This recipe is very simple yet delicious. Pheasant is normally a dry bird but this recipe keeps it wonderfully moist. It almost falls right off the bone!

4 small pheasants, cleaned and rinsed
½ pound sliced bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream
1 cup water
1 small onion, chopped
1 (1 ounce) package dry onion soup mix
1 (4.5 ounce) can sliced mushrooms
salt and ground black pepper to taste

Steps:

  • Place the pheasants into a large slow cooker. Wrap and drape the bacon over the birds, covering the pheasants as much as you can. Whisk the condensed soup, sour cream, water, chopped onion, onion soup mix, and mushrooms together in a mixing bowl. Season to taste with salt and pepper. Pour over the pheasants.
  • Cook on Low for 8 to 10 hours, or on High for 5 to 7 hours.

2 cups diagonally sliced carrots
2 tablespoons butter
1/4 teaspoon caraway seeds

1-1/3 cups milk
3 cups shredded cabbage
1 pound smoked sausage, cut into 1/2-inch diagonal slices

Steps:

  • In a large kettle, combine the carrots, butter and caraway seeds; cook over low heat until the carrots are just crisp-tender, about 5 minutes. , Add soup, water, milk, cabbage and sausage. Bring to boil; reduce heat and cook until cabbage is tender, about 15 minutes.

Bourbon Roasted Pheasant With Braised Cabbage image

1 tablespoon unsalted butter
4 1/2 tablespoons vegetable oil
2 large onions, peeled and chopped coarse
1 large green or white cabbage (about 2 1/2 pounds), cored, tough ribs removed and shredded
Salt to taste
Freshly ground pepper to taste
8 juniper berries
1 pheasant (about 2 to 2 1/2 pounds, dressed), cleaned, plucked and skinned
2 tablespoons Dijon mustard
1 medium-size whole onion
6 cloves
1/2 cup flour
1/2 cup bourbon or sour-mash whisky like Jack Daniel's
1/3 to 1/2 cup heavy cream
Chopped fresh parsley (optional)

Steps:

  • In a large, deep casserole, heat the butter and 3 tablespoons of the vegetable oil over medium-high heat. When the butter foams, add the chopped onions and saute until they are lightly colored, about 6 to 8 minutes. Add the cabbage and cook until it begins to color, about 10 minutes. Cover, leaving the lid askew, and cook for 20 to 25 minutes, stirring occasionally, until the cabbage is medium-brown. Remove from the heat, season with salt and pepper and add the juniper berries. Set aside.
  • Preheat the oven to 350 degrees. Wash the pheasant under cold water and dry well. Season the cavity with salt and pepper. Brush the inside of the bird with the mustard. Stud the whole onion with the cloves and place it inside the cavity. Tie the legs together and turn the wing tips under. Lightly dredge the bird in flour.
  • In a heavy skillet, heat the remaining oil over medium-high heat. Add the pheasant and brown lightly on all sides, about 6 to 8 minutes. Transfer the pheasant, breast side up, to the casserole dish with the cabbage mixture. Pack the cabbage mixture around and over the bird. Cover the casserole and place in the middle of the oven. Cook for 35 to 45 minutes, basting several times with the pan juices, until the leg moves easily in its socket and the juices run clear. Brush the cabbage off the top of the pheasant and bake uncovered for 10 minutes longer.
  • Remove the dish from the oven. Transfer the bird to a warm platter, untie the legs and discard the whole onion. Drain any cooking juices back into the casserole dish. Place it on the stove over high heat and carefully pour in the bourbon. Heat the liquid and stir for 2 to 3 minutes. Turn the heat down to medium, stir in the cream and cook for 3 minutes. Remove from the heat.
  • Cut up the pheasant and serve it on a bed of the cabbage mixture. Top with chopped parsley, if desired.

