PETE'S SCRATCH PANCAKES

It was the Fall of 1987 when Pete Nyhus walked into our office, just to visit. We started talking about breakfast, and he reached into a wastepaper basket and pulled out a scrap of teletype paper. He wrote out this recipe, and my family has never used pre-mix since.

Yield 9 6 inch pancakes

Number Of Ingredients 7

2 cups flour
3 tablespoons sugar
1/2 teaspoon salt
1 tablespoon baking powder
2 eggs, beat them separately before adding to mixture
1/4 cup butter, melted (1/8 of a pound)
1 3/4 cups milk

Steps:

  • Mix the dry items first.
  • Combine the eggs and melted butter to the milk and slowly stir into the flour mixture.
  • Heat the griddle to325 F or the pan to medium high let sit at least 10 minutes while heating the griddle orpan.
  • These will be high, but light and fluffy -- .

1 ¼ cups all-purpose flour
1 tablespoon baking powder
¾ cup whole milk
1 egg
3 tablespoons vegetable oil, divided
½ cup blueberries, or more to taste

Steps:

  • Mix flour and baking powder together in a small bowl. Mix milk, egg, and 2 tablespoons vegetable oil together in a large bowl. Stir flour mixture into milk mixture until batter is smooth. Set aside to allow batter to thicken, about 1 minute.
  • Heat about 1 teaspoon vegetable oil in a skillet or griddle over medium heat. Drop batter by large spoonfuls onto the griddle, add blueberries, and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining oil and batter.

  • Mix the dry items first. Combine the eggs and melted butter to the milk and slowly stir into the flour mixture. Let the batter sit at least 10 minutes. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using 1/4 cup for each pancake. These will be high, but light and fluffy

When I was pregnant, I decided to create the "perfect pancake recipe." Every Saturday morning, I would fiddle with the recipe, until I developed this one. My son is now 18 and HE makes the pancakes on Saturdays mornings.

3/4 cup milk
2 teaspoons vanilla
1/4 cup melted butter
1 egg
1 cup flour
1/4 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder

Steps:

  • Sift together the dry ingredients.
  • In a separate bowl, mix the milk, vanilla, melted butter and egg.
  • Slowly blend the liquid ingredients with the dry, just until all ingredients are moist. Do NOT overstir!
  • Allow batter to rest for five minutes.
  • For prettiest results, cook pancakes on 325' griddle.
  • NOTE: Added 9/6/2008: After reading a couple of reviews that had their pancakes turn out "crepe-like," I realized that I had left out one important caveat from the original recipe: THE BAKING POWDER MUST BE FRESH! For a number of years, I puzzled over why sometimes this recipe turned out beautifully fluffy pancakes. .and other times they just lay on the griddle, thin and disappointing.
  • I finally figured out that it was determined by the age of the baking powder I was using. (I had two canisters in my cabinet. one week the pancakes turned out wonderful. the next thin and flat. finally the little light came on in my head.so, some of us are slower than others!) So, if your baking powder is older than a year, you may very well end up with crepes. newer than that, you should be good!
  • IMPORTANT: I mistyped the original recipe to show 1/2 cup sugar - that was wrong! :) It should be 1/4 cup sugar. Even if you double the recipe, the sugar only goes up to about 1/3 cup.
