

Steps:

  • Prep
  • Throw your aromatics, without oil, on the skillet until you see smoke.
  • With the cut side faced-down, throw your onion and ginger on the skillet. Char on each side for a few minutes. Remove from the pan and put the pieces aside.
  • For about 3 minutes, toast your spices on medium heat in a pan.
  • Clean Bones and Meat
  • Rinse bones & brisket then cover with water in a large stockpot.
  • Let everything boil for about 5 minutes and then drain all your water.
  • After you're done, rinse all your bones and brisket under tap water.
  • Making the Broth:
  • Rinse and wipe out your pot and then take 4 quarts of water to boil.
  • Once the water is boiling, add your bones, onion, ginger, brisket, and spices.
  • Add the sugar and salt as well, you've done it right if the water barely covers your ingredients.
  • Put your lid on and then let everything simmer for the next three hours.
  • Take your brisket out if it's tender enough to fall apart and then throw it in the fridge for later.
  • Keep the lid off and let all your ingredients simmer for another 40 minutes.
  • Now you want to take out all the bigger pieces, strain your broth while pouring it into a different pot. Throw away your bones and spices that are left.
  • Now you can add a little fish sauce, salt, and sugar until it taste just right. The broth should be mostly savory with a hint of sweet.
  • Putting it Together:
  • Get your pho noodles ready to add before serving.
  • Throw your noodles in the bowl and then add your raw beef and brisket.
  • Pour over your hot broth until the bowl is about 2 inches from the top of the bowl. The broth will continue to cook the raw beef to a perfect medium-rare.
  • Put your bowl on a plate and then put all your toppings to the side.

4 pounds beef soup bones
1 onion, unpeeled and cut in half
5 slices fresh ginger
1 tablespoon salt
2 pods star anise
2 ½ tablespoons fish sauce
4 quarts water
1 (8 ounce) package dried rice noodles
1 ½ pounds beef top sirloin, thinly sliced
½ cup chopped cilantro
1 tablespoon chopped green onion
1 ½ cups bean sprouts
1 bunch Thai basil
1 lime, cut into 4 wedges
¼ cup hoisin sauce
¼ cup chile-garlic sauce (such as Sriracha®)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place beef bones on a baking sheet and roast in the preheated oven until browned, about 1 hour.
  • Place onion on a baking sheet and roast in the preheated oven until blackened and soft, about 45 minutes.
  • Place bones, onion, ginger, salt, star anise, and fish sauce in a large stockpot and cover with 4 quarts of water. Bring to a boil and reduce heat to low. Simmer on low for 6 to 10 hours. Strain the broth into a saucepan and set aside.
  • Place rice noodles in large bowl filled with room temperature water and allow to soak for 1 hour. Bring a large pot of water to a boil and after the noodles have soaked, place them in the boiling water for 1 minute. Bring stock to a simmer.
  • Divide noodles among 4 serving bowls; top with sirloin, cilantro, and green onion. Pour hot broth over the top. Stir and let sit until the beef is partially cooked and no longer pink, 1 to 2 minutes. Serve with bean sprouts, Thai basil, lime wedges, hoisin sauce, and chile-garlic sauce on the side.

  • Place a wire cooling rack over the flame of a burner, set to high heat. Place ginger and onions on the rack and turn it occasionally until the skin becomes slightly blackened on all sides. It will take about 10 to 15 minutes.

  • Now the fun part! Add a handful of noodles to each individual serving bowl. Portion the steak between each serving bowl. Then ladle the still-simmering hot broth into the serving bowls, being sure to submerge the steak completely so that it gets cooked*. Top each bowl with lots and lots of garnishes, and finish with a squeeze of lime juice.