1 pheasant
1 cup bacon
1/2 cup diced carrots
1/2 cup chopped onion
1/2 cup diced celery
1/2 cup diced garlic
1 cup flour
Chicken stock
1/2 cup minced bacon
1/4 cup olive oil
1/4 cup minced garlic
1/2 cup diced carrot
1/2 diced onion
1/2 cup diced celery
1/2 cup diced red pepper
1 cup diced sweet potato
2 tablespoons chopped cilantro
Sliced pheasant meat
1 quart pheasant stock
Salt, cayenne, cardamom, cumin, coriander to taste

Steps:

  • Debone pheasant and reserve bones. Chop bones. To a sauce pan add bacon and cook until brown. Add carrots, onion, celery, garlic and cook mixture. Add flour. Stir until brown. Add bones and enough chicken stock to cover mixture. Cover, cook for 1 1/2 hours. Strain and reserve.;
  • In a pot, add bacon and oil and cook until brown. Add all vegetables and brown. Add cilantro, meat and stock and simmer until vegetables are cooked.
  • Season with spices.

1 pheasant (2 1/2 to 3 pounds), or the same weight of pheasant thighs and drumsticks
About 4 quarts water
4 sprigs fresh thyme
2 large onions (12 ounces each), 1 unpeeled, coarsely chopped, 1 peeled and cut into 3/4-inch dice
2 carrots (2 to 3 ounces each), 1 coarsely chopped; 1 sliced into 1/3-inch thick rounds (split the thick end lengthwise and cut into half-moons)
1 large stalk celery, coarsely chopped
1 clove garlic, crushed
2 dried bay leaves
1 heaping teaspoon black peppercorns
2 whole cloves
4 ounces slab (unsliced) bacon, rind removed (reserve it for the stock) and cut into 1/3-inch dice
Kosher or sea salt
4 tablespoons unsalted butter
1/4 teaspoon caraway seeds, finely chopped
1 pound Yukon gold, Maine, PEI, or other all-purpose potatoes, halved and sliced 1/3 inch thick
8 ounces Savoy cabbage (1/2 small head or 1/4 large head), cut into 3/4-inch pieces
Freshly ground black pepper
1/4 cup chopped fresh Italian parsley, for garnish

Steps:

  • With a cleaver, heavy chef's knife, or kitchen shears, split the pheasant in half, then cut the thighs and legs from the breasts. Place the 4 pieces of pheasant in a 6 to 8-quart stockpot and cover with the water. Bring to a boil, skimming off the white foam as it rises to the surface. (Using a ladle and a circular motion, push the foam from the center to the side of the pot, where it is easy to remove). Lower the heat so the broth is at a slow simmer.
  • Meanwhile, remove the leaves from 3 springs of thyme, reserving the stems, chop, and reserve (you should have 1 teaspoon). Add the thyme stems and the remaining thyme sprig to the broth. Also add the coarsely chopped onion and carrot, the celery, garlic, bay leaves, peppercorns, and cloves, along with the reserved bacon rind, to the pot. Season lightly with salt, partially cover, and simmer slowly for 2 hours.
  • Remove the broth from the heat. With tongs, transfer the pheasant pieces to a plate. When they are cool enough to handle, pull the meat off the bones, discarding the bones, and tear the meat into bite-sized pieces. Or cut the meat with a knife into rectangular strips that are approximately 1/2 by 1-inch. (If you used whole pheasant, you will have about 1 pound of meat). Cover and refrigerate until needed. Strain the broth through a fine-mesh strainer; you should have about 8 cups. If you are not making the chowder right away, let the broth cool a bit, then refrigerate; cover the broth after it has chilled completely. (The broth and meat can be prepared a day in advance if you like)
  • Heat a 4 to 6-quart heavy pot over low heat and add the bacon. Once it has rendered a few tablespoons of fat, increase the heat to medium and cook until the bacon is crisp and golden brown. Pour off all but 1 tablespoon of the fat, leaving the bacon in the pot.
  • Add the butter, the diced onion, the sliced carrot, the reserved thyme leaves, and the caraway seeds and saute, stirring occasionally with a wooden spoon, until the onion is softened but not browned.
  • Add the potatoes and the reserved pheasant broth, bring to a simmer, and simmer over medium heat for about 8 minutes, until the potatoes are cooked through but still firm. Add the cabbage and simmer for 5 minutes more, until it just begins to soften (it will continue to cook after the chowder is removed from the stove).
  • Remove the chowder from the heat, stir in the pheasant meat, and season to taste with salt and black pepper. If you are not serving the chowder within the hour, let it cool a bit, then refrigerate; cover the chowder after it has chilled completely. Otherwise, let it sit at room temperature for up to 1 hour, allowing the flavors to meld.
  • When ready to serve, reheat the chowder over low heat; don't let it boil. Use a slotted spoon to mound the pheasant, cabbage, onions, and potatoes in the center of large soup plates or shallow bowls, and ladle the clear broth around. Sprinkle each serving with a generous spoonful of chopped parsley.

