MEAT AND POTATO STUFFING
This is my take on an old family favorite.My Mom made it all my life and now I make it for my family.I like it as a side dish with turkey gravy .I hope you give it a try.

Steps:
- peel and boil potatoes.
- dice onion.
- cook onion and meats in fry pan
- drain fat.
- mash cook potatoes and cooked meat mixture together.
- add salt,pepper and bell's to taste.
- may be eaten as is or used as stuffing.

- Preheat oven to 350 degrees.
- Finely chop the onion and celery.
- Saute onion and celery in butter.
- Add bread cubes, beaten eggs, chicken broth, salt and pepper.
- Add mashed potatoes.
- Bake in a casserole dish for 30 minutes, until golden brown on top.

MEMERE'S MEAT PIE AND MEAT STUFFING
My grandmother makes this every year as a Thanksgiving stuffing, while the meat pie version is rarer. Both dishes are out of this world--two of my favorite things to have! I've always wanted to make this and actually watched her make it once, but I couldn't remember the recipe. Then, one day, when I was flipping through New McCall's Cookbook (an excellent volume), I saw her recipe stuck in one of the pages. Enjoy!!

Steps:
- Chop onions and celery and saute until soft.
- Lightly cook pork and drain off grease.
- Add ground beef to pork and cook 5 minutes.
- Transfer meat to deep pan, pot, or Dutch oven.
- Add onions and celery.
- Cook over low heat for 25 minutes, stirring occasionally to prevent sticking.
- Drain any grease that has surfaced, and remove from heat.
- Add seasoning, salt, and pepper.
- Add hot water and bread crumbs, and mix well.
- Cover and let stand for 30 minutes.
- While that's standing, preheat the oven to 350°F.
- Spoon meat mixture into pie crust and bake (in bottom shell) for 20-25 minutes. (Variation: add any amount of mashed potatoes after first 15 minutes.).
- Add top crust and seal. Bake until done.

PHIL PONZEK'S MEAT AND POTATO STUFFING

Steps:
- Combine celery leaves, diced onion and water in small saucepan. Bring to low boil and cook for 10 to 15 minutes until liquid reduces to 1/2 cup. Remove from heat, and crumble bread into mixture. Set aside.
- Put potatoes in medium-size saucepan, cover with salted water and bring to boil. Reduce heat to medium. Simmer for 20 to 25 minutes, until tender. Drain potatoes, put into large bowl and mash lightly, leaving some lumps. Add celery leaf, onion and bread mix, combining well.
- Cook sausage in large skillet for 5 to 6 minutes, stirring over medium-high heat. Add beef, and cook for 6 to 8 minutes, until no redness remains. Drain excess fat, if necessary, and add meat to mashed-potato mix. Season to taste with salt and pepper.
- Transfer to greased 9-by-12-inch shallow casserole. (If cooking in advance, cover and refrigerate overnight.) When ready to cook, preheat oven to 350 degrees. Add optional turkey liver and drippings to taste. Cover casserole with foil. Cook about 20 minutes, until heated through.