ROAST PHEASANT WITH CABBAGE AND BACON

1 3 1/2- to 4-pound pheasant
2 tablespoons olive oil
Coarse sea salt and freshly ground pepper to taste
1 small head savoy cabbage (about 1 1/2 pounds)
4 ounces bacon, cut into small pieces
1 tablespoon fresh rosemary leaves
1/2 cup dry white wine
3/4 cup rich chicken stock

Steps:

  • Preheat the oven to 400 degrees. Brown the pheasant on all sides in the olive oil in a large, heavy casserole. Season with salt and pepper and roast breast down for 15 minutes, then turn and cook 15 more minutes breast side up.
  • Meanwhile, bring a large pot of salted water to a boil. Turn the cabbage upside down and remove the hard core. Cut the cabbage into slivers and blanch (cook for one minute). Remove and drain well.
  • Saute the bacon in its own fat in a heavy skillet. Drain the bacon on paper towels.
  • Remove the pheasant from the casserole and pour off excess fat. Add the rosemary, wine and stock and bring to a boil. Off heat, stir in the cabbage and the bacon. Put the pheasant on top, cover and cook for 20 minutes in the oven.

3 potatoes, peeled & cubed (abt. 3 cups)
1/2 cup milk
2 cups chopped cabbage
1/2 cup shredded carrot
2 teaspoons chopped fresh dill or 1/2 teaspoon dried dill weed
1/8-1/4 teaspoon pepper

Steps:

  • In medium saucepan, combine broth and potatoes.
  • Bring to a boil.
  • Reduce heat, cover and simmer 8 minutes or until tender.
  • Cool slightly.
  • Place 1 cup potato mixture in blender,.
  • Add milk, cover and blend 30 seconds.
  • Return to saucepan.
  • Stir in remaining ingredients.
  • Cook over medium heat 5 minutes or until cabbage is crisp-tender.

We saw a recipe for a creamy cabbage soup but it just seemed too boring so we added little bits of this and that and made something that actually turned out to be very filling and tasty. Nothing fancy here ... add extra things you thing you might enjoy like a protein .....

2 Tbsp butter
1/2 c chopped yellow onion
1/2 c chopped celery
1 tsp minced garlic - more or less to taste
3 c chopped cabbage
1/4 c finely diced carrot
1 large russet potato - cubed
1/2 tsp dill weed
1/4 tsp cayenne pepper - or more to taste
3 c vegetable or chicken broth
3 Tbsp cornstarch
2 Tbsp cold water
2 c milk - more if needed
1 c whole kernal corn - canned or frozen
1/2 c shredded pepper jack cheese
salt and pepper to taste
shredded cheddar cheese for garnish
bacon bits for garnish
snipped chives for garnish

Steps:

  • 1. In dutch oven melt butter then add the onion and celery and saute until tender. Stir in the garlic and cook for 1 minute.
  • 2. Add cabbage, carrot, potato, dill weed, cayenne pepper, cubed potato and broth. Bring to a boil then drop heat down to simmer and cook until the cabbage is tender.
  • 3. In small bowl whisk the cornstarch and cold water together to make a slurry. Add to the hot soup, stir and simmer until thickened.
  • 4. Add the milk and stir to blend. Simmer until thickened. If the chowder is a bit too thick add more milk until you reach desired consistency. Sprinkle in the pepper jack cheese and the corn. Simmer - stirring frequently - until the cheese has melted and the chowder is warmed through. Salt and pepper to taste then serve with preferred garnishes.
